This Five Ingredient Caprese Chicken is super fast and only uses pantry staples. It's healthy, gluten-free and kid-friendly.

3 chicken breasts
2 roma tomatoes
1 cup shredded mozzarella cheese (or goat cheese)
1/2 cup balsamic syrup
1/2 cup basil

Steps:

  • Start by pounding your chicken breasts thin between two pieces of plastic wrap. Trim off any fat.
  • Heat a nonstick skillet over medium-high.
  • Salt and pepper chicken breasts on both sides and place in hot skillet. Cook for about 4 minutes per side depending on how thick they are. You want to get some good browning on each side.
  • When chicken is cooked through drizzle with the balsamic syrup, top with the mozzarella and tomato. Turn off heat, put lid on and let the cheese melt for a minute of two.
  • Top with shredded Basil.
  • Serve with more balsamic syrup if desired.

As I'm a fudge fanatic but also a failure when it comes to making it this sounds right up my alley. There are several other recipes similar on here but they all seem to include peanut butter and this doesn't. Prep time does not include chilling

1 1/2 teaspoons butter, divided
1 tablespoon butter, divided
2 cups semi-sweet chocolate chips
14 ounces sweetened condensed milk
1 teaspoon vanilla extract
1 1/4 teaspoons confectioners' sugar
1/2 teaspoon pumpkin pie spice
1/4 teaspoon baking cocoa

Steps:

  • Line a 9" square pan with foil; frease foil with 1 1/2 tesp butter.
  • In large microwave safe bowl, melt chocolate chips and remaining butter, stirring after 1 minute and every 30 seconds thereafter.
  • Stir in milk and vanilla.
  • Spread into pan.
  • Refrigerate until firm.
  • Lift fudge out of pan. Remove foil; cut into 1 inch squares.
  • Stor in refrigerator.
  • TOPPING:.
  • This is optional.
  • Mix confectioners sugar, pumpkin pie spice and cocoa and sprinkle on top of fudge.
