8 corn tortillas or tostada shells
3 medium tomatoes (diced)
4 medium avocados (diced)
3 tbsp red onion (finely chopped)
1/4 cup cilantro (finely chopped)
1 tsp ground cumin
1 tsp chili powder
3/4 tsp salt
Juice of 1 lime
15 oz can low sodium black beans (drained and rinsed)
3 cups shredded chicken (like rotisserie or chicken breast)
1/2 cup feta or Cotija cheese (crumbled)
Cooking spray (I use Misto)

Steps:

  • Line a large baking sheet with a silicone mat and place tortillas in a single layer. Spray both sides of the tortillas with cooking spray and a sprinkle of salt. Bake at 400 degrees F for 6 minutes per side.
  • Mix tomato, avocado, red onion, cilantro, cumin, chili powder, salt and lime juice.
  • Top each shell with guacamole salsa, beans, chicken and cheese.

4 cups low-fat, low-sodium chicken broth
1 pound fresh or completely thawed turkey breast, trimmed of all visible fat
1 tablespoon extra-virgin olive oil
1/4 cup chopped onions
1/4 cup chopped celery
Salt
Freshly ground black pepper
1 1/2 teaspoons poultry seasoning, such as Spice Hunter
4 ounces cubed stale 100% whole-wheat bread
1 tablespoon chopped fresh flat-leaf parsley
4 1/2 teaspoons cornstarch
1/2 cup no-sugar-added cranberry sauce, such as Steel's Gourmet Agave

Steps:

  • In a medium pot with a candy thermometer or deep-fry thermometer attached, heat the broth. When the liquid reaches 165 degrees F, with barely any bubbles reaching the surface, add the turkey. Adjust the heat, if necessary, to keep the temperature at 165 degrees F. Using foil, cover the pot around the thermometer and poach the turkey until the internal temperature of the turkey reaches 150 degrees F, about 30 to 40 minutes. Turn off the heat and let the turkey rest in the poaching liquid for an additional 15 to 20 minutes.
  • Meanwhile, heat a large nonstick pan over medium heat. When hot, add the olive oil. Add the onions and celery and cook until the vegetables are soft, about 5 minutes. Season with salt and pepper to taste. Add the poultry seasoning and bread. Stir to combine. Lower the heat to low and add the poaching liquid, 1/2 cup at a time (about 1 cup total), to the pan to moisten the bread. Stir well, and then cover. Cook until the bread is moist and hot, about 5 minutes. Stir in the parsley and season with salt and pepper to taste. Set aside.
  • Remove the thermometer from the pot and bring the poaching liquid up to a simmer. In a small bowl, add the cornstarch. Whisk in about 1/2 cup of the poaching liquid, and then pour the mixture back in to the pot. Turn up the heat so that the liquid boils. Turn down the heat and simmer until the liquid thickens and reduces in volume by a third, about 10 minutes. If the liquid is too thin, mix more cornstarch with some liquid from the pot and stir it back into the simmering gravy. Season with salt and pepper to taste.
  • Slice the turkey breast as thinly as possible. Serve with the stuffing, gravy and cranberry sauce.

  • English Muffin Pizza. It takes no more than two minutes to take pretty much any form of bread (French bread, a bagel, or an English muffin are the most common), spread on some tomato sauce, and add any cheese or toppings you'd like.
  • 'Fancy' Ramen. Simmer some bouillon or broth on the stove and add leftover spaghetti, cooked noodles from the dining hall, or even some instant stovetop ramen.
  • Hummus Bowl. I love this Mediterranean place near campus called Naf Naf Grill. Some days, my Naf Naf cravings become even stronger than my Chipotle cravings.
  • Cheesy Eggs in a Skillet. I firmly believe that we should all attempt to erase the "breakfast food" stigma behind eggs. Eggs are loaded with protein and make the perfect dinner for a long night of studying ahead.
  • Spicy Quesadilla. Quesadillas are a two-ingredient classic. All you need is a tortilla and some cheese. Add your cheese in between two tortillas (or one tortilla folded in half) and cook over medium heat.

  • Salt and pepper both sides of the raw turkey breast and place the turkey breast in the center of the prepared dish. Pour the cranberries around the turkey and place the thyme sprigs on top of that. Sprinkle a little salt on top of the cranberries.
  • Put the dish in the oven and bake for 40 minutes. Halfway through, remove the turkey from the oven, brush a little olive oil on top of the turkey, and return the dish to the oven.
  • While the turkey is cooking, peel and dice the sweet potatoes. Add the sweet potatoes to a small pot and add water until the potatoes are covered. Cook up the sweet potatoes over medium heat until tender. Transfer the cooked sweet potatoes to a small microwavable bowl. Sprinkle the brown sugar over the top and microwave in 30 second increments until the brown sugar has melted, stirring well each time. Remove from microwave when sweet potatoes are covered in brown sugar sauce.
