FISH BAKED IN LETTUCE POCKETS



Fish Baked in Lettuce Pockets image

This low-fat, deliciously presented seafood dish is a keeper!

6 large lettuce leaves or 12 small lettuce leaves
1 medium carrot, shredded
1 small zucchini, shredded
1 1/2 pounds fresh or frozen (thawed) fish fillets, cut into 6 serving pieces
1 teaspoon dried marjoram leaves
Salt and pepper to taste
2 tablespoons butter or margarine

Steps:

  • Heat oven to 400°F. Place a few lettuce leaves at a time in hot water. Let stand 1 to 2 minutes or until wilted; drain.
  • Mound a portion of the carrot and zucchini near stem end of each lettuce leaf. Place 1 piece fish on vegetables. Sprinkle with marjoram, salt and pepper; dot with butter.
  • Fold lettuce leaf over fish; place seam side down in ungreased rectangular baking dish, 13x9x2 inches. (Vegetables should be on top of fish.) Cover and bake 25 to 30 minutes or until fish flakes easily with fork.

2 heads Boston lettuce
8 skinless, boneless fillets of flounder or sole
Salt to taste if desired
Freshly ground pepper to taste
5 tablespoons butter
2 tablespoons finely chopped shallots
1/2 cup dry white wine
1/2 cup heavy cream
Juice of half a lemon

Steps:

  • Preheat the oven to 450 degrees.
  • Remove the lettuce leaves from the core and drop them into a large quantity of boiling water. Let simmer about two minutes, drain in a colander and let cold water run over the leaves until they are thoroughly chilled. Drain well.
  • Open up the leaves on a flat surface.
  • Sprinkle the fillets with salt and pepper. Fold the fillets into thirds to make flat packets. Place each packet on an opened lettuce leaf. Cover with a second lettuce leaf and fold the edges of the leaves up and over to enclose the fish.
  • Rub a baking dish large enough to hold the fish in one layer with two tablespoons of the butter. Sprinkle the bottom with shallots. Arrange the lettuce-wrapped packages in the dish and pour in the wine. Sprinkle with salt and pepper. Bring the wine to a boil on top of the stove.
  • Place in the oven and bake 10 minutes.
  • Pour the liquid from the baking dish into a saucepan. Bring to a boil. Cook down over high heat to about one-third cup. Add the cream, salt and pepper. Bring to a boil.
  • Meanwhile transfer the packages to a serving dish and keep warm. As liquid accumulates around the packages, pour it into the sauce. Cook the sauce over high heat, stirring often, until reduced to slightly less than one cup. Swirl in the remaining three tablespoons of butter and the lemon juice. Heat briefly and pour the sauce over the fish packages. If desired, strain the sauce before reheating and pouring over the fish packages.

2 pounds grouper fish fillets
Cooking spray
Salt and pepper
1 lime
Hot sauce
Bib or green leaf lettuce leaves, for wrapping
1 jalapeno, seeded and chopped
1 cup cilantro leaves
3 sprigs fresh mint
3 tablespoons grainy mustard
2 tablespoons red wine vinegar
1/3 cup extra-virgin olive oil
1/2 red onion, finely chopped

Steps:

  • Heat grill pan or nonstick skillet over high heat. Spray the pan with cooking spray. Place fish on grill, season with salt and pepper and cook 5 minutes on each side, until opaque.
  • Arrange lettuce leaves on a platter. Place jalapeno in a food processor with cilantro, mint, mustard and vinegar. Turn processor on and stream in oil. Season sauce with salt and pepper.
  • Take the fish off grill and place on a serving plate. Break the fish into chunks and squeeze lime juice over fish. Add a few dashes hot sauce to the fish.
  • Pile fish in lettuce leaves and top with sauce and chopped red onions.

