YUKON SOURDOUGH FLAPJACKS (PANCAKES)

Yukon Sourdough Flapjacks (Pancakes) image

Old fashioned pancakes just like the prospectors used to make on the trail. Prep time does not include proofing time.

Provided by Donna M.

Categories     Sourdough Breads

Time 16m

Yield 12-15 pancakes

Number Of Ingredients 7

2 cups proofed sourdough starter
1 egg, beaten
2 tablespoons oil
2 tablespoons sugar
1/2 teaspoon salt
white bread flour, as needed
1/2 teaspoon baking soda

Steps:

  • To proof your starter, feed it with equal amounts of flour and water (start with 1 cup of starter and at least 1 cup each of flour and water); cover and let sit overnight.
  • Next morning, measure 2 cups of the proofed starter into a mixing bowl.
  • Add egg, oil, sugar, and salt to the starter and mix briefly.
  • Add enough flour to attain the desired consistency and mix until lump-free.
  • Just before cooking the pancakes, dissolve baking soda in 1 Tbsp of warm water and gently blend into batter (See Note).
  • Once baking soda is blended in, do not stir again.
  • With a pitcher or ladle, pour 2 to 3-inch rounds on a hot (400 F) griddle.
  • Cook 2 to 4 minutes, until bubbles form on surface.
  • Turn and cook for an additional 2 minutes; serve hot.
  • NOTE: If time permits, omit baking soda and stir 1 cup white flour and 1/2 cup of milk into batter.
  • Proof, covered, for 1 hour at 85 degrees F, and then without stirring pour batter onto hot griddle--this will make pancakes extraordinary.

FLUFFY JAPANESE PANCAKES

Fluffy Japanese Pancakes image

These thick pancakes are like little souffles: custardy on the inside and golden and crispy on the outside.

Provided by Food Network Kitchen

Categories     main-dish

Time 40m

Yield 8 pancakes

Number Of Ingredients 11

1 1/2 cups all-purpose flour (see Cook's Note)
3 tablespoons confectioners' sugar
2 teaspoons baking powder
1/2 teaspoon kosher salt
1 1/4 cups milk
4 tablespoons unsalted butter, melted and cooled, plus more for serving
1/2 teaspoon pure vanilla extract
1 large egg yolk plus 3 large egg whites
1/4 teaspoon cream of tartar
Nonstick cooking spray
Maple syrup, for serving

Steps:

  • Whisk together the flour, confectioners' sugar, baking powder and salt in a large bowl.
  • Whisk together the milk, melted butter, vanilla and egg yolk in a medium bowl until combined.
  • Beat the egg whites and cream of tartar in another large bowl with an electric mixer on medium-high speed until stiff peaks form, about 2 minutes.
  • Stir the milk mixture into the flour mixture until just combined (it's OK if there are a few lumps). Stir one-third of the beaten egg whites into the flour-milk mixture. Then gently fold in the remaining egg whites until just combined (take care not to overmix).
  • Lightly spray the inside of four 3-inch-wide-by-2 1/2-inch-high ring molds with nonstick cooking spray
  • Coat a large nonstick skillet with nonstick cooking spray and heat over medium-low heat. Put the prepared ring molds in the middle of the skillet and fill each with 1/2 cup of batter (it should fill each ring mold about halfway). Cover the skillet with the lid and cook until the batter rises to the tops of the ring molds and is golden on the bottom, about 5 minutes. Release the bottom of the pancakes with a spatula. Grasp the sides of the ring molds with tongs to stabilize them and then carefully flip. Cover and cook until golden on the other side, about 5 minutes more. Transfer to a plate and remove the mold. Serve with butter and maple syrup. The pancakes should be eaten before they deflate.
  • Lightly spray the ring molds and coat the skillet with nonstick cooking spray and repeat the cooking method with the remaining batter.

FLAP HAPPIES (PANCAKES)

Flap Happies (Pancakes) image

Welcome to the Dense-Free Pancake Zone here at Recipezaar...Surprisingly this recipe-which can be found on countless online sources, has not been posted here. These pancakes are not diet friendly but they are light, small, airy and delicious; not a heavy pancake! You'll notice, too that the directions have several DO NOTS-please heed those warnings. Serve with your favorite toppings. My original source is unknown as my brother sent me the recipe by e-mail over five years ago.

Time 4m

Yield 25 pancakes

Number Of Ingredients 10

3 eggs
1 cup heavy cream
1 cup sour cream
1/3 cup buttermilk
1/2 teaspoon vanilla extract (my addition)
2 tablespoons sugar
1 teaspoon salt
2 teaspoons baking powder
1 teaspoon baking soda
1 cup unbleached white flour

Steps:

  • Beat eggs by hand mixer for 2 minutes.
  • Fold in the heavy cream, sour cream, buttermilk and vanilla extract.
  • Sift together the dry ingredients, stir into the egg mixture {just} until smooth. DO NOT overstir or the pancakes will turn out tough!
  • Measure out 2 tablespoons of the batter using a greased measuring spoon. Cook the pancakes on a lighlty greased and heated non-stick pan over MEDIUM heat for at least 2-3 minutes, depending on the stove. Do not cook the pancakes any higher than medium or they will burn!
  • Very carefully flip pancakes over and cook on other side until golden brown. Do not crowd. Their texture is very delicate and can burn easily.
  • Keep pancakes on warming platter until ready to serve.
  • About twenty-five 3" diameter pancakes.
