SAUTEED SPINACH WITH BACON AND ONIONS



Sauteed Spinach with Bacon and Onions image

1 tablespoon bacon grease
1/2 yellow onion, finely diced
3 cloves garlic, minced
1 tablespoon red wine vinegar
Pinch of crushed red pepper flakes (for a little spice because Trisha likes it)
Salt and ground black pepper
Salt and ground black pepper
12 ounces baby spinach

Steps:

  • In a large saute pan, melt the bacon grease over medium heat. Add the onion and garlic and stir to cook until the onions are very soft, about 5 minutes. Add the vinegar, crushed red pepper flakes, salt and pepper and stir; add the spinach and toss it around, cooking until it's just wilted, 1 to 2 minutes. Serve immediately so the spinach is wilted but not soggy.

This versatile salad of nutty farro, smoked pancetta, rosemary and wilted leafy greens makes a hearty side dish or satisfying supper

200g farro or quinoa
1l vegetable, pork or chicken stock
4 rashers smoked pancetta or streaky bacon
1 leek
knob of salted butter
4 tbsp extra virgin olive oil
1 rosemary sprig, leaves only
2 large handfuls of baby spinach leaves, washed, or shredded kale
100g chestnuts , cooked and broken up (optional)

Steps:

  • Boil the farro or quinoa in the stock in a lidded pan until soft to the bite, then drain. Meanwhile, use a pair of scissors to cut the bacon into small strips. Wash the leek and chop finely. Melt the butter with the oil and fry the bacon, leeks and rosemary gently over a medium heat until soft.
  • Add the farro to the pan, and stir in the green leaves and chestnuts, if you like. Put the lid on the pan and keep over a low heat until the leaves wilt and the chestnuts warm through. Serve warm or at room temperature.

I like to have this sometimes on Sunday for brunch when I want something a little eggy/cheesy. Usually I serve it with a light crisp green salad with some sort of vinaigrette. Other times, usually in summer, I will cut up some fresh fruit, like cantaloupe and pieces of watermelon and strawberries and serve with. It makes a nice light meal. This particular recipe is from Barbara Jones.

1 9 inch unbaked deep dish pie shell
2 tablespoons butter, softened
1 (10 ounce) package frozen chopped spinach, thawed
8 ounces bacon, cooked and crumbled
1 cup whipping cream
4 eggs, beaten
1/3 cup shredded swiss cheese
1/2 teaspoon salt
1 pinch nutmeg

Steps:

  • Rub softened butter on the inside surface of pie shell.
  • Drain spinach; squeeze out as much liquid as you can.
  • Place spinach in pie shell and top with crumbled bacon.
  • Whisk together cream, eggs, cheese, salt, and nutmeg.
  • Pour mixture into pie shell.
  • Bake quiche at 425 F for 10 minutes, then reduce heat to 325 F and bake for an additional 35-40 minutes or until quiche is set.

  • Combine the quinoa, water and salt in a medium saucepan. Bring the water to a boil, and after the water begins to boil, reduce the heat to low and cover the pan.
  • Gently simmer, covered, for 15 minutes (there may still be some water not yet absorbed). Remove from heat.
  • Keeping the pan covered, let it stand for 5 minutes, or until the remaining water is absorbed. Remove the lid and gently fluff the quinoa. Set aside to cool.

  • In a medium saucepan, heat the oil. Add the bacon and cook over moderately high heat until the fat has rendered, about 2 minutes. Add the shallot and cook, stirring a few times, until softened but not browned, about 1 minute. Add the quinoa, stock and sage and bring to a boil. Cover and cook over low heat until the stock has been absorbed, about 17 minutes. Remove the quinoa from the heat and let stand, covered, for 5 minutes. Discard the sage and fluff the quinoa with a fork. Stir in the chives, parsley and toasted almonds. Season the quinoa with salt and pepper and serve.

  • I like to cook my quinoa in either a rice cooker. It cooks just like white rice, so the most important thing to remember is to use the ratio of 1 part grains to 2 parts liquid {I use vegetable stock most of the time}.
  • If you do not have a rice cooker simply add the grains and broth in a saucepan, bring it to a boil and then reduce the heat to a simmer. Cook covered, until the liquid has been absorbed and grains are tender {about 20 minutes}.
  • Once the quinoa is done cooking, let it cool to room temperature. Combine the quinoa, bacon, feta, tomatoes and spinach in a large bowl and chill for at least one hour prior to serving.
