Stuff and roll a butterflied flank steak for an easy and elegant meal. Stuffed with prosciutto, basil, Parmesan, and roasted bell peppers, this stuffed flank steak recipe is a crowd-pleaser.

Marinade:
1/4 cup extra virgin olive oil
1/4 cup red wine vinegar
2 cloves of garlic, finely chopped
2 Tbsp chopped fresh parsley
1/4 teaspoon coarse black pepper
Flank steak:
1 flank steak (3/4 in thick, about 1 1/4 pounds), butterflied
2 red bell peppers
3 Tbsp chopped parsley
6 to 8 thin slices of prosciutto or other cured ham
24 medium sized fresh basil leaves
2 Tbsp grated Parmesan cheese
Freshly ground pepper to taste
1 bunch watercress or baby arugula for garnish

Steps:

  • Make the marinade: In a large, nonreactive bowl, combine the olive oil, red wine vinegar, chopped garlic, parsley, and black pepper.
  • Preheat the broiler: Set the broiler to high and preheat.
  • Roast the bell peppers: Cut the bell peppers in half and remove the stems and seed pods. Rub the outside of the bell pepper halves with olive oil and place on a lined baking sheet, cut-side down. Broil the halved red bell peppers until the peels are blackened. Remove from the oven, place in a bowl, and cover with a plate. After about 5 minutes, remove and discard the blackened peel.
  • Bake, rest, slice, and serve: Bake at 350°F for 30 minutes. For medium-rare, cook to internal temperature of 130°F to 135°F. Remove from the oven, tent with some foil, and let rest 15 minutes before cutting. Cut into 1/2-inch to 1-inch-thick slices. Serve, arranged on a platter, garnished with watercress or baby arugula.

6 garlic cloves
1/4 cup hoisin sauce
1/4 cup dry red wine
2 tablespoons honey
2 tablespoons toasted sesame oil
1 tablespoon chopped fresh rosemary
1 1/2 lbs flank steaks
2 bulbs garlic, roasted (see end of recipe for instructions)
1/2 cup dry breadcrumbs
1/4 cup roasted red pepper, finely chopped
1/4 cup mascarpone cheese
2 tablespoons dijon-style mustard
1/2 teaspoon seasoning salt
1/4 cup cayenne pepper
chopped fresh garlic
rosemary sprig
roasted red pepper, strips

Steps:

  • For the marinade, combine all ingrediants in a blender, and process until smooth.
  • With a knife, score the flank steak in a diamond patteron on both sides. Place the steak in a heavy-duty locking plastic bag with the marinade and seal the bag well. Refrigerate the steak for at least 1 hour, turning the bag occasionally.
  • For the filling, squeeze the roasted garlic from the skins into a bowl. Add the remaining filling ingredients and mix well.
  • Prepare a medium-hot barbecue fire or heat the broiler.
  • When ready to cook, remove the steak from the marinade and pat dry with paper towels. Place the steak flat on a work surface. Spread the filling evenly over the steak.
  • Starting from the long edge of the steak, roll the steak tightly, jelly-roll fashion. With a knife, cut the steak into 6 equal pieces and secure each piece with a skewer.
  • Grill or broil the steak pieces for about 3 to 4 minutes per side, or until the steak is the desired doneness.
  • Garnish servings with chopped garlic, rosemary sprigs and red pepper strips.
  • 1*To roast garlic, cut off about 1/4 inch from the top of the garlic bulbs. Place the garlic bulbs on a sheet of aluminum foil and drizzle with olive oil. Sprinkle lightly with salt and freshly ground black pepper and wrap with the foil. Bake in a 350 degree oven for about 30 minutes, until the garlic pulp is soft.

1 1/2 cups balsamic vinegar
2 tablespoons canola oil
1 small onion, coarsely chopped
1 large clove garlic, coarsely chopped
1/2 cup ketchup
1 tablespoon ancho chile powder
1 1/2 teaspoons paprika
2 teaspoons dijon mustard
1 1/2 teaspoons red wine vinegar
1 1/2 teaspoons Worcestershire sauce
1 small chipotle chile in adobo sauce, chopped
1 1/2 teaspoons packed dark brown sugar
2 teaspoons honey
2 teaspoons molasses
Kosher salt and freshly ground pepper
2 pounds flank steak
1 French baguette, halved lengthwise and cut into 4-inch pieces
Extra-virgin olive oil
Kosher salt and freshly ground pepper
1 cup grated monterey jack cheese
Sliced scallions, for serving

Steps:

  • Make the sauce: Bring the balsamic vinegar to a simmer in a small saucepan over medium heat and cook until reduced by about half, 15 to 20 minutes. Set aside. Heat 1 tablespoon canola oil over medium-high heat in a heavy-bottomed medium saucepan. Add the onion and cook until soft, 3 to 4 minutes. Add the garlic and cook 1 minute. Add the ketchup and 3 tablespoons water and bring to a boil. Reduce the heat to a simmer and cook 5 minutes. Add the reduced balsamic vinegar, the chile powder, paprika, mustard, red wine vinegar, Worcestershire sauce, chipotle chile, brown sugar, honey and molasses. Simmer until thickened, stirring occasionally, 10 minutes. Puree with an immersion blender or transfer to a blender and puree until smooth. Season with salt and pepper. Pour the sauce into a bowl and let cool to room temperature. (The sauce will keep for 1 week refrigerated in a sealed container. If it gets too thick, stir in 1 to 2 tablespoons water.)
  • Let the steak sit 30 minutes at room temperature before grilling. Meanwhile, preheat a grill to high. Brush the steak with the remaining 1 tablespoon canola oil and season liberally with salt and pepper. Grill over direct heat until browned on one side, about 3 minutes, then turn over and grill until the other side is browned, about 3 more minutes. Move to a cooler part of the grill, away from direct heat. Baste with the sauce and continue grilling, turning several more times, until medium rare, about 5 more minutes. Transfer to a cutting board and loosely tent with foil. Let rest 10 minutes.
  • Meanwhile, make the cheesy bread: Brush the cut side of each piece of bread with olive oil and season with salt and pepper. Grill on both sides. Remove from the grill and top each piece with a mound of grated monterey jack cheese. Put the bread on a piece of aluminum foil and return to the grill to melt the cheese. Transfer to a serving platter.
  • Thinly slice the steak against the grain. Arrange the steak slices on the bread and garnish with sliced scallions.

½ onion, chopped
3 cloves garlic, chopped
¼ cup olive oil
¼ cup balsamic vinegar
¼ cup soy sauce
1 tablespoon Dijon mustard
1 tablespoon rosemary
1 teaspoon salt
½ teaspoon ground black pepper
1 ½ pounds flank steak

Steps:

  • Whisk onion, garlic, olive oil, balsamic vinegar, soy sauce, Dijon mustard, rosemary, salt, and pepper together in a mixing bowl.
  • Put the flank steak in a large resealable plastic bag. Pour marinade into the bag and coat steak with the marinade. Squeeze excess air from the bag and seal. Marinate in the refrigerator at least 30 minutes, up to 2 days.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Remove the flank steak from the marinade and shake to remove excess liquid. Reserve marinade.
  • Cook steak until firm, hot in the center, and just turning from pink to grey, 6 to 8 minutes per side, brushing occasionally with reserved marinade. An instant-read thermometer inserted into the center should read 150 degrees F (65 degrees C). Remove steak to a cutting board and rest meat 5 minutes before slicing thinly across the grain.
