1-1/2 pounds boneless skinless chicken breasts, cut into 1-inch cubes
3 medium carrots, chopped
3 celery ribs, sliced
1 small onion, finely chopped
4 teaspoons garlic powder
4 teaspoons onion powder
4 teaspoons paprika
2 teaspoons ground cumin
1/2 cup Marsala wine or reduced-sodium chicken broth
1 can (15-1/2 ounces) great northern beans, undrained
1 can (15 ounces) black beans, undrained
1 can (14-1/2 ounces) diced tomatoes, undrained
1 teaspoon salt
1 teaspoon pepper
Hot cooked rice
Sour cream and shredded cheddar cheese, optional

Steps:

  • In a large skillet, heat 1/2 teaspoon oil over medium high heat. Add half of the chicken; cook and stir until browned. Remove with a slotted spoon to a 4- or 5-qt. slow cooker. Repeat with 1/2 teaspoon oil and remaining chicken. In same pan, heat remaining oil over medium heat. Add carrots, celery, onion and spices; cook and stir until tender, 6-8 minutes., Add wine; increase heat to medium-high. Cook 1 minute, stirring to loosen browned bits from pan. Transfer to slow cooker. Add beans, tomatoes, salt and pepper. Cook, covered, on low until meat is tender, 4-5 hours., Serve with rice. If desired, top with sour cream and cheese.

2 stalks celery, diced (about 1/2 cup)
3 medium poblano peppers (about 4 ounces each), seeded and white ribs removed, finely diced (about 1 1/2 cups)
1 clove garlic, minced
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon cayenne pepper, more to taste
1 pound ground white meat turkey
2 (15.5-ounce) cans white beans such as cannelini, preferably low-sodium, drained and rinsed
4 cups low-sodium chicken broth
3/4 teaspoon dried oregano
1 (15.5-ounce) can hominy, drained and rinsed
Salt
1/4 cup nonfat plain Greek-style yogurt
2 tablespoons chopped fresh cilantro leaves
Lime wedges

Steps:

  • Heat the oil in large pot or Dutch oven over moderate heat. Add the onion, celery, poblanos, and cook, stirring occasionally, until the vegetables are soft, about 8 minutes. Add the garlic, cumin, coriander and cayenne and cook, stirring, until fragrant, about 30 seconds.
  • Add the ground turkey and cook, breaking up the meat with a spoon, until the meat is no longer pink about 2 minutes. Add the white beans, broth and oregano. Cook, partially covered, stirring occasionally, for 25 minutes.
  • Add the hominy and salt and more cayenne pepper, to taste, and continue cooking, partially covered, 10 minutes longer. Ladle into individual bowls and top each serving with 1 tablespoon of yogurt and 1 1/2 teaspoons of cilantro. Garnish with a lime wedge.

1 cup onion, chopped
1 garlic clove, minced
1/3 cup flour
1 tablespoon chili powder

2 cups white shoepeg corn, frozen
1 (15 ounce) can white beans, rinsed
1 (15 ounce) can black beans, rinsed
2 cups cooked chicken, cubed
1 (4 ounce) can green chilies, undrained
1/4 cup fresh cilantro, chopped

Steps:

  • Heat oil in dutch oven or large saucepan over medium-high heat. Add onions and garlic; cook until onions are tender.
  • (Have chicken broth ready) Stir in flour, chili powder, cumin and salt. Note: If you use a bullion cube to make the chicken broth, you might want to reduce or leave out the salt.
  • Gradually stir in chicken broth until thickened. Add 2 cups of milk and continue stirring.
  • Add remaining ingredients except cilantro; stir to combine. Bring to a low boil, but watch for scorching of milk.
  • Reduce heat; simmer 15 minutes. Stir in chopped cilantro.
  • Garnish with crushed taco chips, sour cream, fresh cilantro and hot sauce if you like.