FISH FILLETS STEAMED IN LETTUCE LEAVES WITH LEMON-DILL SAUCE



Fish Fillets Steamed in Lettuce Leaves with Lemon-Dill Sauce image

1 1/2 to 2 pounds skinless halibut fillet
Salt and freshly ground white pepper
1 large head Bibb lettuce
1/4 cup very coarsely chopped fresh dill
6 (4-inch) sprigs fresh mint
4 tablespoons unsalted butter
1 small shallot, finely chopped (about 3 tablespoons)
1/2 teaspoon grated lemon zest
2 tablespoons freshly squeezed lemon juice
1/4 cup coarsely chopped fresh dill
1/4 teaspoon salt
Freshly ground white pepper
Dill flowers or small dill sprigs

Steps:

  • Check the fish for any stray bones and cut off any dark flesh that was next to the skin. Cut the fillet into 4 equal square pieces. Season both sides of the fish with salt and pepper. Separate the outer leaves from the head of lettuce, without tearing them. Place a leaf cupped side up and center a piece of fish in the middle of the leaf (use two leaves if necessary). Sprinkle the fish with 1 tablespoon of the dill. Top with another 1 or 2 lettuce leaves, this time cupped side down, so that the fish is completely enclosed in lettuce. Wrap the remaining fillets in lettuce, sprinkle each one with dill, and arrange them, without crowding, in a steamer rack or basket. Bring several inches of water to a boil in the bottom of a steamer. Drop in the mint sprigs, put the steamer rack or basket in place, cover and steam fish 8 minutes for each inch of thickness (e.g. if fish is 3/4 inch thick, steam 6 minutes). Turn off the heat, uncover the steamer and let the fish rest for 1 to 2 minutes. To check for doneness, carefully lift the top leave from one of the packets and peek inside the fillet. If it is still translucent in the center, cover and steam for another 1 to 2 minutes.
  • While the fish is steaming, make the sauce. Melt 1 tablespoon of the butter in a small saucepan or skillet over medium-low heat. Add the shallots and cook, stirring, until it is softened but not browned, about 1 minute. Add the lemon zest and juice and bring the mixture to a simmer. Vigorously whisk in the remaining butter, 1 tablespoon at a time, allowing each addition to melt before adding the next. The sauce should be slightly thickened and the butter emulsified. Stir in the dill and season with the salt and pepper to taste.
  • Carefully transfer the fish packets to warm serving plates. Pour the sauce over and around the fish and garnish with the dill flowers.

1 1/2 teaspoons salt, plus more for seasoning
1/2 teaspoon freshly ground black pepper, plus more for seasoning
1 1/2 pounds sugar snap peas, stemmed
1 yellow bell pepper, sliced
1 orange bell pepper, sliced
1/2 cup white wine
1/4 cup lemon juice
4 teaspoons olive oil
4 (4-ounce) trout fillets, skinned (or other fish about 1/2-inch thick)
8 thin slices lemon
1/4 cup fresh chopped mint leaves

Steps:

  • Special equipment: 4 large sheets of aluminum foil or parchment paper
  • Preheat the oven to 350 degrees F. In a small bowl mix together the lemon zest, salt, and pepper. Set aside.
  • Lay out the 4 sheets of aluminum foil. Place 1/4 of the sugar snap peas, 1/4 of the yellow bell peppers, and 1/4 of the orange bell peppers on each sheet of foil. Over each pile of vegetables drizzle 2 tablespoons of white wine, 1 tablespoon of lemon juice, and 1 teaspoon of olive oil. Sprinkle with salt and pepper and gently toss.
  • Top each pile of seasoned vegetables with a piece of fish. Sprinkle the fish with some of the reserved lemon zest mixture. Top each fish with 2 slices of lemon.
  • Fold up the foil into an air-tight packet. Place the foil packets in the oven and bake for 15 to 18 minutes depending on the thickness of the fish. Sprinkle the fish with mint just before serving.

1 tbsp olive oil
140g boneless white fish fillet
1 tbsp reduced-fat crème fraîche

Steps:

  • Mix together the lettuce, spring onions and peas in a microwave-proof dish. Drizzle with olive oil. Sit fish fillet on top, spoon over crème fraîche, then season. Cover with cling film, then pierce film.
  • Microwave on Medium for 6-8 mins until the fish is cooked. Lift fish off the lettuce, then give lettuce and peas a good stir. Spoon lettuce mix and sauce onto a plate, then sit fish on top.
