FLAN RECIPE
This is easy to make Mexican Flan recipe, it is made using whole eggs, condensed and evaporated milk. Covered with a light sugar syrup. It can also be made using cream cheese or coconut milk, for a different taste and texture.

- In a medium-size saucepan place the sugar and water, bring to a boil in at high heat until sugar dissolves, when sugar dissolves reduce heat and keep boiling until the syrup gets a light brown-caramel color. This will take about 10 minutes. Pour the caramel in your oven proof pan, swirling the caramel to cover the bottom of the pan evenly. Let cool.
- Place the rest of the ingredients in a blender and process until you have a smooth mixture.
- Pour mixture slowly into prepared pan and cover with aluminum foil. For the hot bath. Place the pan inside a large baking pan. Add warm water to the pan until it reaches about 3/4 inch.
- Bake in a preheated oven at 325 degrees for about 50 minutes or until flan looks firm as in the picture below. Flan will keep cooking while it cools, so do not let longer in the oven. Let it cool.4. Once the flan has cooled run, a knife between the flan and baking pan.
- Place a large serving plate on top of the pan and invert with a quick move to avoid any liquid caramel to spill from the pan. Slice, serve and enjoy.

- Calienta el horno a 350°F.
- Calienta 1 taza del azúcar en una olla pequeña y pesada a fuego medio y cocínala, revolviéndola constantemente con una cuchara de madera, de 6 a 8 min. o hasta que se derrita y tenga un color dorado oscuro. Vierte el caramelo inmediatamente en 1 molde redondo de 9 pulgs.; inclina y gira el molde para cubrir el fondo con caramelo de forma pareja.
- Licúa la leche y el queso en la licuadora hasta obtener una consistencia homogénea. Agrega los huevos, la vainilla y el azúcar restante; licúa hasta obtener una consistencia homogénea. (No lo mezcles demasiado). Vierte el batido sobre el caramelo en el molde; tápalo con papel aluminio. Colócalo en una fuente para hornear grande; agrega suficiente agua caliente a la fuente, de modo que el molde esté sumergido hasta la mitad.
- Hornea el flan de 50 min. a 1 hora o hasta que al insertar un cuchillo cerca del centro, éste salga limpio. Déjalo enfriar un poco. Saca cuidadosamente el molde del agua. Déjalo que se enfríe completamente sobre una rejilla de metal. Ponlo en la nevera varias horas o hasta que se enfríe. Vuelca el flan sobre un plato justo antes de servir.

- Preheat to oven 350°F degrees. Set a kettle of water to boil. Set an 8- or 9-inch cake (or pie) pan with 2-inch high sides inside of a larger baking pan (such as a 13x9).
- In a small sauce pan over medium-low heat, melt sugar until completely dissolved. Watch carefully so it does not burn. You may swirl the pan to stir. Remove from heat when it is a dark golden, amber color.
- Immediately pour the melted sugar into the bottom of the cake pan, working quickly before it hardens. Set aside.
- In a blender beat the cream cheese, sweetened condensed milk, evaporated milk, eggs and vanilla. Mix until well combined.
- Strain the custard through a fine-mesh sieve to ensure there are no lumps. Pour the strained custard into the cake pan over the sugar caramel. Next, add boiling water to the larger pan. It should come up the sides about an inch deep. The cake pan will be sitting in a water bath.
- Bake for 1 hour, or until set around the edges with a slight jiggle in the middle. Remove from oven and let the flan cool in the water bath, about an hour. Once cool, refrigerate at least 2 hours, but overnight is best.
- When ready to serve, run a knife around the edges to loosen. Set a plate over the flan and flip upside-down to invert. Slice into wedges and serve.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Fill a large oven-safe pot with water to 1 inch; bring to a boil.
- Place sweetened condensed milk, evaporated milk, eggs, cream cheese, milk, and vanilla extract in a blender; blend until smooth.
- Place sugar in an even layer in a saucepan over medium heat. Cook until edges start to brown, about 1 minute; drag sugar into the center with a spatula once the edges start to brown. Continue cooking, stirring from time to time, until caramel is an even golden brown, 4 to 5 minutes.
- Pour caramel into a 9-inch flan mold or baking pan; swirl so that caramel reaches 1 inch up the sides. Pour condensed milk mixture on top. Place mold in the pot of boiling water.
- Bake flan in the preheated oven until a damp table knife inserted into the center comes out clean, 45 minutes to 1 hour. Remove from oven and let stand for 5 minutes.
- Chill flan in the refrigerator until firm, 2 to 3 hours. Invert onto a serving plate so that caramel is on top.