1 bunch green onions, thinly sliced
1 red bell pepper, chopped
1 yellow bell pepper, chopped
4 fresh jalapeno peppers, seeded and minced

½ teaspoon ground ginger
½ teaspoon salt
½ teaspoon dried sage
½ teaspoon ground cumin

1 tablespoon olive oil
3 tablespoons butter
¼ cup all-purpose flour

Steps:

  • In a large skillet, heat olive oil over medium heat. Add chicken, and saute until cooked through. Remove the chicken from the pan.
  • Saute the onion, red bell pepper, yellow bell pepper, jalapeno chile peppers and garlic in the same skillet. Return the chicken, along with the ginger, salt, sage, cumin and white pepper. Mix thoroughly.
  • In a separate small saucepan or skillet, melt butter or margarine over medium heat. Stir in flour to make a roux. Whisk in the chicken broth and mix all together. Stir this mixture into the sauteed chicken and vegetables.
  • Stir in the beans with can liquid, and simmer all over low heat for 15 to 20 minutes or until cooked and heated through.

1-1/2 cups diced onion
1 tablespoon canola oil
1 tablespoon ground oregano
2 teaspoons ground cumin

  • Sort beans and rinse with cold water. Place beans in a Dutch oven; add water to cover by 2 in. Bring to a boil; boil 2 minutes. Remove from heat; cover and let stand 1 to 4 hours or until beans are softened. Drain and rinse beans, discarding liquid., In a stockpot, saute onion in oil until tender. Combine seasonings; add half to onion mixture. Saute 1 minute. Add beans, broth and garlic; bring to a boil. Reduce heat; cover and simmer 2 hours. , Preheat oven to 350°. 12 cloves garlic, unpeeled
1 tablespoon extra-virgin olive oil
12 shallots, chopped
2 tablespoons extra-virgin olive oil
3 Anaheim chile peppers
3 cloves garlic, minced
3 tablespoons all-purpose flour
1 cup dry white wine
7 cups low-sodium chicken broth
4 cups shredded cooked chicken
1 tablespoon chili powder
1/2 teaspoon cayenne pepper
1 15-ounce can navy beans, undrained
Kosher salt and freshly ground black pepper
1 10-ounce box frozen chopped spinach, thawed and squeezed dry
3/4 teaspoon smoked paprika
1/3 cup heavy cream
1 cup grated monterey jack cheese, for garnish

Steps:

  • Make the roasted garlic: Toss the 12 cloves garlic with the olive oil and 1 teaspoon water in a microwave-safe bowl. Cover, leaving a vent, and microwave until soft, about 90 seconds. Let cool, covered.
  • Prepare the chili: Preheat the broiler. Cook the shallots in the olive oil in a large saucepan over medium-low heat until caramelized, about 20 minutes. Meanwhile, place the chiles on a foil-lined broiler pan and broil until charred on all sides, turning, about 8 minutes. Transfer to a bowl, cover with plastic wrap and let cool. Peel the peppers with your fingers or a paring knife. Stem, seed and chop.
  • Add the minced garlic to the shallots and cook until fragrant, about 2 minutes. Add the flour and cook, stirring, until toasted, about 3 minutes. Increase the heat to high and add the wine; simmer 2 minutes, scraping up any browned bits from the pan. Add the roasted chiles, 6 cups broth, the chicken, chili powder, cayenne, beans, and salt and black pepper to taste. Return to a simmer.
  • Meanwhile, squeeze the soft pulp from the roasted garlic into a blender or food processor. Add the remaining 1 cup broth and process until smooth. Add to the chili and simmer until thickened, about 30 minutes, adding the spinach during the last 5 minutes. Add the paprika and cream and season with salt and pepper. Garnish with the cheese.

First cold day of Fall and I was craving chili. I came up with this recipe out of the ingredients that I had on had with an emphasis on adding a bit of nutritional value for my son.

1 lb extra lean ground beef
1 medium onion, diced
1 carrot, shredded
1 cup green pepper, diced
1 teaspoon minced garlic or 1 clove
1 tablespoon olive oil
1 (8 ounce) can tomato sauce
1 (14 1/2 ounce) can diced tomatoes, undrained
1 (14 1/2 ounce) can black beans, drained and rinsed
1 (14 1/2 ounce) can cannellini beans, drained and rinsed (white kidney beans)
1 cup water
2 tablespoons chili powder
1 tablespoon chopped fresh basil or 1 teaspoon dried basil
1/2 teaspoon salt
1/8 teaspoon ground cayenne pepper

Steps:

  • Saute diced onion, diced green pepper and shredded carrot in olive oil until tender but not browned. Approximately when the liquid cooks out of the vegetables.
  • Add garlic and ground beef and cook until ground beef is browned. Note, I did not drain the fat due to all of the vegetables so I highly recommend using extra lean ground beef in this.
  • Add all remaining ingredients and bring to a boil. Reduce heat and simmer uncovered. Cook for 30 minutes or until your desired consistency.
  • Note: Adjust chili powder and cayenne to your taste. Feel free to add green chili, hot sauce or other heat sources to kick it up or reduce seasonings if you feel it is too hot.

