- Preheat oven to 350°. In a greased 2-qt. baking dish, layer ham, onion, green pepper, raisins and pineapple. , In a large saucepan, combine brown sugar, cornstarch, mustard and salt. Stir in pineapple juice and vinegar until smooth. Bring to a boil; cook and stir 2 minutes or until thickened., Remove from heat; stir in soy sauce. Pour over pineapple. Cover and bake 30-35 minutes or until heated through. Serve with rice.

HAWAIIAN HAM AND PINEAPPLE STUFFING

- Position racks in the upper and lower thirds of the oven; preheat to 250 degrees F. Spread out the bread on 2 baking sheets. Bake, rotating the pans and stirring halfway through, until lightly toasted, 1 to 1 1/2 hours.
- Increase the oven temperature to 375 degrees F. Butter a 3-quart baking dish. Melt 4 tablespoons butter in a large pot or Dutch oven over medium-high heat. Add the ham, onion, celery, jalapeño, thyme, sage, 1 teaspoon salt and a few grinds of pepper; cook, stirring occasionally, until softened, about 6 minutes. Add the chicken broth and bring to a simmer, then remove from the heat. Let cool slightly.
- Whisk the eggs in a large bowl. Stir in the bread and ham mixture. Transfer the stuffing to the prepared dish. Dot with 2 tablespoons butter. Cover with foil and bake 30 minutes.
- Meanwhile, heat the remaining 1 tablespoon butter in a medium skillet over medium-high heat. Add the pineapple and cook until lightly browned, about 3 minutes. Add the brown sugar and stir until just dissolved, about 30 seconds.
- Uncover the stuffing and scatter the pineapple on top. Bake until golden brown, 20 to 30 minutes.

- Melt the butter in a large skillet over medium heat. Saute the ham, onions and pineapple chunks in the butter for about 5 minutes.

This is truly a wonderful accompaniment to ham that was served at a very nice local restaurant. It is served warm at the table--delicious. By changing the pineapple to chunks, it can be make for chicken.

- If doing this for chicken use pineapple chunks.
- Strain the pineapple.
- Place the juice of the can of pineapple and the two 6 ounce cans of pineapple juice in a saucepan.
- Add the two sugars and heat.
- Mix the cornstarch and water and stir into the pineapple mixture--stir till thick.
- Add the crushed pineapple and the cut up cherries along with the cherry juice.
- Put in gravy boat at serve warm at the table to be ladled over the ham on the plate.

Technically, this dish isn't a true stir-fry, but the technique is the same. You can use chicken instead of ham, if you prefer, or make a vegan dish with cubes of firm tofu, but these have to be fried up first since they're not pre-cooked like the ham. PROTIP: To speed the sauce thickening, close the lid, but leave a tiny gap at the side so steam can escape. This will heat up the contents of the pan to a higher temperature and the water will boil off faster.

- Chop all ingredients into bite-sized chunks.
- Heat a large skillet with lid to medium-high.
- To hot skillet, add oil.
- If using chicken or tofu instead of ham, cook these first until chicken is not pink inside and tofu is starting to brown at the edges.
- Add onions and carrots. Sautee until tender, about 5 minutes.
- Add peppers and ham, stirring occasionally until they are heated through.
- Drain pineapple juice into a cup, and add pineapple tidbits to skillet.
- For the sauce, add brown sugar, mustard, and vinegar to the pineapple juice.
- Stir in 1 Tbsp cornstarch, and mix well so there are no cornstarch chunks.
- Add sauce to hot skillet. Stir.
- Cover skillet with lid, leaving a small gap or vent. Simmer until sauce is thickened and glossy.
- If sauce won't thicken, add another 1 1/2 tsp cornstarch, mixing in well.
- Serve over rice or quinoa.
