GIANT SUPER FLUFFY PANCAKES
If you're in need of impressive pancakes for a crowd, you can't go wrong with this tower of extra-fluffy, delicate pancakes. Pop them in the oven to cook and you won't spend your morning flipping flapjacks on the griddle.

- Position oven racks in the top and bottom thirds of the oven and preheat to 450 degrees F. Lightly spray one small (8-inch) and one medium (10-inch) ovenproof nonstick skillet with nonstick cooking spray (or brush lightly with melted butter).
- Whisk together the flour, sugar, baking powder and salt in a large bowl. Whisk together the milk, melted butter, vanilla and egg yolks in a medium bowl until combined.
- Beat the egg whites and cream of tartar in a second large bowl with an electric mixer on medium-high speed until stiff peaks form, about 2 minutes.
- Stir the milk mixture into the flour mixture until just combined (it's okay if there are a few lumps). Stir one-third of the egg white mixture into the flour-milk mixture. Then gently fold in the remaining egg whites until just combined (take care not to overmix).
- Pour 3 cups of the batter into the small skillet and pour the remaining batter into the medium skillet. Cover each skillet with a lid (or cover and seal with aluminum foil). Bake, rotating the skillets top to bottom halfway through, until the pancakes are cooked through and the bottoms are golden, 15 to 17 minutes.
- Flip the larger pancake onto a serving platter and top with the smaller pancake. Pour a generous amount of syrup over the stack and top with whipped cream and berries. Serve with butter on the side.
FLUFFY FLAPJACK PANCAKES

- Whisk flour, sugar, baking powder, baking soda, and salt together in a bowl until no lumps remain. Add milk, eggs, and oil; whisk until batter is runny and well mixed.
- Heat a nonstick griddle over medium heat and lightly spray with cooking spray. Pour in a portion of the batter. Cook until bubbles form, 3 to 4 minutes. Turn and cook, pressing middle gently with the spatula, until lightly browned on the other side, 2 to 3 minutes more. Repeat with the remaining batter.

FLUFFY JAPANESE PANCAKES
These thick pancakes are like little souffles: custardy on the inside and golden and crispy on the outside.

- Whisk together the flour, confectioners' sugar, baking powder and salt in a large bowl.
- Whisk together the milk, melted butter, vanilla and egg yolk in a medium bowl until combined.
- Beat the egg whites and cream of tartar in another large bowl with an electric mixer on medium-high speed until stiff peaks form, about 2 minutes.
- Stir the milk mixture into the flour mixture until just combined (it's OK if there are a few lumps). Stir one-third of the beaten egg whites into the flour-milk mixture. Then gently fold in the remaining egg whites until just combined (take care not to overmix).
- Lightly spray the inside of four 3-inch-wide-by-2 1/2-inch-high ring molds with nonstick cooking spray
- Coat a large nonstick skillet with nonstick cooking spray and heat over medium-low heat. Put the prepared ring molds in the middle of the skillet and fill each with 1/2 cup of batter (it should fill each ring mold about halfway). Cover the skillet with the lid and cook until the batter rises to the tops of the ring molds and is golden on the bottom, about 5 minutes. Release the bottom of the pancakes with a spatula. Grasp the sides of the ring molds with tongs to stabilize them and then carefully flip. Cover and cook until golden on the other side, about 5 minutes more. Transfer to a plate and remove the mold. Serve with butter and maple syrup. The pancakes should be eaten before they deflate.
- Lightly spray the ring molds and coat the skillet with nonstick cooking spray and repeat the cooking method with the remaining batter.
FLUFFY EGGLESS PANCAKES
I poached this recipe from cooks.com (it was submitted by Dawn Linke, so props to her). I'm mainly posting it here since this is the recipe site I use the most and I want to add it to my cookbook, and I was most happy with this recipe vs. other eggless pancake recipes I've tried, so I figured it was worth sharing. :)

Steps:
- Combine dry ingredients and mix slightly.
- Add milk, oil, water, and vanilla. Whisk together until just combined. Be careful not to over mix - it should still be slightly lumpy. Set aside to rest for a few minutes.
- Melt the butter. When fully melted, add the butter to the batter.
- Take pan to stove and stir butter into batter.
- When pan is hot, with a measuring cup or ladle, pour 1/4 cup of batter into the skillet for each pancake.
- Cook until bubbles form on the surface. Carefully flip pancakes with turner/spatula and cook until golden brown.
- Note: This recipe also works well with whole wheat flour. Chopped fruit, nuts or chocolate chips can be added to batter before cooking for a unique treat.

- To proof your starter, feed it with equal amounts of flour and water (start with 1 cup of starter and at least 1 cup each of flour and water); cover and let sit overnight.
- Next morning, measure 2 cups of the proofed starter into a mixing bowl.
- Add egg, oil, sugar, and salt to the starter and mix briefly.
- Add enough flour to attain the desired consistency and mix until lump-free.
- Just before cooking the pancakes, dissolve baking soda in 1 Tbsp of warm water and gently blend into batter (See Note).
- Once baking soda is blended in, do not stir again.
- With a pitcher or ladle, pour 2 to 3-inch rounds on a hot (400 F) griddle.
- Cook 2 to 4 minutes, until bubbles form on surface.
- Turn and cook for an additional 2 minutes; serve hot.
- NOTE: If time permits, omit baking soda and stir 1 cup white flour and 1/2 cup of milk into batter.
- Proof, covered, for 1 hour at 85 degrees F, and then without stirring pour batter onto hot griddle--this will make pancakes extraordinary.

- Use fresh ingredients. Pancakes don’t have a strong flavour, so your ingredients need to be perfectly fresh—especially your baking soda, which loses its lifting power after six months.
- Use chemistry to your advantage. Acid reacts with baking soda to create carbon dioxide. The result? Fluffy pancakes. This is why tangy buttermilk is a classic pancake ingredient—but if you don’t have buttermilk, you can use regular milk soured with a little lemon juice or vinegar.
- Don’t overmix. A few lumps are preferable to an overmixed batter, which will give you flat, tough pancakes. Kitchen nerds, just in case you wanted to know: mixing develops the gluten in your flour, which will turn your fluffy pancakes into chewy pucks.
- Timing is everything. You know those lovely bubbles of carbon dioxide that make your pancakes lovely and fluffy? They disappear if you make your batter too far in advance (like overnight), leaving your pancakes flat and sad.
- Use the right pan. Something thin with sloping sides (like a classic saute pan) isn’t ideal, because the bottom is too thin to prevent your ‘jacks from burning.
- Don’t be afraid of heat. Your pan should maintain a consistent medium heat. Don’t add your batter until the pan is hot, but not smoking. Trust us—leave it until you think it’s hot, then leave it a little longer longer.
- Make friends with oil. Butter is yummy, but its milk solids have a low smoke point, especially in a pan that’s staying hot. Use a mild vegetable oil (not that super-fruity extra-virgin stuff) or clarify your butter first.
- Add extras as the pancake cooks, not before. Mixing extras—like berries or chocolate chips—into the batter is asking for little burned bits all over your pancakes.
- Don’t flip too early. This is probably the most common mistake pancake cookers make, resulting in splattered batter and underdone middles. People look for different things to tell them when a pancake is ready: bubbles on the surface that pop and form holes, edges becoming solid, or a characteristic sheen on the pancake’s surface.
- Take a test run. If you’re not sure how hot your pan is, or are nervous leaving it, make a test batch of pancakes first. They won’t be perfect, but they’ll still be yummy.
