FISH TACOS WITH ROASTED TOMATILLO SALSA

- Preheat the oven to 350 degrees F.
- Wrap the tortillas in aluminum foil and place in the oven until soft and pliant, about 12 minutes. Remove and keep wrapped until ready to use.
- In a large pot or deep fryer, heat the oil to 350 degrees F over high heat.
- In a large bowl, beat the egg with the milk and water. Add the flour, Essence, and baking powder, and whisk to make a thin batter. Dip the fish in the batter, turning to coat, and shake to remove any excess. Fry in batches in the oil until golden and crisp, about 1 1/2 to 2 minutes. Remove, drain on paper towels, and season lightly with the Essence. In a large bowl, mix the cabbage with the sour cream, lime juice and cumin, tossing to coat.
- To serve, place 1 or 2 pieces of the fish inside each tortilla and top with some of the shredded cabbage. Squeeze with lime juice, and top with salsa to taste. Garnish with cilantro and serve immediately.
- Preheat the oven to 400 degrees F.
- Place the tomatillos, garlic and onion on a baking sheet. Drizzle the vegetables with the olive oil. Season with salt and pepper. Roast the vegetables in the oven until browned and softened, about 15 to 20 minutes. Remove the vegetables from the oven and place the tomatillos and onion in a food processor. Squeeze the garlic cloves out of their peels into the food processor. Add the jalapeno, juice of 1 lemon and lime to the vegetables. Pulse until the mixture is fully incorporated but not pureed. Season the salsa with salt and pepper, to taste, and set aside.
WATERMELON SALSA
Steps:
- Stir together the lime zest, lime juice, sugar and 3/4 teaspoon pepper in a bowl. Add the watermelon, cucumber, mango, jalapeno, onion and basil and toss gently. Chill the salsa until ready to serve.
- Add the garlic salt just before serving. Serve with chips.

Steps:
- Make fruit salsa first.
- In a large bowl, mix the jalapeno jelly, lime juice, and oil. Chop, dice, mince all fresh fruit, onion, jalapeno, and cilantro and put into the same large bowl. Stir gently and refrigerate until ready to eat.
- Next make sauce:
- Place all ingredients into a medium bowl and stir to blend. Place in refrigerator to chill.
- Both fruit salsa and sauce can be made ahead.
- Place fish on large platter and drizzle with lemon or lime juice. Sprinkle with taco seasoning.
- Place flour tortillas in foil and warm in the oven at 350 deg. for 10 minute.
- Either on the stove top or BBQ, cook the fish until it flakes.
- Fill tortillas with chunks of fish, cabbage, toppings, sauce and top with fruit salsa.
- Enjoy and eat quickly.

- In a shallow dish, mix the fish with the lime zest and juice, honey and olive oil. Cover and leave to marinate for 30 mins in the fridge. In a small bowl, mix together the spices and sugar with a little salt. Remove the fish, and skewer it onto wooden or metal skewers. If using wooden skewers, soak them in water for 10 mins first. Dust with the spices and seasoning. Chill until ready to cook.
- Next, make the salsa. Put the red onion in a bowl, cover with the lime juice and let sit for 5 mins. Add the remaining salsa ingredients and season. In another bowl, mix together the ingredients for the chilli cream and season.
- Heat the barbecue or griddle. Cook the fish for 2-3 mins each side on direct heat until grill marks appear and it feels firm. Serve the fish with warm corn tortillas, cabbage, radishes, the chilli cream, mango salsa, extra chipotle sauce, Tabasco or other hot sauce and lime wedges for squeezing over.

- Start by making the watermelon salsa. Add all the ingredients to a medium bowl and stir to combine.
- Preheat a large skillet over medium-high heat. Season the fish with the cumin, garlic powder, chili powder, salt and pepper. Add the seasoned fish, top side down first and cook for 4 minutes. Turn the fish over and cook another 4-5 minutes until the fish is opaque.

- In a medium bowl, combine the watermelon, avocado, onion, lime juice, zest, lemon juice, jalapeno and cilantro. Toss with the 1 tablespoon olive oil and ¼ teaspoon salt and set aside.
- Prepare a pan or grill to cook the fish. If using the grill, preheat to high and coat the fish on both sides with the remaining oil. If using a pan, heat the remaining oil over medium heat.
- Sprinkle the fish with Dr. Hyman’s Special Seasoning and remaining salt. Cook the fish until opaque inside, about 5 minutes per side. When the fish reaches an internal temperature of 145 degrees, remove from heat and set aside to cool for about 5 minutes or until no longer hot, but still warm to the touch. Using a fork, break into big pieces.
- To serve, place two lettuce leaves on top of each other to make a sturdy base for the fish. Place about ¼ cup of fish on each lettuce wrap, top with a couple tablespoons salsa.
