STEAK TACOS
Easy flank steak tacos with citrus marinade. This easy recipe for the grill, stovetop, or oven makes the BEST perfectly tender steak tacos.

- Place the flank steak in a baking dish. In a medium mixing bowl or large measuring cup, stir together the olive oil, garlic, orange juice, lime juice, cumin, salt, and pepper. Pour over the steak. Cover tightly with plastic and refrigerate for at least 1 hour or up to 8 hours (do not marinate for more than 8 hours or the steak will break down and soften too much).
- When ready to grill, remove the steak from the refrigerator and let stand at room temperature while you prepare any toppings and preheat the grill.
- Preheat an outdoor grill or indoor grill pan over medium-high heat (alternatively, you can cook the steak under your broiler-place your oven rack in the upper third, usually the second closest rack to the top). Brush the grill grates with oil. Remove the steak from the marinade, shaking off any excess. Grill (or broil) the steak for about 3-4 minutes per side, flipping once, until medium-rare (The steak should read 135 degrees F on an instant-read thermometer.)
- Remove the steak to a cutting board and cover with foil. Let rest for 5 minutes (this allows the juices to sink into the meat), then cut the steak into thin, 1/4-inch slices, slicing it across the grain.
- Next, warm the tortillas. Place them in a dry skillet heated over medium-high or heat them on the grill for about 30 seconds per side, until warmed through.
- To serve, fill the tortillas with a few slices of beef. Sprinkle with cheese and any desired toppings. Enjoy immediately.

Steps:
- Brown steak and ground beef in skillet.
- Drain and return to skillet.
- Add onions, chilies and seasonings stir until well blended.
- add sauce and simmer on low for 10 to15 minute.
- Heat or fry tortillas according to directions on package.
- Fill shells with meat filling and toppings.

- Heat the oil in a 12-inch skillet over medium heat until shimmering; add in onion and cook, stirring occasionally, until softened, about 5 minutes.
- Add in the chili powder, garlic,, cumin, coriander, oregano, cayenne, and 1/2 teaspoon salt; cook, stirring constantly, until fragrant, about 1 minute.
- Add in the ground beef and cook, breaking the meat up with a wooden spoon, until the beef is no longer pink, about 5 minutes.
- Add the tomato sauce, chicken broth, vinegar, and brown sugar and bring to a simmer.
- Decrease heat to medium-low and simmer, uncovered, stirring frequently and breaking the meat up so no chunks remain, until the liquid has reduced and thickened (mixture should not be completely dry), about 10 minutes.
- Season with salt and pepper to taste.
- Divide the filling evenly among the warm taco shells and serve.

- On medium heat, add ground beef to a large non-stick skillet. Break up meat in skillet and add the onion and chiles. After the meat is fully cooked, then drain off all excess fat.

MEXICAN FLANK STEAK TACOS
This is super easy to make and something I prefer over ground beef tacos! If I'm not making carnita tacos I'm making this one ;) Place in warm or fried corn tortillas and served with your favorite taco toppings. I like lettuce, onion, avocado and salsa myself ;)

- In a large bowl, marinate the steak in the juice of the two limes, a small handful of cilantro, garlic pepper (or garlic powder and black pepper), and a generous pour of extra virgin olive oil. Flip the steak and season the other side.
- Cover the bowl with plastic wrap and allow to marinate for at least an hour or two.
- Grill the steak for 8-10 minutes on each side, until medium-rare (or medium, if desired). Let the steak rest off the grill for 15-20 minutes.
- Thinly slice, and chopped into pieces if desired.
- Place in warm or fried corn tortillas and served with your favorite taco toppings. I like lettuce, onion, avocado and salsa myself ;).

GROUND BEEF TACOS
Who doesn't like some version of a taco, there are so many. This is one of my family's favorites, as long as they get to pick their own toppings.

Steps:
- In a 2 quart sauce pan add ground beef, salt, chili powder, garlic, cumin, paprika, and enough water to cover meat.
- Bring to a boil.
- Simmer for about an hour.
- Add bell pepper and onion. Continue simmer for 20 to 30 minutes. (Until bell pepper and onion are fully cooked).
- Meat can be used at this time or cooled for later depending on your meal schedule. I like to make the meat mixture ahead of time.
- Full Corn Tortilla Shells just about 1/2 way full or desired amount.
- Put into a preheated oven (300) for about 10 minutes or until completed heated through.
- Ready to Serve!
- Taco Toppings: Shredded Lettuce,Chopped Tomatoes, Cheese Sauce, Shredded Cheese, Mexican Blend), Chopped Onions, Black Sliced Olives, Sliced jalapeno, Refried Beans, Sour cream, Guacamole, Hot Sauce, Taco Sauce, Scallions (green onions), Mexican corn, Salsa . . . . to be continued.

THE BEST GROUND BEEF TACOS ON THE PLANET.
OK, I MIGHT be a bit over confident in the title... but my family doesn't think so! This takes just a little bit of work and some time to simmer and will (IMHO) make you completely incapable of ever using a taco seasoning packet again. Try not to use dried onion or garlic as it really does make a huge difference in the end product. You may need to play with the amounts of the chile powder and crushed red pepper depending on how hot you like your taco meat. This recipe is reasonably mild, but YMMV Finally, try to get some high quality chile powder made with a blend including ancho and chipotle chiles. Most bulk "chile powder" out there has salt, garlic and "other spices" in it and is not even CLOSE to as good as the "real" thing! I hope you enjoy these as much as my family does!

- in a large skillet, cook the diced onion for about 3-4 minutes on medium heat, just until they start to go translucent.
- Add the ground beef and cook until it is nearly, but not quite, all browned.
- Add the minced garlic and continue cooking until the ground beef is completely browned through.
- Add all the remaining ingredients, including enough water to ensure the spices get evenly distributed throughout the mixture, but not so much that it's going to take forever to cook off.
- Simmer until the tomatoes are cooked through and the mixture is dry enough to put in a taco shell. - How dry that is, is completely up to you and your taste!
