Steps:
- Preheat the oven to 400 degrees.
- Heat the oil & saute the onion but do not let it brown. Add the rice to the pan & cook for 2 minutes or until the rice becomes translucent.
- Place the rice, water, chicken stock, & spices in an ovenproof casserole dish. Cook uncovered for 20 minutes or until all the liquid is absorbed.
- Heat the tomato sauce & harissa in a pan, add salt & pepper if needed. Serve the rice mixed with the spicy tomato sauce.
EGYPTIAN RICE
When my daughter was younger we used to do a little thing called dinner around the world. I found this recipe online while we were researching Egypt (hence the name). We've been making this now for a few years and everytime we make it for a gathering I end up having to pass out the recipe. Kids really love this dish too.

Steps:
- In a large skillet or saucepan, brown ground beef and onions.
- Drain grease and add mushrooms, consommé, soy sauce, Worcestershire sauce and rice.
- Bring to a boil and reduce heat to medium-high. Cook about 20-30 minutes until rice is done and all of the liquid is gone.

Steps:
- Rinse the rice under running water thoroughly and set aside in a colander to drain.
- Heat the oil in a heavy saucepan. When the oil is hot, add the rice and fry it until each grain is coated with oil.
- Add the water and salt to taste and stir.
- Cook, uncovered, over moderate heat until the water is absorbed.
- Cover, reduce heat to low, and cook for 30 minutes more.
- Spoon the top layer of rice into a bowl.
- Remove the browned layer with a spatula, break into pieces and serve alongside the rice.
EGYPTIAN RICE WITH VERMICELLI
In Arabic, this is called roz bil sha'areyyah. Tasty and rich, would be great with a simple lamb or chicken dish. This is my adaptation of a Claudia Roden recipe.

Steps:
- Break the vermicelli into 1-inch pieces (or use an Arab or Indian brand that is already broken up).
- In a wide non-stick skillet, saute onion in oil till translucent, and remove from pan.
- Saute vermicelli pieces in leftover oil till golden (this happens mroe quickly than you expect it to).
- Add onions back to pan and add rice; stir to combine.
- Pour in boiling stock, stir.
- Cook over very low heat for about 20 minutes.
- This time will vary depending on the age and type of rice you use.
- If desired, stir in a pat of butter before serving.
