Time P1DT2h45m

Yield 30

Number Of Ingredients 10

1 cup rolled oats
½ cup molasses
⅓ cup vegetable oil
1 teaspoon salt
1 ½ cups boiling water
2 tablespoons active dry yeast
½ cup lukewarm water (100 degrees F/38 degrees C)
1 cup whole wheat flour
5 cups bread flour
2 eggs

Steps:

  • Combine oats, molasses, oil, salt and boiling water. Let cool to about 105 degrees F.
  • Dissolve the yeast in the warm water and let stand for 5 minutes or until creamy. Stir the yeast into oat mixture and mix well. Add whole wheat flour, 2 cups bread flour, and the eggs. Mix until well combined.
  • Stir in enough of the remaining flour to make a soft dough. Turn dough out to a floured counter and knead for about 10 minutes. Place the dough in a well-greased bowl and cover with greased plastic wrap. Let the dough rest in the refrigerator overnight.
  • Preheat oven to 375 degrees F (190 degrees C). Grease 3 regular loaf pans and 4 mini loaf pans.
  • Transfer the dough onto a floured surface and divide it into 4 pieces. Shape the dough into loaves and place them in the pans, seam-side down. Let rise until doubled, about 90 minutes. Bake in the preheated oven until the loaves are golden brown and sound hollow when tapped, about 30 minutes.

MOIST, LIGHT, & FLUFFY WHOLE WHEAT BREAD

Moist, Light, & Fluffy Whole Wheat Bread image

After trying Kim's (my sister-in-law) moist wheat bread, I HAD to have the recipe! It was delish! You HAVE to follow this recipe to a "T" if you want it to be moist, light, & fluffy... Don't substitute or skip any of the ingredients. I had to order the SAF yeast and Dough Enhancer from www.beprepared.com (which took a few days to get delivered, but it was worth it). The vital wheat gluten is VITAL! This is the best whole wheat bread I've ever eaten - even better than specialty bread store's bread!

Provided by Sweet Chef Shelly

Categories     Yeast Breads

Time 40m

Yield 3 loaves, 48 serving(s)

Number Of Ingredients 9

8 -9 cups whole wheat flour (divided)
1 1/2 tablespoons saf instant yeast
1 1/2 tablespoons dough enhancer
3 tablespoons vital wheat gluten
1 tablespoon salt
3 cups warm water (114* - 116*)
1/2 cup vegetable oil (I use light-tasting olive oil)
1/2 cup honey
1 tablespoon liquid lecithin (found at health food stores)

Steps:

  • In a medium-sized bowl, put 4 cups of the flour, the yeast, the dough enhancer, the vital wheat gluten, and the salt.
  • In the mixer bowl (I mix mine in a Bosch mixer), put water, oil, honey, and lecithin.
  • Add the dry ingredients from the bowl to the liquid in the mixer bowl.
  • Beat with wire attachment until it forms a smooth batter. (About 3 minutes.)
  • Place the dough hook on the mixer.
  • Gradually add more flour and mix until it forms a soft dough. Continue mixing for about 10 minutes to knead the dough.
  • Remove the dough from the bowl and form it into 3 loaves.
  • Place in PAM-sprayed bread pans and spray the top of the loaves with PAM and allow to rise for about one hour.
  • Preheat your oven to 350* and Bake for 20-25 minutes or until golden brown.
  • ** If you don't use all white-wheat flour, cut down on the baking time as it will brown more quickly. **You can use red wheat flour, but it is slightly heavier. I prefer using all white wheat flour or 1/2 white wheat and 1/2 red wheat flour, but any flour will work.

FLUFFY, LIGHT HONEY OATMEAL BREAD

Fluffy, Light Honey Oatmeal Bread image

This is probably my favorite bread in my collection. An adaptation from my grandmother's recipe to better fit our busy life-styles using instant or quick-acting yeast and letting my stand mixer and dough hook do all of the work. Light, fluffy, moist and flavorful, I think it will become one of your favorites, too. I love it's...

Provided by Family Favorites

Categories     Other Breads

Time 45m

Number Of Ingredients 8

4 1/2 cups flour
1 cup + 3 tb. oatmeal
2 packets red star quick rise yeast (instant)
2 1/4 tsp. salt
1 1/2 cups milk
1/3 cup lukewarm water
3 tb. butter, softened
1/3 cup honey (a natural preservative which will keep your bread fresh and moist.)

Steps:

  • 1. In bowl of a stand mixer, combine oats, flour, yeast and salt. In a 2 cup measuring cup, warm milk in microwave until hot, but NOT boiling. Add butter. Stir to melt. Stir in lukewarm water and honey. ( I slightly warmed my honey to make it easier to pour.)
  • 2. Pour the milk mixture into the flour mixture. Mix with dough hook until incorporated, scraping sides of bowl if necessary. On setting 2 of a KitchenAid mixer, knead for 5 minutes. If dough climbs the dough hook excessively, add flour 1 TB. at a time until dough cleans sides and bottom of bowl. You want it to be slightly sticky, not gooey. It's ok if it climbs the hook, as long as the dough cleans the sides and bottom of the bowl. (You want it to be a little sticky to the touch because the dough will pick up more flour later when you shape your loaves.)
  • 3. Place dough in buttered bowl, turning once to coat. Cover loosely with sprayed saran wrap. Place in a warm, draft-free area until doubled in size. (About an hour... depends on temp.) I like to turn my oven on to 200 degrees and place the covered bowl on a hot pad on top of the stove.
  • 4. When doubled, dust counter lightly with flour, 2-3 TB. should do. Punch your beautiful, fluffy dough down, then fold in half 2-3 times, pressing out the air bubbles. Divide dough in half and form loaves. (If your new to bread making, take a minute to learn "how to shape bread loaves" online. There are some great YouTube videos as well that give great tips. It's a really important step for beautiful looking loaves.) Place in two 8 1/2 x 4 1/2 buttered or sprayed loaf pans. https://www.youtube.com/watch?v=859Wn3RIJrI
  • 5. Lightly grease top of loaves with a little very soft butter and cover loosely with sprayed saran wrap. Let rise until loaf is 1-1 1/2 " above pan. Rising too much will produce a very airy bread that won't slice well. Rising too little, will produce a dense, heavy loaf. Again, somewhere around 45-60 minutes, depending on the temp of your kitchen.
  • 6. When 1-1 1/2" above pan, bake at 350 degrees for 30-40 minutes. Watch closely since every oven is different. To know if it's done, I remove one of the loaves from the oven and tilt it into my hot pad covered hand. Just tilt it, don't remove it from the pan. Look at the bottom. If it's a nice golden brown, it's ready. If it's still pale-looking, return it to the oven for a few minutes and repeat. (If you take it out when it's not golden, it will not be sturdy enough to hold the bread up when you cool on wire racks.)
  • 7. When the bottom is a golden brown, remove immediately from pans and cool completely on wire racks. Don't cut for a few hours, or you won't get nice slices. (Sometimes, I even wait until the next day.) Brush tops of loaves with a little melted butter. Enjoy!

SOFT, FLUFFY BROWN RICE BREAD (GLUTEN-FREE, DAIRY-FREE)

Soft, Fluffy Brown Rice Bread (Gluten-Free, Dairy-Free) image

This soft and fluffy brown rice bread is simple to make, and is great for making sandwiches, or toasting and spreading with butter and jam. Made with brown rice flour for extra fiber, this easy yeast bread is totally gluten-free and dairy-free too.

Provided by Felicia Lim

Categories     Bread

Time 1h40m

Number Of Ingredients 10

2 cups brown rice flour
1 3/4 cups warm water (approximately 105F - 115F)
1/4 cup sunflower oil
1/4 cup psyllium husk powder
1 tablespoon instant yeast
2 tablespoons sugar
3/4 teaspoons xanthan gum
2 eggs, room temperature
1 teaspoon baking powder
1/2 teaspoon salt

Steps:

  • Grease an 8″x4″ metal loaf pan.
  • In a large mixing bowl, whisk the brown rice flour, psyllium husk powder, instant yeast, sugar, baking powder, xanthan gum, and salt together.
  • Add the warm water, sunflower oil, and eggs to the dry ingredients and mix well to get a wet and shaggy dough (the dough is supposed to be shaggy, so don't worry).
  • Transfer the dough to the greased loaf pan and smooth out the top with a spatula.
  • Cover the dough pan with a kitchen towel and let the dough rise approximately 30 to 40 minutes in a warm, draft-free place until it has almost doubled in size. (Tip: I like to place the loaf pan in my microwave with the power off - it creates the perfect draft-free and warm environment for rising dough).
  • During the last 10 minutes of the dough rising, preheat oven to 350F and adjust the oven rack to the middle position.
  • Bake the dough for 40 to 50 minutes until bread has turned dark brown on top and the loaf sounds hollow when tapped. Remove loaf from the oven.
  • Let the loaf cool for 10 minutes in the loaf pan, before removing and letting it cool completely on the wire rack. Use a serrated bread knife to slice once the loaf has completely cooled.

FLUFFY HONEY OAT DINNER ROLLS

Fluffy Honey Oat Dinner Rolls image

Provided by Mel

Categories     Rolls

Time 3h5m

Number Of Ingredients 8

2 cups 7.5 ounces quick cooking oats (see note)
1/3 cup honey
4 tablespoons butter (cut into pieces)
2 1/2 teaspoons salt
2 1/2 cups boiling water
1 1/2 tablespoons instant yeast (see note for active dry yeast)
4 to 5 cups all-purpose flour
Melted butter (for brushing baked rolls (optional))

Steps:

  • In the bowl of a stand mixer fitted with the dough hook, combine the oats, honey, butter and salt. Add the boiling water and mix until combined. Let the oats soften and the mixture cool for 15-20 minutes until about 110 degrees (or lightly warm to the touch).
  • Add the yeast and 2 cups of the flour. Mix until combined. With the mixer on low speed, continue adding flour, 1/2 cup at a time, until a soft dough forms that clears the sides of the bowl but is still soft and tacky to the touch (be careful not to overflour!). The exact amount of flour will depend on many factors, so don't worry if you have to add more or less than called for to achieve the right texture for the dough. Knead the dough for 4-5 minutes until smooth and elastic.
  • Place the dough in a lightly greased bowl and cover with a clean towel or greased plastic wrap. Let the dough rise until doubled, about 1 to 1 1/2 hours, depending on the warmth of your kitchen.
  • Punch down the dough and divide into 12 equal pieces (see note). Shape each piece into a round ball, pinching the bottom to seal.
  • Grease a 9X13-inch baking pan and place the rolls in the pan. Cover and let the rolls rise until puffy and almost doubled in size, about an hour.
  • Preheat the oven to 350 degrees F. Bake the rolls for 20-25 minutes until golden on top and baked through. Brush with melted butter, if desired.
