Lemon butter baked fish is the perfect, easy sheet pan dinner recipe. Baked with asparagus and a delicious lemon butter sauce.

800 g/1,7lbs White fish, boned ((Approximately 200g/7oz per person))
3 tbsp butter
4 garlic cloves (crushed)
3 tbsp fresh lemon juice
2 tsp dried oregano/thyme
salt and pepper (to taste)
asparagus (washed and trimmed)

Steps:

  • Pre-heat the oven to 200ºC/400ºF and line a sheet pan with parchment/baking paper.
  • Combine the butter, lemon, garlic and herbs in a saucepan and bring to a simmer. Cook for 2-3 minutes until fragrant then remove from the heat and set aside to cool slightly.
  • Place the fish and asparagus onto the lined sheet pan then season with salt and pepper.
  • Pour the lemon butter sauce over the fish and asparagus and top the fish with lemon slices (optional).
  • Place in the oven and bake for 10-12 minutes or until the fish and asparagus are cooked. Fish is cooked when it flakes easily and the flesh is opaque, white throughout.
  • Remove from the oven and serve.

This easy lemon garlic sauce only takes 15 minutes to make, and is the perfect accompaniment for fish and seafood. A healthier version of the traditional recipe.

1/2 cup chicken stock
1/2 cup milk
1 tablespoon butter
1 tablespoon all-purpose flour
3 garlic cloves
3 lemons ((juice only))
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon apple cider vinegar
1/2 teaspoon dried parsley

Steps:

  • Melt butter in a pot on the stove top over medium heat.
  • Add flour. Quickly whisk the flour and butter together to form a paste, and cook this for a few seconds while stirring.
  • Combine milk and chicken stock, and pour a splash of the liquid into the pot. Whisk until the liquid is incorporated into the flour paste, then add a little more. Continue to gradually add liquid until the sauce has an even, smooth consistency.
  • Add very finely diced garlic, apple cider vinegar and seasoning to the sauce, and keep whisking. The sauce will gradually thicken. Add additional seasoning, and lemon juice to taste. I like to squeeze half a lemon at a time, and then check to see if more is needed. Serve the sauce immediately.

I made this lemon sauce a few days ago for some halibut I pan fried. I thought it came out pretty tasty, so I thought I'd share.

1 head garlic (approx 9 cloves)
2 tablespoons butter
2 teaspoons flour
2 tablespoons lemon juice
1/4 cup milk

Steps:

  • When I originally wrote this recipe, I really didn't think about the garlic much. I was using peeled garlic. If you use a head of garlic, do yourself a favor: Cut the head in half across the grain, and either use a garlic roaster, or wrap the head in foil tightly and bake for an hour at 250; That will loosen the cloves, and roasting will impart more flavor. Just squeeze each clove into the pan. OR (original instruction) mince the garlic until it's very fine.
  • Melt the butter in a small pan.
  • Add the minced garlic. brown the mixture.
  • Add the flour and whisk to form a roux.
  • Add the lemon juice and milk. Continue whisking until the sauce is smooth.
  • Hey! you're done! Pour a bit over your fish and enjoy!

1/2 cup dry white wine
2 shallots, minced
2 garlic cloves, crushed and finely chopped
1/4 cup unsalted butter, room temperature
1 teaspoon fresh parsley, finely chopped
2 (8 ounce) white fish fillets
2 tablespoons extra virgin olive oil
1 teaspoon salt
1/2 teaspoon ground black pepper

Steps:

  • In a small pot, whisk together white wine, shallots and garlic.
  • Cook over high heat until reduced to half. Remove from heat, cool slightly. When mixture is warm, cut in butter and whisk together. Add parsley and season with salt and pepper.
  • Cover with plastic wrap and refrigerate for at least 30 minutes. Bring to room temperature before grill them. Heat grill over high heat.
  • Brush fillets with olive oil and season with salt and pepper. Grill fish for 4 minutes per side, or until golden brown and fish flakes easily with a fork.
  • Place fish in plates and top with the butter sauce. Serve immediately over warm pasta or with shrimp instead of fish, if you prefer.

1/4 cup all-purpose flour
salt and pepper
1/4 cup butter
2 tablespoons lemon juice
1 teaspoon lemon zest

  • Combine the flour, salt and pepper. Coat the fish in the seasoned flour, shaking off the excess flour. Heat half the butter to foaming over medium high heat in a heavy based pan.

1/2 cup lemon juice
2 tablespoons minced garlic
1 tablespoon shallot, minced

Steps:

  • LEMON BUTTER SAUCE: Heat a large skillet over high heat. Add the wine, lemon juice, garlic, and shallots. Cook for 3 minutes.
  • Stir in the salt, pepper, Worcestershire, and hot sauce and simmer until the mixture is somewhat syrupy, about 3 minutes.
  • Stir in the cream and cook for 1 minute. Over low heat, whisk in the butter a few pats at a time. Continue whisking until all of the butter is incorporated into the sauce. Serve immediately or keep warm until ready to use.
  • FISH: Mix fish spice blend ingredients together. Season both the fish and flour with spices and dredge the fish in the seasoned flour or panko/almond mixture, coating completely.
  • In a large saute pan, heat the olive oil. Add the fish to the saute pan, pan-frying for about 4 minutes on each side.
  • SERVE: Drizzle some lemon butter sauce on each plate. Top with fish and drizzle more sauce over top of fish. Top with fresh parsley.

  • Rinse the parsley and remove as much water as possible by shaking into the sink (hold onto the stems). Pull the leaves from the stems and place them in the food chopper or processor. Cut the lemon in half and add the juice and zest from one half into the food chopper. Save the other half of the lemon for garnish. Also add the garlic, olive oil, salt and pepper.   • Place the fish fillets in the hot grill, close the lid and set the timer for 2 minutes. Check the fish after two minutes. If you want the fish more browned, cook for one additional minute. Carefully remove the fish from the grill (it will be delicate). Serve with additional slices of lemon if desired.
