SHRIMP FAJITAS



Shrimp Fajitas image

Sizzling shrimp fajitas are a favorite of my family's. I prefer flour tortillas, husband likes corn. Use whatever suits you.

1 1/4 lbs medium shrimp, peeled and deveined
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon pure chile powder
1/2 teaspoon chopped oregano
1/4 teaspoon garlic powder
1 lime, juice of
8 -12 flour tortillas or 8 -12 soft corn tortillas, warmed
2 tablespoons vegetable oil
6 green onions, cut into thirds
2 green bell peppers, cut into 1/3 inch strips
sour cream
chopped fresh cilantro
minced red onion

Steps:

  • Add shrimp, salt, cumin, chile powder, oregano, garlic, lime juice to a large bowl or heavy duty zip-top plastic bag.
  • Toss until spices are distributed and shrimp is well coated.
  • Let marinate for 10 minutes.
  • Heat oil in a large skillet (cast-iron is best).
  • Add the green onions and peppers; cook and stir occasionally 2 minutes or until slightly softened.
  • Add the shrimp and marinade; cook and stir constantly about 3 minutes or until the shrimp are pink.
  • Spoon shrimp and vegetables into warmed tortillas; garnish with sour cream, cilantro and onion if desired.
  • Fold up and eat.

Get the kids involved at dinner time with these mildly spiced fish fajitas served in tortillas with their choice of avocado, peppers, cheese and soured cream

1 egg , beaten
100g breadcrumbs , made from day-old bread
3 tsp fajita seasoning (we used Santa Maria)
oil , for greasing
400g haddock fillets, cut into chunky strips
4 spring onions , finely sliced
1 yellow pepper , sliced
1 red pepper , sliced
2 ripe avocados
1 ripe tomato , diced
1 lime
1 x pack flour tortillas
grated cheese and soured cream, to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6.
  • Put the beaten egg into a shallow bowl. Tip the breadcrumbs onto a plate. Mix the fajita seasoning into the breadcrumbs.
  • Brush a non-stick baking sheet with oil. Dip the fish strips into the egg, then coat them with the breadcrumbs. Transfer to the oven.
  • Meanwhile, put the spring onions and peppers on a baking tray and turn them through a small amount of oil. When the fish has been in the oven for 5 mins, put the onions and peppers in. Bake for a further 10 mins until the fish fingers are golden.
  • Mash the avocados with a fork and stir through the diced tomato, lime juice and some black pepper. Get the other accompaniments ready in bowls.
  • Warm the tortillas for 15-30 secs in the microwave, or you can warm them through on a plate in the oven for a few mins.
  • Place all the food in dishes on the table and let everyone dig in!

12 ounces red snapper fillets, all bones removed, cut crosswise into 1/3-inch-think strips
3/4 cup diced fresh pineapple
4 6-inch-diameter flour tortillas
2 cups grated mozzarella cheese
1/2 cup chopped fresh cilantro
2 tablespoons olive oil
1/2 red bell pepper, thinly sliced
1/2 green bell pepper, thinly sliced
1/2 onion, thinly sliced
Fresh line wedges
Sour cream

Steps:

  • Combine fish and pineapple in medium bowl; season with salt and pepper. Marinate 30 minutes, tossing occasionally.
  • Preheat oven to 375°F. Arrange tortillas on heavy large baking sheet. Top with cheese and cilantro, dividing equally. Bake until cheese melts, about 8 minutes. Transfer tortillas to plates.
  • Meanwhile, heat oil in large skillet over high heat. Add peppers and onion; sauté until beginning to soften, about 5 minutes. Add fish mixture; sauté until just cooked through, about 2 minutes. Spoon mixture on top of tortillas, dividing equally. Serve with lime wedges and sour cream.

Mahi mahi, onions, and bell peppers are cooked on a sheet pan with fajita spices. It's a tasty and easy weeknight meal that can be served in tortillas or over rice with your favorite toppings like tomatoes, sour cream, and avocado.

3 tablespoons olive oil
2 tablespoons lemon juice
2 teaspoons chili powder
1 teaspoon ground cumin
½ teaspoon onion powder
½ teaspoon garlic salt
⅛ teaspoon black pepper
1 pinch cayenne pepper, or to taste
2 medium bell peppers, sliced
1 large white onion, sliced
4 (4 ounce) mahi mahi fillets, cut into 1-inch slices

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a large baking sheet with parchment paper.
  • Stir olive oil, lemon juice, chili powder, cumin, onion powder, garlic salt, black pepper, and cayenne together in a bowl.
  • Spread bell peppers and onion on the prepared sheet pan. Pour 1/2 the marinade over vegetables; toss until well coated.
  • Roast vegetables in the preheated oven for 10 minutes.
  • While vegetables are cooking, place mahi mahi in a bowl and cover with remaining marinade; toss until well coated. Let sit for 10 minutes.
  • Remove vegetables from the oven and set mahi mahi pieces on top. Return to the oven and cook until fish is cooked through and flakes easily with a fork, about 12 more minutes.
