1 tablespoon olive oil
1 medium onion (chopped)
2 cups mushrooms (sliced)
1/2 cup celery (sliced)
3 cloves garlic (minced)
1/2 cup white wine
1 1/2 cups fish stock or water
3 medium potatoes (peeled and diced)
1 medium potato (peeled and grated)
1 bay leaf
1 teaspoon oregano
1 pound sole, cod or haddock fillets (500 grams, cut into chunks)
1½ cups corn niblets (frozen or canned)
1½ cups milk (500 mL, 2%)
2 tablespoons lemon juice (freshly squeezed)
salt and pepper to taste
1/4 cup Italian fresh leaf parsley (Italian fresh leaf ,chopped)

Steps:

  • Place a thick bottomed pot over medium-high heat.
  • Heat olive oil.
  • Sauté onions, mushrooms, and celery while stirring frequently for about 5 minutes or until the vegetables begin to soften.
  • Add the minced garlic and sauté for another minute or so.
  • Add the wine, fish stock (or water), the diced and grated potato, bay leaf and oregano.
  • Bring to a boil.
  • Cover, reduce heat and simmer for about 10 minutes or until potatoes are tender.
  • Add the fish, cover and simmer for 3-5 minutes or until the fish is opaque and flakes easily.
  • Add the corn and milk and heat through.
  • Discard bay leaf.
  • Season to taste with salt and pepper.
  • Just before serving add lemon juice and garnish with parsley

This chowder of root-cellar vegetables, clams and fish is one of the easiest and best things to cook for a weekend dinner with family and friends. Use a mixture of butter and the powdered dried seaweed called dulse as the flavored fat in which you sauté the vegetables before deglazing them, and each individual flavor in the resulting stew will pop - from carrot to leek, parsnip to potato, bacon to clam to scallop to fish. The seaweed is a powerful flavor enhancer. You can omit it if you want, but really, you shouldn't.

36 medium-size quahog clams, usually rated "top neck" or "cherrystone," scrubbed under cold water to remove sand and grit
2 tablespoons unsalted butter
1/4 pound thick-cut bacon, diced
2 tablespoons dulse flakes
2 leeks, tops removed, halved and cleaned, then sliced into half-moons
2 carrots, peeled and halved, then sliced into half-moons
2 parsnips, peeled and halved, then sliced into half-moons
2 medium-size all-purpose potatoes, like Yukon Gold, cubed
1 cup dry white wine
3 sprigs thyme
2 bay leaves
2 cups heavy cream
Freshly ground black pepper to taste
1 pound firm white fish fillets, like cod, tautog or sea bass, cut into fingers
1/2 pound sea scallops, sliced into coins if very large
1/4 cup chopped parsley

Steps:

  • Put the clams in a large, heavy Dutch oven, add about 4 cups water, then set over medium-high heat. Cover, and cook until clams have opened, approximately 10 to 15 minutes. (Clams that fail to open should be discarded.) Strain clam broth through a sieve lined with cheesecloth or doubled-up paper towels, and set aside. You should have 5 or 6 cups. Remove clams from shells, and set aside as well.
  • Rinse out the pot, and return it to the stove. Add 1 tablespoon of the butter, and turn heat to medium-low. Add bacon, and cook, stirring occasionally, until the fat has rendered and the pork has started to brown, approximately 5 to 7 minutes. Use a slotted spoon to remove pork from fat, and set aside.
  • Add the dulse and the leeks to the fat, and cook, stirring frequently, until the leeks are soft but not brown, about 10 minutes. Add the remaining 1 tablespoon butter, then stir in the carrots, parsnips, potatoes and wine, and continue cooking until wine has evaporated and the vegetables have just started to soften, approximately 5 to 7 minutes. Add enough clam broth to just cover them, approximately 4 to 5 cups, reserving the rest for another use. Add the thyme and the bay leaves.
  • Partly cover the pot, and simmer gently until vegetables are tender, approximately 10 to 15 minutes.
  • Meanwhile, chop the clams into bits about the size of the bacon dice. When the vegetables are tender, add the cream, and stir in the chopped clams and reserved bacon. Add black pepper to taste. Let come to a simmer. (Do not let chowder come to a full boil.) Remove the thyme and the bay leaves, and discard.
  • If serving right away, slip the fish fingers into the chowder, place the scallops on the surface and allow them all to cook into translucence in the heat, approximately 5-7 minutes. But chowder improves mightily if it sits overnight to cure. If you have the time, don't add the fish and scallops right away, but allow the chowder to chill in the refrigerator overnight, then reheat it to a bare simmer before adding and cooking them through. Season to taste with salt and pepper, and serve, garnished with the chopped parsley.

