GOLDEN GATE CHILI RIBS

Number Of Ingredients 16

1 rack spare ribs, cut in half through the bone
4 tablespoons dark soy sauce
4 tablespoons hoisin sauce
4 tablespoons honey
4 tablespoons Shaohsing rice wine or dry sherry
2 heaping tablespoons Chinese five-spice powder
2 tablespoons light soy sauce
1 Fresno chile, seeded and finely chopped, for garnish
1 scallion, green part only, finely chopped, for garnish
Roasted Sweet Potato Wedges, for serving, recipe follows
Mixed green salad, for serving
1 1/2 pounds sweet potatoes, peeled and cut into 1-inch chunks
1 teaspoon whole cumin seeds
1 teaspoon whole Sichuan peppercorns
1 teaspoon sea salt
2 tablespoons vegetable oil

Steps:

  • Have the butcher cut the rib rack in half through the bone. Cut each half into separate single ribs.
  • In a large bowl, mix together dark soy sauce, hoisin sauce, honey, rice wine, Chinese five-spice powder and light soy sauce. Add the ribs and marinate for as long as possible, overnight is best.
  • Preheat the oven to 350 degrees F.
  • Remove the ribs from the marinade and transfer to a baking sheet, reserving the marinade. Bake the ribs until cooked through and no longer pink at the bone, 30 to 45 minutes.
  • Transfer the reserved marinade to a wok or small saucepot and bring the mixture to a simmer and reduce slightly. Baste the ribs halfway through cooking with the reserved marinade.
  • Remove the ribs from the oven and baste with the rest of the marinade. Sprinkle with the chopped chiles and scallions. Serve immediately with Roasted Sweet Potato Wedges and a mixed green salad.
  • Preheat the oven to 350 degrees F.
  • Place the sweet potatoes into a large bowl.
  • In a wok or saute pan, toast the cumin and Sichuan peppercorns for 1 to 2 minutes until fragrant. Transfer to mortar and pestle or spice grinder and grind.
  • Sprinkle the spices and salt over the sweet potatoes, drizzle with oil and toss to coat. Transfer to a baking sheet and roast until tender, 30 minutes.

BIG BOB GIBSON BBQ RIBS

2 slabs ribs
3/4 cup your favorite dry rub (recommended: Big Bob Gibson Seasoning and Dry Rub)
1 cup apple juice
1 cup grape juice
3/4 cup your favorite BBQ sauce (recommended: Big Bob Gibson Championship Red Sauce)
1/4 cup honey

Steps:

  • Preheat a grill or the oven to 250 degrees F.
  • Pull membrane off of the back of the ribs. Sprinkle 1/4 cup of rub over each slab, front and back. Place ribs, meat side up, on the grill or in the oven for 2 hours. Remove and place each slab on a doubled aluminum foil square, meat side down. Combine the marinade ingredients. Pour 1 cup of marinade over each slab while wrapping tightly in foil. Cook for 1 more hour at 250 degrees F. Remove slabs from foil and sprinkle with remaining 1/4 cup of rub. Cook an additional 1 hour, uncovered, until ribs are tender.
  • Mix together the BBQ sauce and honey. Remove ribs from the oven and paint with finishing glaze, and cook for another 15 minutes. Cut and serve.

BARBECUED RIBS

6 pounds pork ribs (baby back or spareribs)
1 tablespoon barbecue meat seasoning
1 (16-ounce) bottle barbecue sauce

Steps:

  • If using charcoal, pile the charcoal in a pyramid. Ignite the charcoal with lighter fluid. Once the top portion of the charcoal has turned white, spread the charcoal out evenly using a fireproof tool such as a metal rake or shovel. Spread the coals over half of the bottom of the grill, leaving the other half empty. (If using a gas grill, only ignite one side of the burners.)
  • Evenly spread the meat seasoning over both sides of the ribs. Let stand in the refrigerator unless using right away. Place the ribs over the area where there is no charcoal or the side of the grill that is not hot. Cover and turn every 20 minutes for approximately 1 to 1 1/2 hours. For the last 10 minutes of cooking, baste ribs with the barbecue sauce and cover again. Turn the ribs over and baste again. Do this every 2 minutes.
  • While on grill, cut the ribs up individually and baste 1 last time.
