WAIT FAMILY PIZZA DOUGH (BREAD MACHINE)
This is a fabulous recipe I got from my in-laws...DH and I contend that it's the best pizza dough we've ever tasted! We've also had friends agree - everyone who tries it loves it! *preparation time includes time in machine* *uncooked dough does not freeze well, but cooked pizza/calzones do!*

Steps:
- DOUGH: Add first 8 ingredients to bread maker in order listed, (or however your machine says)select dough cycle.
- At end of dough cycle, once dough has risen, dump dough onto floured board, knead, divide into 2 equal parts and let rest 10 minutes.
- Spread dough on each of two greased pizza pans.
- *This dough also makes excellent calzones, and also great cinnamon rolls -- or so they say!
- PIZZA:.
- Add pizza sauce, toppings of your choice, and cheeses.
- Bake in preheated 400 F oven 15-20 minutes (rotate pans about halfway through cooking).
- Remove from oven and let sit for five minutes before cutting.

WORLD'S EASIEST BREAD MACHINE PIZZA DOUGH
Borrowed from a handful of other pizza dough recipes and tweaked to yield a tasty, thick crust using a bread machine. If you use a pizza stone, sprinkle it with cornmeal before placing the pizza on it to help keep it from sticking. Feel free to try different spices if you don't like any of the ones in this recipe.

- Put the water, olive oil, sugar, sea salt, flour, garlic, oregano, basil, black pepper, cilantro, paprika, and dry yeast into the pan of a bread machine individually in order as listed. Select Dough cycle; press Start. Let dough rest 5 to 30 minutes before using; the longer it rests, the thicker the crust.

- Add ingredients to machine in the order listed.
- Set to "Dough" mode and let the machine run through its cycle.
- Once completed, place in greased pan to rise about 20-30 min, and split in half.
- If you aren't going to use the dough right away, fear not. Simply divide the dough and place in ziplock bags, then stack flat to be used as needed.
- When the special day arrives, slap it on a cornmeal/floured surface, and roll flat, If you're fortunate enough to have a wife who doesn't mind you twirling it in her kitchen (like me -- as long as I clean up my own messes) -- have fun with it before going for the big-bake!
- Add light layer of sauce and pre-bake your crust at 400 degrees for 5-7 minutes.
- Believe me--you'll want to follow this step (thank me later).
- Remove from oven and add toppings of your choice.
- Bake in oven at 400F degrees until done(approx 20 minutes, depending upon topping thickness).

FLINN FAMILY BREAD MACHINE PIZZA DOUGH
I got this recipe from another website and tweaked it for our tastes. You may want to add a bit of Italian seasonings i.e. oregano, basil, rosemary. I've made it both ways.

- Add all in the order recommended by your bread machine manufacturer. Select Dough settings and press start.
- Put a bit of olive oil on pizza pan, and wipe it around with your hands. Put dough in pan and press out with your greased hands. Cover and let rest for 15 minutes.
- Preheat oven to 400 degrees.
- Spread sauce and toppings on top of dough. Bake for 10 minutes. Remove pizza from pan and put it directly on the rack. Bake for 10 minutes more or until crust is lightly crispy and brown on the outside.

FAMILY SECRET PIZZA DOUGH RECIPE

Steps:
- Prepare mashed potatoes by boiling peeled/quartered potatoes until tender (approx. 20 minutes) and mashing with 2 tablespoons milk.
- Prepare dough sponge and proof yeast by mixing yeast, 1/2 cup flour, and 1/2 cup water with 1/2 teaspoons honey dissolved in the water in a bowl and letting stand for 20 minutes until mixture is foamy. (Throw out and start over with fresher yeast if not foamy.).
- Mix 1/2 of remaining flour with herb mix, salt, remaining water with remaining honey dissolved in it, olive oil, dough sponge, and mashed potatoes. Mix in remaining flour (dough should only be slightly sticky). Knead 15 minutes on a floured surface (10 minutes in a machine) until smooth.
- Place dough in lightly oiled bowl and cover with plastic wrap. Let rise until doubled (about 1 to 1 1/2 hours) in a warm place. *Punch dough down and divide in half. Put dough halves in greased 9-inch cake pans and spread over bottom. Cover with towel and let rise until doubled.
- Dimple the dough surface with fingers. Drizzle with extra-virgin olive oil** and sprinkle with coarse salt. Bake in preheated 400°F oven with pans directly on the pizza stone for 25-30 minutes or until golden brown. Remove from pans and place on a wire rack.
- Cut in wedges and serve warm or at room temperature with dipping plates of extra-virgin olive oil (3 Tbsp) and balsamic vinegar (1 tsp).
- Focaccia Tips: Let dough rise until it falls (approx. double the time) and knead in extra flour. This technique improves the texture and flavor of the focaccia. Substitute other toppings such as a herbed garlic oil, sun-dried tomatoes, Greek olives and walnuts, etc. Add fresh herbs only after baking.

Steps:
- Add ingredients in the order reccommended for your bread machine and set to dough cycle.
- After it's finished, transfer dough to lightly oiled pan.
- For a thick crust, cover and allow to rise for about 20 minutes; for thin, bake right away.
- Heap with toppings of your choice and bake in 450F oven for about 20 minutes (I sometimes put the crust in for about 5 minutes before adding toppings to speed it up a little bit and to prevent a soggy crust).
- Enjoy!