- Calienta el horno a 375°F.
- Vierte la cajeta dentro de un molde acanalado con tubo central de 12 tazas de capacidad rociado con aceite en aerosol. Mezcla la leche, el queso crema, 4 huevos, el azúcar y la vainilla hasta obtener una mezcla homogénea. Pon a un lado.
- Bate bien la mezcla de pastel, el agua, el aceite y el resto de los huevos con la batidora. Incorpora la crema agria; mézclalo bien. Vierte esto sobre la cajeta del molde; vierte la mezcla de queso crema con cuidado sobre el batido del pastel. Cubre el molde con papel aluminio rociado con aceite en aerosol con el lado rociado hacia abajo. Coloca el molde dentro de otro molde más grande. Agrégale suficiente agua al molde grande para cubrir la mitad del molde acanalado.
- Hornea el batido 1 hora y 30 min. o hasta que al insertar un palillo de dientes cerca del centro, éste salga limpio. Deja enfriar completamente (sin sacar el postre del molde). Refrigera el postre durante 2 horas. Suelta el postre por los lados del molde e inviértelo sobre un plato. Quita el molde. Sirve el postre con un copo de COOL WHIP.

- Preheat oven to 350 degrees F (175 degrees C).
- In a heavy skillet over medium-low heat, cook and stir sugar with a wooden spoon until melted and golden, about 10 minutes. Caramel is very hot. Very carefully pour the caramel into a 9-inch round, 3-inch deep baking dish. Swirl dish to cover bottom and sides. The caramel will harden as it cools.
- Combine the eggs, cream cheese, and sweetened condensed milk in a blender. Cover, and blend on High until well combined; transfer to a large bowl. Pour the cream of coconut, coconut milk, evaporated milk, coconut-flavored rum, and vanilla extract into the blender; cover and blend on High until well combined. Pour into the bowl with the cream cheese mixture. Whisk until incorporated. Pour the flan mixture into the caramel-coated baking dish.
- Line a roasting pan with a damp kitchen towel. Place the filled baking dish on the towel, and place roasting pan in the preheated oven. Fill roasting pan with boiling water to reach halfway up the sides of the baking dish. Bake until the flan is set and a knife inserted in the center comes out clean, about 1 hour. Transfer to a wire rack; cool. Refrigerate flan until ready to serve.
- To serve, run a knife around the edges of the pan and flip the flan out onto a serving platter. Spoon any caramel remaining in the baking dish over the flan.

- PREHEAT oven to 350°F.
- COMBINE sugar and water over medium-low heat until sugar dissolves in a heavy, small pan. Boil but do not stir, hold the pan's handle and slowly swirl pan to incorporate sugar and water to resemble amber syrup. Do not burn. Approximately 8 minutes.
- IMMEDIATELY pour syrup into 9-inch cake pan. Carefully swirl the cake pan around to cover the entire bottom in syrup. Set aside.
- WHISK eggs, cream cheese, evaporated milk, condensed milk, cinnamon and vanilla in a large mixing bowl.
- POUR into prepared cake pan and cover lightly with aluminum foil. Place covered cake pan in a large roasting pan. Fill roasting pan half way up with boiling water as a bain-marie.
- BAKE for one 1 hour and 25 minutes or until toothpick inserted comes out clean.
- REMOVE baking pan from oven and let cool in the baking pan with water. Remove from water and refrigerate overnight.
- RUN a small knife around flan to loosen. To unmold, place a plate atop the cake pan, hold plate firmly and invert. Shake gently and allow flan to settle onto plate.

- Calienta el horno a 350°F.
- Derrite 1 taza del azúcar, revolviendo constantemennte, en una olla pequeña de fondo pesado a fuego medio hasta que adquiera un color dorado intenso. Vierte inmediatamente cantidades iguales del caramelo en 10 moldecitos para flan (4 oz cada uno) e inclina los moldecitos para cubrir bien el fondo con el caramelo.
- Licúa la leche evaporada y el queso crema hasta obtener una mezcla homogénea. Agrega el azúcar restante, los huevos, el coco y el extracto de ron; licúa justo hasta que quede homogéneo. Vierte uniformemente sobre el caramelo en los moldecitos. Coloca los moldecitos en un molde grande poco profundo con agua caliente que cubra los moldecitos hasta la mitad.
- Hornea de 45 a 50 min., o hasta que al insertar un cuchillo cerca del centro, éste salga limpio. Déjalos enfriar. Con cuidado, retira los moldecitos del agua. Refrigéralos 4 horas. Al momento de servir, voltea los moldecitos sobre platos de postre. Decóralos con Cool Whip.
