FLUFFY RICE PUDDING- FOR STOVE TOP

Fluffy Rice Pudding- for Stove Top image

This is a recipe from the 50's maybe older- my mom made this and I am sure my aunts long before her. This is a smooth, creamy, and fragrant pudding- you may like to add fresh fruit or raisins, or dried fruit to this delicious pudding if desired but it really does not need it. Maybe just an accent on top. Photo is from...

Categories     Other Desserts

Time 40m

Number Of Ingredients 11

1/2 c uncooked rice not instant- i use jasmine rice
3 c whole milk
1 c sweetened condensed milk
2/3 c granulated sugar
1/4 tsp salt
1/4 tsp ground cardamom
1 pinch ground saffron
3 large eggs, separated
1 tsp cream of tartar
1 tsp vanilla or other extract
3/4 c fresh fruit, cut up or raisins or dried fruit, nuts, etc., if desired

Steps:

  • 1. In a double boiler or heavy bottomed saucepan- mix together the rice, whole milk and sweetened condensed milk, sugar, salt, cardamom and saffron; cook over medium heat until rice has absorbed most of the liquid, stirring frequently.
  • 2. Remove from heat cover and cool slightly. Beat egg yolks and slowly add the rice mixture to the eggs- quickly stirring to prevent eggs from curdling.
  • 3. Return to heat and cook until mixture coats the back of a silver spoon. Remove from heat and stir in vanilla and fruit, if using. Set aside to cool. Beat egg whites and cream of tartar until stiff peaks form and fold into rice pudding. Spoon into individual serving dessert dishes or into a serving bowl. Chill. Decorate top with fruit or nuts or chocolate curls or coconut.....
  • 4. NOTE: Cin Straw says she likes to add 1/2 to 3/4 cup raisins to 2 or 3 Tablespoons rum,or brandy or bourbon in a small bowl to plump. Then add/fold in at the end with a little of the juice just before spooning into dessert dishes or bowl. Yum! Good advice Cin! CHEERS!

RICE PUDDING

Rice Pudding image

Homemade rice pudding is the most comforting dessert recipe. Rice is cooked in a sweet mixture of milk and cream with vanilla soaked raisins. This stove top recipe is easy to make.

Provided by Krissy Allori

Categories     Dessert

Time 1h35m

Number Of Ingredients 11

1/4 cup raisins
2 tablespoons vanilla extract
2 1/2 cups whole milk
1/2 cup heavy cream
1/2 cup uncooked white rice (short grain works best)
1/4 teaspoon kosher salt
2 eggs
1/4 cup brown sugar
1/4 cup granulated sugar
1/4 teaspoon pumpkin pie spice (or use cinnamon)
soaked raisins with vanilla

Steps:

  • At least one hour prior to making rice pudding, soak the raisins in the vanilla. A longer soak of over 24 hours is optimal.
  • In a medium-sized, heavy-bottomed saucepan, bring the milk, heavy cream, uncooked rice, and salt to a boil over high heat. As soon as it starts to simmer around the edge of the pan, reduce heat to the lowest temperature where you can maintain a simmer, partially covered, until the rice is tender, about 20-25 minutes. Stir frequently to prevent the rice from sticking to the bottom of the pan. Taste the rice to ensure it is done. You want it tender but still firm.
  • In a separate bowl, whisk together eggs and sugar. Add a ladel of the hot milk mixture to the egg mixture, whisking while pouring it in a very slow steady stream. Your goal is to bring the temperature of the egg up without curdling the egg.
  • Continue to add more of the hot milk mixture to the egg mixture, whisking continually, until the egg mixture is warm.
  • Add tempered egg mixture back into the saucepan of rice and milk and stir over low heat for 5 to 10 minutes, until thickened. This rice pudding can go from thin to too thick rather quickly, so don't leave it unattended. Also keep in mind that it will thicken even more as it cools. A temperature of 160°F will ensure the eggs are cooked all the way through.
  • When done, remove from heat and stir in the pumpkin pie spice and soaked raisins.
  • Serve warm or cold.

CREAMY STOVETOP ARBORIO RICE PUDDING

Creamy Stovetop Arborio Rice Pudding image

An easy stovetop rice pudding, now even creamier with naturally starchy arborio rice and crème fraîche.

Provided by Unpeeled

Categories     Dessert

Number Of Ingredients 10

5 cups milk (not skim)
1/2 cup plus 2 tablespoons sugar
1 tablespoon pure vanilla extract
3/4 cup arborio rice
3/4 cup crème fraîche or sour cream
1/2 cup golden raisins
2 tablespoons Grand Marnier or fresh orange juice
1/8 teaspoon cinnamon
zest from 1/2 orange
enough cold water to cover the raisins fully

Steps:

  • In a large saucepan, bring the milk, sugar, and vanilla to a boil. Add the rice. Stir, and boil for one minute.
  • Reduce the heat to a low simmer and cook for 45 to 50 minutes, stirring occasionally, until thickened and creamy.
  • Pour the rice pudding into a bowl and stir until cooled to room temperature. PRO TIP: Speed the cooling process by putting the bowl over an ice bath. Even setting it over a bag of frozen vegetables will help speed things along.
  • While the rice pudding is cooking, zest an orange, if desired, and set aside to garnish. Heat the raisins, Grand Marnier or juice, cinnamon, and enough water to cover the raisins in a small saucepan. Bring to a boil, then immediately remove from heat. Steep for about 15 minutes. Drain.
  • Whip the crème fraîche or sour cream to fluffy, soft peaks. Gently fold into the rice pudding, along with 3/4 of the raisins. Chill until cool.
  • Spoon the rice pudding into serving bowls. Top with a few more raisins and, if desired, a small sprinkle of cinnamon and some orange zest. This rice pudding will keep, refrigerated, for up to two days. Rice pudding tastes best very cool, but not cold.

CLASSIC RICE PUDDING

Classic Rice Pudding image

This creamy, comforting and Classic Rice Pudding recipe is easy to make on the stovetop. It's a cozy, quick-fix snack or dessert that's perfect for chilly afternoons!

Provided by Lindsay

Categories     Dessert

Time 35m

Yield 4

Number Of Ingredients 8

1 large egg
1/4 cup (52g) white or light brown sugar
1 tsp vanilla extract
1/8 tsp ground cinnamon
2 cups (480ml) whole milk
1/2 cup (120ml) heavy whipping cream
1/3 cup (65g) short grain white rice (I used arborio)
Pinch of salt

Steps:

  • Whisk together the egg, sugar, vanilla and cinnamon in a small bowl. Set aside.
  • Add the milk, cream, rice and salt to a medium-sized saucepan and bring to a boil over high heat.
  • Once boiling, reduce the heat to low and simmer until the rice is tender, about 20-25 minutes. Stir frequently to keep the rice from sticking to the bottom of the pan.
  • Slowly add about half a cup of the hot rice mixture to the egg mixture, whisking quickly, to temper the egg mixture.
  • Add the egg mixture to the saucepan with the remaining rice mixture. Stir everything together and continue heating on low heat for about another 5-10 minutes, or until thickened. Don't boil. It will thicken quickly. Keep in mind that the mixture will continue to thicken as it cools, so you don't want it to be too thick before you take it off the heat. A touch soupy still is ok.
  • Remove from heat and serve warm.

  • So try boiling things like fresh herbs, a cinnamon stick, a few cardamom pods, a strip of lemon zest or even a green tea bag in the water with the rice.Doubling the amounts in the recipe will give you enough rice to serve 8-12 people.Put a large pan of salted water on a high heat and bring to the boil.
