VEGGIE SALISBURY STEAK

Steps:
- Spray 12-inch nonstick skillet with nonstick cooking spray. Heat over medium-high heat until hot. Add beef patties; sprinkle with peppered seasoned salt. Cook 3 to 5 minutes or until browned on both sides, turning once.
- In medium bowl, combine all remaining ingredients; mix well. Add to skillet; bring to a boil. Reduce heat to medium-low; cover and simmer 10 to 12 minutes or until beef is thoroughly cooked and vegetables are tender, stirring and turning patties once or twice. If desired, serve with mashed potatoes.

Steps:
- Slice one onion half and set aside. Mince the remaining onion half and place in a large mixing bowl.
- Add ground beef substitute, bread crumbs, egg, 1/2 of the garlic powder, salt, and pepper to the minced onion. Mix by hand until thoroughly combined. Divide into 4 equal patties.
- Heat 1/2 of the olive oil in a skillet over medium-high heat. Add patties and brown, 2 to 3 minutes per side. Remove patties to a plate.
- Add remaining olive oil, reserved onion slices, and mushrooms to the skillet. Cook and stir until onion begins to turn translucent, about 5 minutes.
- Add 1 3/4 cups vegetable broth, ketchup, Worcestershire sauce, and remaining garlic powder; stir to combine and season with salt and pepper. Return patties to the pan, reduce heat, and simmer until patties are no longer pink in the center, about 10 minutes.
- Remove patties and plate them. Mix cornstarch and 2 tablespoons vegetable broth into a slurry; add slurry to the skillet. Cook and stir until sauce is thickened, 2 to 3 minutes. Ladle hot sauce over cooked patties.

SALISBURY STEAKS
I make this often for my family - it is one of our favorite meals. I got the recipe from Betty Crocker. It is great served with mashed potatoes and corn.

- Mix ground beef, bread crumbs, salt, pepper and egg; shape into 4 oval patties, each about 3/4-inch thick.
- Cook patties in 10-inch skillet over medium heat, turning occasionally, until brown, about 10 minutes.
- Drain.
- Add onion, broth and mushrooms. Heat to boiling; reduce heat. Cover and simmer until beef is done, about 10 minutes. (I usually start boiling the water for homemade mashed potatoes at this time and the steaks will be ready by the time you get the mashed potatoes ready).
- When patties are done, remove them from skillet. Keep warm.
- Heat onion mixture to boiling. Mix water and cornstarch; stir into onion mixture. Boil and stir 1 minute.
- Serve over patties and mashed potatoes.
SALISBURY STEAKS WITH VEGETABLE SAUCE

- To make the meat mixture, heat the oil in a saucepan. When hot, add the onion and celery and cook for 4 to 5 minutes over medium heat, until they are softened slightly. Set aside.
- Preheat oven to 400 degrees.
- Core but do not peel the apples. Cut them into a 1/2-inch pieces. (You should have about 2 cups.) Add to the onion and celery mixture and set aside.
- Place the meat in a large bowl. Add the onion-celery-apple mixture to it and mix in with the eggs, garlic, salt and pepper.
- For the bread crumbs, tear the slices of bread into large pieces and place in the bowl of a food processor. Process until crumbed. You should have 1 1/2 cups. Add to the meat mixture and mix well to incorporate.
- Dampen your hands with water and form the mixture into 6 large patties, each weighing approximately 1/2-pound. Arrange in a large roasting pan so there is a little space between the "steaks," and place in the oven for 20 minutes.
- Meanwhile, make the sauce: Coarsely chop the peeled carrots and onion in a food processor or by hand (to yield a 2-cup mixture). Place in a saucepan with 2 cups of water, the soy sauce, pepper, tomato paste, Tabasco and salt. Bring to a boil, reduce the heat, and boil gently for 5 minutes.
- When the steaks have cooked for 20 minutes, remove from the oven. They will probably stick to the bottom of the pan so you can incline the pan and pour out most of the accumulated fat around them. Spoon the sauce over and around the steaks and place them back in the oven for 10 minutes. Set aside until ready to serve.

- Add the beans, 1 egg, salt, pepper, parsley, green onions and mushrooms to a large bowl. Use a potato masher or a fork to make a chunky paste of everything, taking care to leave some beans whole. Place the bowl in the fridge.
- Preheat a large skillet with the olive oil over medium. Meanwhile, grab 3 small bowls. Add the flour to one, the panko to another, and the egg to the last (add a tablespoon of water and beat the egg). Season the flour and panko with more salt and pepper if you want.
- Pull the bean mixture out of the fridge. Divide it into four, and make patties that are about 1/2 inch thick. Dredge each into the flour (coating both sides lightly), then the egg, then back in the flour for a final light coating.
- Cook the "steaks" in the preheated skillet for about 8 minutes, turning them halfway. Once they're golden brown on both sides, remove them to a plate to rest while you make the gravy.

- Combine the lentils and 2 1/4 cups of water in a medium pot. Bring to a boil, then partially cover and reduce to a simmer. Cook for 20-25 minutes, or until lentils are tender, but not mushy. Drain and set aside to cool.
- Process the oats in the small bowl of a food processor until they're finely chopped—they should be almost the consistency of flour, but not quite. Transfer to a small bowl.
