SUPER FOOD CHOCOLATE CHIP COOKIES

Super Food Chocolate Chip Cookies image

I took my basic chocolate chip cookie recipe and packed it with super foods. You get vitamins, minerals, and antioxidants with the cocoa nibs and walnuts. Fiber, protein, and omega-3 fatty acids with the flax and chia seeds, and healthy MCT fats in the coconut oil. These cookies are an easy way to treat your kids (or yourself!) with a great tasting dessert that provides nutrition and still satisfies your sweet tooth.

WEST COAST TRAIL COOKIES

West Coast Trail Cookies image

This cookie gets its name from the West Coast Trail on Vancouver Island. It's my adaptation of the perfect nut-free trail cookie that's been our family's favorite chewy oatmeal cookie for 10 years. Loaded with choco-chips and dried cranberries. The flax seed meal and pumpkin seeds give them a nutty taste, without the nuts. Perfect for school kids or those with allergies.

Time 1h

Yield about 32 cookies

Number Of Ingredients 12

1 1/2 cups all-purpose flour
1 cup quick-cooking oats
1/4 cup flaxseed, finely ground in a spice grinder, or pre-ground flaxseed
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
12 tablespoons (1 1/2 sticks) unsalted butter, softened
1 cup granulated sugar
3/4 cup packed dark brown sugar

  • Drop heaping tablespoonfuls of dough onto the prepared baking sheets, about 2 inches apart. Bake until golden brown, 10 to 12 minutes. Let the cookies cool 3 minutes on the baking sheets, then transfer to racks to cool completely.

SOFT AND CHEWY OATMEAL FLAX CHOCOLATE CHIP COOKIES

Soft and Chewy Oatmeal Flax Chocolate Chip Cookies image

A healthy soft and chewy oatmeal flax chocolate chip cookie that are so good no one will know they are good for you.

Provided by Aimee

Number Of Ingredients 12

1/2 cup coconut oil ((softened, but not fully melted))
1/2 cup light brown sugar ((packed))
1/4 cup granulated sugar
1 large egg
1/2 TBS vanilla extract
1 cup old-fashioned whole rolled oats
1 cup all-purpose flour ((spooned and leveled))
½ cup flaxseed ((finely ground))
1 tsp baking soda
1 tsp cinnamon ((optional))
¼ tsp salt
3/4 cup semi-sweet chocolate chips

Steps:

  • In a large mixing bowl, or bowl of a stand mixer, combine the coconut oil, brown sugar, and white sugar. Mix for about 2 minutes.
  • Add in the egg and vanilla extract and stir until just combined.
  • Add the oats, flour, flaxseed, baking soda, cinnamon, and salt, and mix until combined.
  • Stir in the chocolate chips.
  • Form the cookie dough into 1.5 to 2 TBS sized balls and place on a cookie sheet lined with a silicone liner or parchment paper. Top with more chocolate chips if desired.
  • Cover the pan with plastic wrap and refrigerate or at least 1 hours or up to 5 days. This will help the cookies not to go flat. If you chill them longer than 1 hour it's possibly your cookies won't spread very much as they bake, so you can flatten the balls a bit with your hand before baking.
  • Preheat oven to 350 Fahrenheit. Line 2 baking sheets with a silicone liner or parchment paper.
  • Place the cookie dough balls 2 inches apart on the prepared cookie sheets.
  • Bake the cookies for about 9 minutes or until edges and top are just beginning to set. Do not bake longer than 10 minutes to ensure the cookies are still soft. They will continue to cook on the pan, and will firm up as they cool.
  • Let the cookies cool for 5 minutes before transferring them to a cooling rack.
  • The cookies can be stored in an airtight container for up to 1 week, or frozen for up to 2 months.

FLAX SEED COOKIES

Flax Seed Cookies image

These cookies come from my godmother. I made them a few times when I was a teen and living with my parents.

Provided by Boomette

Categories     < 30 Mins

Time 17m

Yield 1-2 dozens

Number Of Ingredients 4

2/3 cup oil
1/2 cup flax seed (not ground)
3/4 cup maple syrup (I've always used maple syrup and it's so good) or 3/4 cup corn syrup (I've always used maple syrup and it's so good)
2 -3 cups all-purpose flour (added progressively)

Steps:

  • Mix everything together until you have a nice consistency. Add between 2 and 3 cups of flour. When the dough holds together, it means it's enough flour. Put by teaspoon on a baking sheet and bake at 350 F around 12-14 minutes until they are just a little bit golden. But don't cook them too much.