½ teaspoon ground oregano

1 cup water
3 (14.5 ounce) cans great Northern beans
12 ounces sour cream

Steps:

  • Heat the olive oil in a large skillet over medium heat. Cook the chicken in the hot oil until completely browned, 5 to 7 minutes.
  • Add the onion and celery to the skillet; cook and stir until the vegetables are slightly softened, 2 to 3 minutes.
  • Transfer the chicken mixture to a slow cooker.
  • Mix in the garlic powder, cumin, bay leaf, salt, black pepper, oregano, cayenne pepper, jalapeno peppers, green chilies, chicken stock, water, and great Northern beans.
  • Cook on Low 8 to 10 hours, or on High 4 to 5 hours. Remove the bay leaf from the mixture. Stir the sour cream and heavy cream through the chili to serve.

I cook it in a crockpot, but I'm sure it can be cooked on the stove if you brown the pork first.

3/4-1 lb boneless pork, cut into 1/2 in. cubes
1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can pinto beans or 1 (15 ounce) can other white beans, drained and rinsed
1 (8 ounce) can tomato sauce
1 green bell pepper, diced
1 medium tomatoes, peeled and chopped or 1/2 a can chopped tomato
1 small onion, sliced
1 garlic clove, minced

Steps:

  • If using fresh tomato, peel by droping in a pot of boiling water, immediatly removing and droping in a bowl of ice water and peeling. You can leave the skin on, it is personal preference.
  • Chop pork and place in a crockpot. Dump all the other ingredients on top. Stir.
  • Cook on Low for 6 hours.

1 large red bell pepper, cut into 1/2-inch pieces
1 large green bell pepper, cut into 1/2-inch pieces
2 jalapeño chilies, seeded, chopped
1 tablespoon plus 2 teaspoons chili powder
2 teaspoons ground cumin
1 1/2 28-ounce cans crushed tomatoes in puree
1 15 1/4-ounce kidney beans, drained, rinsed
1 15-ounce can cannellini (white kidney beans), drained, rinsed
1 15- to 16-ounce can black beans, drained, rinsed
1 tablespoon balsamic vinegar or red wine vinegar
Sour cream
Chopped fresh cilantro

Steps:

  • Heat olive oil in heavy large saucepan over medium-high heat. Add Italian sausages and brown on all sides, turning occasionally, about 8 minutes. Transfer sausage to plate. Add chopped onion to pan and sauté 5 minutes. Add chopped bell peppers and chilies and sauté 1 minute. Add chili powder and cumin and stir until aromatic, about 30 seconds. Add crushed tomatoes and beans. Simmer 15 minutes to blend flavors. Cut sausage into 1/2-inch pieces. Add to chili and simmer until cooked through, stirring occasionally, about 10 minutes. Mix in vinegar. Season chili to taste with salt and pepper. (Can be prepared 2 day ahead. Cool and refrigerate. Before serving, rewarm over medium heat.)
  • Spoon chili into bowls. Top with sour cream and cilantro and serve.

When the snow flies, I like to make Chili, with and without meat. This is a variation on black bean chili I came up with one night and liked. Add some shredded chicken or cubed pork to it if you like.

Number Of Ingredients 12

1 small white onion, chopped
1 small red onion, chopped
2 tablespoons olive oil
1 (15 ounce) can white beans, rinsed
2 (15 ounce) cans black beans, rinsed
1 (15 ounce) can corn kernels, rinsed
1 (16 ounce) can chopped tomatoes
3 cups chicken broth
1 cup chili relish
1 -2 teaspoon cumin
salt
2 stalks celery, chopped

Steps:

  • In a large pot, heat oil and sauté onions.
  • Add rest through chili relish (separate recipe as Chile Relish). Bring to a boil.
  • Reduce heat & simmer 15-20 minute (If you decide to add cooked chicken or pork, add it now & let simmer 30-40 min)
  • Add Cumin and Salt to taste, add celery & simmer another 5 minute.
