- Mix the pumpkin, herbs, green onion, feta, flour, egg, salt and pepper in a bowl Heat the oil in a pan.
- Spoon the pumpkin mixture into the pan and cook until golden brown on both sides, about 4 minutes per side.

FLUFFY PUMPKIN-FETA FRITTERS
These tasty fritters are both sweet and savory, and came from a combination of a few recipes I found online. The result was perfect, and I had to share! This recipe is perfect as a side dish for a potluck, or an appetizer at a party. They're great hot, and still delicious at room temperature.

Steps:
- Cut the pumpkin in half, scoop out the goop (and reserve the seeds to bake later!).
- Roast the pumpkin at 375 F for about an hour.
- Scoop out the cooked pumpkin and mash or puree.
- Add the egg yolks to the mashed pumpkin.
- Using a stand or hand mixer, beat the egg whites until they are foamy and form soft peaks.
- Fold the egg white into the pumpkin, and mix in the remaining ingredients.
- Spray a large pan with cooking spray.
- Over medium heat, drop a spoonful of the pumpkin mixture into the pan. One spoonful will create a 2-3 inch fritter. To make your life easier, cook no more than four fritters at once.
- After approximately 2 minutes, flip the fritter.
- After 2 minutes on the second side, set aside.
- Continue with the remaining batter until you're done!

POTATO FETA FRITTERS

Steps:
- In a medium bowl, place the potato, feta, egg, green onions, dill lemon juice, zest, salt and pepper.
- Mix until well combined.
- Cover and refrigerate for 1-2 hours until firm.
- Using hands, roll the mixture into golf-ball-size fritters, and flatten slightly.
- Dredge lightly in flour, using a small sieve.
- Heat olive oil in a large frying pan.
- Cook fritters in batches for about 3-5 minutes until golden brown on both sides.
- Drain on paper towel and serve immediately.
- Garnish with extra dill and lemon.

- Mix together pumpkin, sugar, flour, nutmeg, salt, baking powder and egg. Mix well.
- Heat shallow amount of oil in a frying pan.
- Drop mixture by tablespoon-full into hot oil and fry over medium-low heat until golden brown on each side.
- Remove from pan and drain on paper towel.
- Dust with Confectioner's Sugar for a sweeter dish!

Steps:
- In a large bowl, sprinkle the yeast over the lukewarm water and stir to dissolve.
- Add the sugar, egg, pumpkin, and salt; combine thoroughly.
- Add the flour, 1/2 cup at a time, until the dough becomes too stiff to beat with a wooden spoon.
- Turn the dough out onto a lightly floured board and knead in enough of the remaining flour to prevent the dough from sticking to your fingers.
- Continue kneading until the dough is smooth and elastic (about 8 minutes).
- Shape it into a ball and place in a greased bowl. Cover and let rise in a warm place for 1 hour, or until doubled in size.
- Punch down the dough and tear off pieces, shaping into doughnut-like rings, about 3 inches in diameter.
- Heat about 1-inch of oil in a deep skillet and fry the fritters for about 5 minutes, turning them once, until crisp and golden brown.
- Drain on paper towels and serve immediately with warm maple syrup.
- Makes 12 servings.
