SMOKED PEPPER AND BUTTER BEAN VEGETARIAN SAUSAGES

Steps:
- Heat the oil in a large frying pan and fry the diced peppers over a high heat for 5 minutes.
- Reduce the heat, add the garlic and fry for a further 2 minutes.
- Stir in the pimenton and cook for 1 minute.
- Remove from heat and allow to cool.
- Place the butter beans in a large bowl and mash roughly.
- Add the cooled pepper mixture along with the tahini and white bread crumbs, season well and then combine thoroughly.
- Divide mixture into eight balls and using wet hands, roll each into a sausage measuring about 10cm long.
- Clean the frying pan, pour in 1cm of sunflower oil and place over a moderate heat.
- Add the sausages and cook for 10 minutes, turning often, until heated through and golden brown (you may need to do this in batches).
- Drain on kitchen paper.
- Serve with green beans.

Steps:
- heat water to boiling in a saucepan an add butter beans. cover and let simmer for 25 minutes.
- fry sausage links until just brown. remove from skillet and cut into bite sized chunks.
- remove from skillet while leaving drippings in pan.
- add onion over low heat , stir apples in and add brown sugar over top.
- turn up heat to medium and let sugar thicken.
- when sugar gets syrupy, remove from heat.
- when beans are cooked, drain and add butter, milk, salt, and mustard and mix well.
- turn into a buttered baking dish and lay sausage over top the spread apples, onion mixture over top.
- bake at 350 for 30 minutes.

- Heat the oil in a large ovenproof pan, add the sausages and brown for few mins. Remove from the pan. Add the leeks and carrot and gently soften for 10 mins.
- Mix the breadcrumbs with a little sage. Heat grill to medium. Add 1 tbsp sage and the garlic to the pan. Cook for 1 min, then add the stock and tomatoes. Tuck in the sausages. Simmer for 10 mins until the sauce has reduced a little and the sausages are cooked. Season, stir in the beans, then simmer for 2 mins more. To serve, scatter the sage crumbs over the top and grill for 5 mins until golden.

- Heat half the oil in a large casserole dish, then brown the sausages all over. Remove from the pan and set aside. Add the remaining oil, tip the veg into the dish and fry for 10 mins. Stir in the tomato purée and cook for 1 min more.

- Gently heat the oil in a large pan. Fry the sausages all over until brown, then remove and set aside. Add the onion to the pan and fry for 5-10 mins until golden and soft, then add the celery, garlic and rosemary, and cook for 2 mins more. Pour over the stock and bring to the boil.
- Reduce the heat and simmer for 20 mins, then add the sausages back to the pan along with the butter beans. Simmer for 8 mins, then stir in the butter, parsley and lemon zest. Ladle into bowls and serve piping hot with lots of chunky bread.

- Heat grill to high. Brush 1 tbsp oil over the sausages, and grill on a tray for 20 mins, turning regularly.
- Meanwhile, heat the rest of the oil in a saucepan over a low heat. Add most of the spring onion and cook for 5 mins until softened. Add the beans, garlic, and lemon zest and juice, cook for a few mins more, then gently mash with a potato masher to get a thick, creamy consistency.
