This firecracker shrimp recipe makes the best firecracker shrimp, with just the right combination of sweet, heat and awesome flavor, ready in minutes!

1/2 cup chili-garlic sauce
2 tablespoons spicy chili oil
1 tablespoon sriracha
1 tablespoon white wine vinegar
1 tablespoon honey
1 teaspoon cayenne (use paprika for milder, or ghost pepper flakes for hotter!)
1 teaspoon lime juice
Salt and pepper to taste
1 pound shrimp (peeled and deveined)
1 tablespoon olive oil
FOR GARNISH: Fresh chopped parsley (spicy chili flakes, sliced hot peppers)

Steps:

  • Whisk together the chili-garlic sauce, chili oil, sriracha, vinegar, honey, cayenne, lime juice and a bit of salt and pepper together in a small bowl until mixed. This is your firecracker shrimp marinade and glaze.
  • Add the shrimp to a large bowl and add half of firecracker shrimp marinade. Toss to evenly coat the shrimp. Refrigerate for 5 to 10 minutes, though you can cook immediately if desired.
  • Heat the olive oil in a large pan to medium heat. Add the shrimp and cook 2-3 minutes per side, until the shrimp is pink and cooked through.
  • Brush on the remaining firecracker shrimp glaze. Reserve any leftover marinade/glaze for serving.
  • Garnish and serve!

The heat of the firecracker shrimp is cooled by the lime-infused pasta. You can also squeeze additional fresh lime juice over shrimp when serving.

1/3 c plain greek yogurt
2 tsp lime zest
2 tsp lime juice
4 oz linguine
2 Tbsp olive oil, divided
1 clove garlic, minced
2 Tbsp white wine
1 oz asiago cheese, finely shredded
1 tsp kosher salt, divided
1/2 tsp freshly ground black pepper, divided
8 oz large shrimp (31 - 35 count), peeled, tails removed, de-veined
2 Tbsp adobo sauce (from a can of chipotle peppers in adobo sauce)
garnish: lime wedges

Steps:

  • 1. In a small bowl, mix together the yogurt, lime zest, and lime juice; set aside.
  • 2. In a large saucepan, bring 2 - 3 quarts of water to a rolling boil over high heat. Add in the linguine, and salt to taste, and cook according to package directions to al dente. Remove and set aside 1/2 cup of pasta water; drain pasta; set aside.
  • 3. In the same saucepan, heat 1 tablespoon olive oil over medium-low heat. Add in the garlic and cook for 1 minute. Add in the pasta, toss. Add in the yogurt mixture and white wine, mix to combine. Add in the Asiago cheese, 1/2 teaspoon salt and 1/4 teaspoon pepper, mix to combine and allow the cheese to melt. Add in some of the pasta water, 1 tablespoon at a time, to loosen mixture.
  • 4. Heat remaining 1 tablespoon olive oil a large skillet over medium-high heat. Season the shrimp with remaining 1/2 teaspoon salt and remaining 1/4 teaspoon pepper. Add shrimp to skillet and cook until pink and cooked through, approximately 2 minutes. Add in the adobo sauce, mix to combine.
  • 5. To serve, divide the pasta evenly between two serving plates, creating a well in the center of the pasta, evenly divide the shrimp and place into the well in the center of the pasta. Serve with lime wedges.

1 large clove garlic
Fresh or frozen ginger to yield 1 tablespoon coarsely grated
2 tablespoons dry Sherry
1 tablespoon oyster sauce
1 teaspoon red-wine vinegar
2 teaspoons chili paste with garlic
2 tablespoons tomato paste
4 ounces sugar snap peas
5 ounces zucchini
8 ounces fresh linguine
1 teaspoon sesame oil
2 scallions
10 ounces cooked, peeled shrimp
1/8 teaspoon salt

Steps:

  • Mince garlic, grate ginger and place in small bowl with Sherry, oyster sauce, vinegar, chili paste and tomato paste; mix well.
  • Rinse peas, and pull out the strings. Wash and trim zucchini and cut into 1/4-inch cubes.
  • Put on water for linguine.
  • Heat a nonstick skillet to hot; add oil, and reduce heat to medium.
  • Stir peas and zucchini into hot oil, and stir fry for about one minute.
  • Add the garlic and ginger mixture to the vegetables, and mix well to coat. Remove from heat.
  • Cook linguine.
  • Wash, trim and slice scallions.
  • Return vegetables and sauce to heat, and add shrimp, stirring long enough to heat shrimp through. Season with salt.
  • Drain linguine, and stir into sauce, mixing well. Serve sprinkled with scallions.

After throwing some ingredients together for tapas, the flavor was so fresh and light my family asked for more. By warming it through with a few more ingredients I turned it into a family meal with pasta instead of just a snack.

1 (16 ounce) package linguine pasta
1 pound peeled and deveined medium shrimp
1 tablespoon liquid shrimp and crab boil seasoning
½ cup butter
1 teaspoon minced garlic
⅓ cup diced red onion
⅓ cup diced sweet red bell pepper
½ cup canned whole kernel corn, drained
1 ½ tablespoons fresh lime juice
2 tablespoons chopped fresh cilantro
1 teaspoon dried oregano
1 teaspoon canned chipotle chile peppers in adobo sauce, finely chopped
1 teaspoon sea salt
½ cup half-and-half

Steps:

  • Bring a large pot of lightly salted water to a boil. Add linguine and cook until al dente, 8 to 10 minutes; drain.
  • Place shrimp and crab boil into a large saucepan. Fill with water to 1 inch above the shrimp, and bring to a boil over high heat. Boil for 3 minutes until shrimp turn pink, then drain.
  • Meanwhile, melt butter in a large skillet over medium-high heat. Stir in garlic, and red onion, cook until the onion softens and turns translucent, about 4 minutes. Stir in bell pepper, corn, lime juice, cilantro, oregano, chipotle pepper, and salt. Stir in the half-and-half, and bring to a simmer. Once the mixture is simmering, stir in shrimp, and toss with the drained pasta.
