GRILLED TUNA BURGERS WITH SPICY MAYO



Grilled Tuna Burgers with Spicy Mayo image

1 tablespoon toasted sesame oil
1 tablespoon low-sodium soy sauce
1/4 teaspoon crushed red pepper flakes
1 egg, lightly beaten
1 pound sushi-grade tuna, finely diced
1/4 cup finely diced red bell pepper
2 scallions, finely sliced
Kosher salt and freshly ground black pepper
1/2 cup panko breadcrumbs
Vegetable oil, for cooking
4 seeded hamburger buns, split
Spicy Sriracha Mayo, recipe follows
4 medium butter lettuce leaves
1 beefsteak or heirloom tomato, sliced
Dry Riesling, for serving
1 cup mayonnaise
1/2 cup sour cream
1 1/2 tablespoons Sriracha
1 teaspoon lemon juice
1 teaspoon honey
4 grilled scallions, chopped
Kosher salt and freshly ground black pepper

Steps:

  • Add the sesame oil, soy sauce, red pepper flakes and egg to a large mixing bowl. Mix well, then fold in the tuna, red bell pepper and scallions. Mix well to coat everything evenly. Sprinkle with salt and fold in the panko breadcrumbs to lightly bind everything. Carefully form the mixture into 4 even-size patties and set on a platter. Refrigerate so the patties firm up and hold their shape when cooked, 15 to 20 minutes.
  • Heat a large nonstick skillet over high heat. Coat the pan with a little vegetable oil and cook the tuna patties 3 minutes per side (when done, the patties will be browned on the outside and medium-rare in the center).
  • Grill the hamburger buns over high heat until well charred and crispy.
  • Serve the tuna burgers slathered with the Spicy Sriracha Mayo, lettuce leaves and tomato slices on the toasted, seeded hamburger buns, paired with the dry Riesling.
  • Combine the mayonnaise, sour cream, Sriracha, sesame oil, lemon juice, honey and scallions in a large mixing bowl. Stir well to combine, season with salt and pepper and place in the refrigerator until ready to serve.

1 egg
⅔ cup quick-cooking oats
3 tablespoons barbeque sauce
3 tablespoons chopped green onion
½ teaspoon hot pepper sauce, or to taste
½ teaspoon dried savory
1 pinch salt
2 tablespoons vegetable oil

Steps:

  • In a medium bowl, stir together the tuna, egg and oats until blended. Mix in the barbeque sauce, green onion, hot pepper sauce, savory, and salt.
  • Heat the oil in a large skillet over medium heat. Spoon tablespoonfuls of the tuna mixture into the pan, and flatten slightly. Smaller patties hold together better. Cook until browned on each side, about 3 minutes per side.

1 cup flour
1 can tuna, drained and flaked
1 teaspoon baking powder
1/2 teaspoon salt
onion flakes, dried
2 eggs
oil (for frying)
1/4 cup milk

Steps:

  • Sift flour, baking powder and salt into a mixing bowl.
  • Beat the eggs well.
  • Beat in milk.
  • Combine liquid ingredients with dry ingredients.
  • Stir until all flour is moistened.
  • Stir in the tuna.
  • Drop by teaspoonfuls into hot oil, 375 degrees.
  • Fry until golden on all sides.
  • Drain on paper towels.

The mind boggled when I saw this recipe in a CHURCH cookbook... I thought "revolting" so why was I compelled to try it and why am I posting it here? For privacy reasons I will generalize to keep the church & location confidential but think in terms of the area in which you live. Imagine the oldest church in YOUR area having this recipe in its cookbook which was prepared under the guidance of 15 women in the church: all with prominent names in social and political circles spanning generations. WOULD these women include a terrible recipe? Would any of them LIE to you about its being worthy of making? HMMMMM... suffice it for me to say I'm not sure I'd declare it really tastes like pork! However, I will say that IF anyone served this BBQ does NOT know it has tuna in it, I suspect most will not guess tuna as the first guess. In fact, this IS fairly tasty IF you can get past the fact that TUNA is the basic ingredient! Are you brave enough to try? It is low cal, low fat, high protein, and diabetic friendly! (The book was old enough that I did have to tweak the ingredients because tuna is no longer in 6+ ounce cans.)

2 (5 ounce) cans chunk tuna, in-water & well-drained (original recipe did not call for draining liquid)
4 (1 g) packages sugar substitute (brand of choice)
3 tablespoons wine vinegar (I used Red WV)
3 tablespoons Worcestershire sauce (I used L&P)
3 tablespoons prepared yellow mustard (French's)
3 tablespoons dried onion flakes
1/4 teaspoon chili powder
1/4 teaspoon liquid smoke (hickory... optional, my addition)
1/2 cup water (my addition to replace liquid drained off tuna)

Steps:

  • Open tuna cans, cutting fully around, and expel as much liquid as possible while pressing down upon lid very hard! (Necessary IF you want to improve odds that tuna will not be suspected.).
  • Combine ALL ingredients in a small saucepan and stir well to blend completely.
  • Bring to a boil over medium heat while stirring; then immedialely reduce to a low simmer for a few minutes. Keep stirring to prevent scorching!
  • Remove from heat and allow to rest a few minutes to assure onions rehydrate before serving.
  • Makes enough moist, not wet, BBQ for 3-4 sandwiches; serve on buns as any other BBQ.
  • I recommend using additional Carolina Style Mustard BBQ Sauce to moisten the Tuna BBQ to a preferred consistency more moist than this basic recipe. I'm partial to my own Caroline Style Mustard BBQ Sauce(Recipe #446238) -- a take off of Mike Mills' Mustard BBQ Sauce.

Make these easy tuna, sweetcorn and spring onion fritters for a family-friendly meal. They're versatile and can be served for brunch, lunch or dinner

125ml milk
3 eggs, beaten
150g self-raising flour
300g frozen sweetcorn, defrosted (or use cooked fresh corn)
½ bunch of spring onions, trimmed and thinly sliced
1 lemon, zested and cut into wedges
2 x 112g cans tuna, drained and roughly flaked
sunflower or vegetable oil, for frying
100g soured cream
hot sauce, to serve (optional)

Steps:

  • Mix the milk and eggs together in a jug with ½ tsp salt and ¼ tsp ground black pepper. Sift the flour into a bowl, make a well in the centre and pour in the egg mixture in a thin, steady stream, whisking well until combined. Stir in the sweetcorn, spring onions, lemon zest and tuna.
  • Heat a drop of oil in a non-stick or cast iron frying pan over a medium heat. Drop spoonfuls of the batter into the pan and cook until crisp and golden, about 2-3 mins, flip and repeat on the other side (you'll need to do this in batches). Keep warm in a low oven and repeat with the remaining batter.
  • Serve the hot fritters with the lemon wedges for squeezing over, the soured cream and hot sauce, if using.
