CRISPY THIN CRUST PIZZA! KETO & GLUTEN-FREE



Crispy Thin Crust Pizza! Keto & Gluten-Free image

I hope you're preheating your oven because it's thin crust pizza o'clock!

1 cup Almond Flour
1/2 cup Shredded Parmesan Cheese
2 tbsp Grated Parmesan Cheese, the kind from a can
1 tsp Psyllium Husk Powder
1 tsp Xanthan Gum
1 1/2 tsp Baking Powder
1 tsp Active Dry Yeast, for flavor!
1 large Egg, lightly beaten
1/4 cup very warm Water *see notes for how warm!
1 to 2 tbsp Good Italian Pizza Seasoning
2 tbsp Olive Oil

Steps:

  • Heat oven to 425°F and line a pizza pan with parchment paper.
  • Whisk together the dry ingredients until combined.
  • Add the egg and very warm water to the bowl, beat with a fork, then and use your clean hands to work the dough into a ball. Let the dough absorb the moisture and if it's too dry to roll, add more water 1 tbsp at a time, kneading the dough as you go.
  • Brush the parchment with a tbsp of olive oil, then add the pizza dough; press into a thin round. Wet your hands and smooth the dough following around the edges and top, gently pressing together any cracks until it's perfectly smooth and even.
  • Using the tines of a fork, pierce the dough all over. Seriously, make a million tiny holes! You want to cover the dough in tiny "holes" which lets the extra moisture escape.
  • Brush the dough with the remaining olive oil and season with 1 to 2 tbsp Italian herbs.
  • Bake on the middle rack of the oven for five minutes, then move to the upper third of your oven (to prevent burning) for 7-10 minutes or until golden brown.
  • Top baked dough with sauce, cheese, and toppings of choice. To preserve crisp texture, use sauce sparingly or layer the cheese first and sauce second!
  • Bake at 350F for 7-10 minutes or until cheese is melted and bubbly.

The crust for this pizza is made mainly out of cheese. A delicious, low-carb and gluten-free alternative to traditional pizza crust.

1 cup shredded mozzarella cheese
1/2 cup shredded cheddar cheese
1/4 cup shredded parmesan cheese
2 eggs
1 tsp Italian seasoning
1 cup tomato sauce
1 1/2 cups shredded mozzarella ((see note))
other toppings of your choice

Steps:

  • Preheat oven to 350°F. Line parchment paper inside a 9-inch round pie pan. You should cut the parchment paper into a circle that fits and completely covers the bottom of your pie pan, with a little extra leftover on two opposite sides so that you will be able to grip the parchment paper to help easily remove the pizza crust later.
  • In a food processor, add all the crust ingredients. Pulse several times until the ingredients are completely blended together. Pour the wet mixture into your pie dish. Using a spatula, spread the mixture evenly across the bottom. Place into the middle section of your oven and bake for about 20 minutes until all of the crust is a light brown. When you touch the crust, it should be pretty firm.
  • Preheat oven to 400°F. Let the crust cool for a few minutes and carefully remove out of pan by gripping the leftover parchment paper edges. Take off the parchment paper and place crust directly onto a pizza stone dusted with cornmeal. You can also bake your pizza back in pie pan but the crust will stay much softer. If you do bake it back in the pie pan, you don't need to remove pizza crust or parchment paper. Spread tomato sauce across the crust, leaving about 1/2 inch around the edges untouched. Spread cheese on top of tomato sauce. Add any other toppings at this time.
  • Place pizza back into the oven and cook for about 10 minutes or until cheese is bubbly. If you are making a plain cheese pizza, turn to low broil for about 30 seconds, which will brown the cheese bubbles.

1/3 cup canned crushed tomatoes (no sugar added)
1 teaspoon olive oil
1 small clove garlic, minced
Kosher salt
1 1/2 cups shredded whole-milk mozzarella
2 tablespoons full-fat sour cream
2/3 cup almond or coconut flour
2 large eggs, lightly beaten
Kosher salt
Olive oil, for greasing
1/3 cup shredded whole-milk mozzarella
Crushed red pepper flakes and dried oregano, for sprinkling

Steps:

  • For the sauce: Stir together the tomatoes, oil, garlic and a large pinch of salt in a small bowl. Let sit at room temperature for at least 30 minutes (this can be made and refrigerated the night before).
  • Adjust an oven rack to the lowest position with a pizza stone or turned-over baking sheet on it and preheat the oven to 450 degrees F.
  • For the keto dough: Toss the cheese and sour cream together in a large microwave-safe bowl. Microwave in 1-minute intervals, stirring in between each, until the cheese is melted; let cool slightly. Add the flour, eggs and 1/4 teaspoon salt and use your hands to mix into a dough (it will be slightly wet and stretchy).
  • Brush a piece of parchment with oil. With oiled fingers, pat the dough on the parchment into a 1/4-inch-thick rectangle, making the edges slightly thicker to create a crust all around. Slide the dough onto the preheated baking stone or baking sheet and bake until golden and puffy, about 15 minutes. (The dough can be baked, cooled and wrapped the day before.)
  • For the toppings: Remove the dough, top with the sauce and mozzarella and bake until the pizza is heated through and the cheese is melted, about 5 minutes more. Sprinkle with red pepper flakes, oregano and salt. Cut into triangles.