FLAX SEED HONEY COOKIES

Flax Seed Honey Cookies image

I came up with this recipe when I wanted my 17 month old daughter to start taking flax. They are simple tasting, chewy and fairly easy to make. I flatten them down twice during baking with a spatula; once after 5 minutes of baking and then about a minute before they come out of the oven. DO NOT USE FLAX OIL in this recipe or any baking recipe for that matter as it breaks down into a substance that is not safe for ingestion. Only use flax seeds for baking or flax meal. Prep time doesn't include chill time.

OATMEAL - FLAX SEED MEAL COOKIES

Oatmeal - Flax Seed Meal Cookies image

I have always enjoyed a hearty cookie that has a stout texture with more taste. I blended several recipes to come up with this. I have never left a party without one or more requests for this recipe. I am constantly trying new variations, but the original still stands as BEST! These cookies freeze well and of course they are great in a pinch defrosted in the microwave on half power.

  • Preheat the oven to 350º. In a large bowl, whisk together the flour, flax seed meal, baking soda, baking powder, and kosher salt. In a separate bowl, mix the butter, sugar, eggs, and vanilla, manually or with a hand mixer. Beat until the mixture is fluffy.
  • Combine the two mixtures, stirring until the flour is fully incorporated, then add the oats, raisins, and flax seeds. Mix well, but don't over mix.
  • Prepare a baking sheet with a non-stick baking mat or parchment paper. Scoop out heaping tablespoons of cookie dough, and gently form each into a ball, and place them 2 inches apart on the baking sheet. Sprinkle the top of each cookie with whole flax seeds. Bake for 11-14 minutes, uncovered, until the cookies turn golden brown (but are still moist in the middle). Rotate the baking sheet halfway through to ensure evenly baked cookies. Let the cookies cool on the baking sheet for 3 to 5 minutes before transferring to a wire rack or towel to cool. If using only one baking sheet, repeat until you’ve used all of the dough.

18 WAYS TO USE FLAXSEED | EASY WAYS TO USE FLAX IN RECIPES

  • Make An Egg Replacer. Whether you’ve run out of eggs or are baking for someone who’s allergic to eggs, you can use flaxseed as a replacement for eggs in many recipes that typically call for eggs.
  • In Breaded Chicken Recipes. Beef up the nutritional value of your breaded chicken or crusted tilapia by adding a flax seeds recipe to the coating mixture.
  • Make an Egg-less “Egg Wash” The reason French toast is crispy and the coating of baked chicken comes out crunchy is because of the egg wash. But making an egg-less “egg wash” a great way to use flaxseed.
  • As a Thickener. I’m kind of picky about texture on certain things, like applesauce. I like my homemade applesauce to be thick. I don’t care if it has chunks or not, but I don’t like runny applesauce.
  • Make Homemade Pudding. Traditional pudding is made with eggs, but since you can use flaxseed in lieu of eggs in other recipes, why not use flaxseed in homemade pudding!
  • In Lieu of Breadcrumbs. Think of all the recipes that call for breadcrumbs… meatloaf, meatballs, baked macaroni and cheese, crab cakes… Now think of all the ways you can use flaxseeds instead!
  • Add to Granola Recipes. The most basic granola recipe is essentially toasted oats and in my opinion, is fairly boring. But when you add other delicious and healthy ingredients like flaxseed, granola becomes incredibly delicious and borderline gourmet!
  • Add to Granola Bar Recipes. Since you can use flaxseed as a binder, it only makes sense to add it to foods that are already bound together, like granola bars!
  • In Lieu of Oat Bran, Wheat Germ and/or Wheat Bran. Oat bran and wheat germ are often used in baking recipes to add nutritional value, but neither of these ingredients are readily available in most grocery stores.
  • Add to Smoothies. Adding flaxseed to smoothies isn’t a new concept, but it’s so simple and effective that it’s worth repeating. Add 1-2 tablespoons of flaxseed per 1 serving of smoothie.