1 teaspoon hot sauce
1 1/2 cups tomato juice
1/4 teaspoon Worcestershire sauce
1 tablespoon Bermuda black rum or dark rum
1 teaspoon sherry peppers (a special Bermudan pepper-flavored sherry)
2 teaspoons butter
1 onion, chopped
2 stalks celery, chopped
1 chile pepper, seeded and chopped
2 tablespoons tomato paste
1 pound fresh grouper, cut into chunks
1 whole carrot, peeled and chopped
2 tomatoes, chopped
1 whole red pepper, chopped
1 tablespoon crushed red pepper flakes
1 large potato, peeled and chopped
Salt and freshly ground black pepper
2 cups fish stock or water

Steps:

  • In a large saucepan, melt the butter over high heat. Add the onion, celery, and chili pepper and saute until tender; stir in the tomato paste. Add the grouper and stir until the fish is coated. Mix in the carrot, tomatoes, red pepper, crushed red pepper flakes, potato, and salt and pepper. Reduce the heat to medium and add the fish stock, hot sauce, tomato juice, and Worcestershire sauce. Simmer over medium heat for 1 hour.
  • Serve in bowls and drizzle with rum and sherry peppers.

8 slices thick-cut applewood-smoked bacon, diced, plus more cooked, crumbled bacon for garnish, optional
3 stalks celery, sliced
1 large yellow onion, diced
3 cloves garlic, minced
4 tablespoons unsalted butter
1/4 cup all-purpose flour
4 cups seafood or vegetable stock
2 cups heavy cream
2 cups fresh or frozen corn kernels
1 pound russet potatoes, peeled and cut into large chunks
2 teaspoons smoked paprika
Kosher salt and freshly ground black pepper
2 pounds cod or other firm white fish, cut into bite-size pieces
Chopped fresh dill and chives, for garnish

Steps:

  • Place a large Dutch oven over medium heat. Add the bacon and cook until the fat begins to render but the bacon is still soft, about 5 minutes. Add the celery and onion and cook until the bacon is crisp and the vegetables are tender, about 5 minutes. Stir in the garlic.
  • Add the butter and flour and stir until combined. Cook until the flour is bubbly, about 2 minutes. Slowly add the stock and whisk until combined. Whisk in the heavy cream.
  • Add the corn, potatoes and paprika. Season with salt and pepper. Cover and cook over medium heat, stirring occasionally, until the potatoes are tender, about 15 minutes.
  • Add the fish to the Dutch oven. Reduce the heat to low, cover, and simmer until the fish flakes with a fork, 5 to 7 more minutes. Season with salt and pepper. Spoon into serving bowls and garnish with dill and chives. Sprinkle with additional crumbled bacon, if desired.

1 onion, chopped
1 carrot, chopped
2 potatoes, peeled and cubed
2 garlic cloves, minced
1/2 teaspoon salt

3 tablespoons all-purpose flour
4 cups chicken stock
1 cup milk
1 cup frozen corn kernels
400 g haddock fillets, cubed (You may use whatever type of white fish you like)
2 tablespoons fresh parsley, minced

Steps:

  • In a large saucepan, melt the butter over medium heat.
  • Fry the onion, carrot, potatoes, garlic, salt and pepper, stirring occasionally, until the onion is softened, about 5 minutes.
  • Sprinkle with the flour and cook, stirring, for 1 minute.
  • Add the chicken stock and bring to a boil.
  • Reduce the heat, cover, and simmer until the potatoes are tender, about 10 minutes.
  • Add the milk, corn and fish.
  • Heat until steaming and the fish flakes easily when tested, about 5 minutes.

2 tablespoons butter
2 cups chopped onion
4 fresh mushrooms, sliced
1 stalk celery, chopped
4 cups chicken stock
4 cups diced potatoes
2 pounds cod, diced into 1/2 inch cubes
1 cup clam juice
½ cup all-purpose flour
⅛ teaspoon Old Bay Seasoning TM, or to taste
salt to taste
ground black pepper to taste
2 (12 fluid ounce) cans evaporated milk
¼ cup cooked crumbled bacon

Steps:

  • In a large stockpot, melt 2 tablespoons butter over medium heat. Saute onions, mushrooms and celery in butter until tender.
  • Add chicken stock and potatoes; simmer for 10 minutes.
  • Add fish, and simmer another 10 minutes.
  • Mix together clam juice and flour until smooth; stir into soup and simmer for 1 minute more. Season to taste with Old Bay seasoning, salt, and pepper. Remove from heat, and stir in evaporated milk. Top each bowl with crumbled bacon, if desired.

2 tsp olive oil
2 leeks , finely sliced
550g potato , cut into small cubes
1l fish stock
1 lemon , zest only
300ml whole milk
330g can sweetcorn , rinsed and drained
250g skinless, boneless salmon , cut into chunks
250g skinless, boneless white fish , cut into chunks
handful chives , snipped with scissors
2 tbsp double cream (optional)

Steps:

  • Heat the oil in a large saucepan, tip in the leeks and fry gently for 5 mins until softened, but not coloured. Add the potatoes and cook for a further min. Pour in stock and lemon zest, cover and simmer for 12-15 mins or until the potatoes are tender. With a slotted spoon, remove half the potatoes and leeks from the stock and set aside.
  • Transfer the remaining potatoes, leeks, stock and milk into a blender or food processor and whizz until smooth. Pour back into the pan, add the sweetcorn, fish and reserved vegetables. Cover and gently heat for 3-4 mins until the fish is just cooked through - don't boil. Stir in chives and cream, if using, then season to taste.

  • Add salmon and simmer until opaque, about 3 minutes. Stir in cream to heat through. Stir in dill, 1/2 teaspoon salt, and 1/4 teaspoon white pepper. Chowder can be refrigerated for up to 2 days. Reheat before serving.
