FIRECRACKER CHICKEN
This firecracker chicken recipe is chunks of crispy chicken tossed in a sweet and spicy sauce. An easy dinner option that the whole family will love!

- Preheat the oven to 350 degrees F. Coat a 9"x13" pan with cooking spray.
- Place the chicken pieces on a plate and season with salt and pepper to taste. Sprinkle the cornstarch over the chicken and toss to coat evenly.
- Dip each piece of chicken into the beaten eggs.
- Heat the oil over high heat in a large pan. Place the chicken in a single layer and cook for 3-4 minutes on each side or until golden brown. You may have to work in batches.
- Place the chicken pieces in a single layer in the 9"x13" pan.
- In a small bowl, whisk together the buffalo sauce, brown sugar, rice vinegar and red pepper flakes.
- Pour the sauce over the chicken. Bake for 35 minutes, stirring once halfway through to coat the chicken with the sauce. Top with green onions and serve.

- Place chicken in shallow dish. Mix next 6 ingredients. Reserve 1/4 cup; pour remaining over chicken. Turn chicken to evenly coat. Refrigerate 2 hours to marinate.
- Heat grill to medium heat. Remove chicken from marinade; discard marinade. Mix barbecue sauce with reserved dressing mixture.
- Grill chicken 30 to 35 min. or until done (165ºF), turning after 15 min. and brushing occasionally with barbecue sauce mixture. Transfer chicken to plate; sprinkle with onions.

- Rinse chicken breasts with cold water.
- Cut chicken breasts into medium sized chunks.
- Bread Chicken with seasoned bread crumbs and flour mix.
- Fry chicken in 1 1/2 cup of olive oil until done.
- Drain on paper towel.
- Combine vinegar, honey, brown sugar, garlic powder (to taste), and red pepper flakes (to taste)
- Pour over chicken in a deep bowl and mix well until evenly coated.
- Pour coated chicken into a shallow baking dish and bake for 15min.
- Let cool and serve as appetizer or with Lo Mein noodles.

- In a medium saucepan set over medium heat, combine the Red Hot, brown sugar, garlic powder, soy sauce, vinegar, and 2 TBSP water. Cook gently, stirring frequently, until the sugar has dissolved. Set aside for now.
- Meanwhile, season your chicken thighs with salt and pepper all over. Dredge/coat the chicken on all sides with corn starch, getting them nice and covered. Set a large (large enough to contain all of the chicken), deep-sided skillet over high to med-high heat and add enough oil into to cover the entire bottom surface (amount will vary depending on pan size).
- Cook your chicken on all sides until brown and crispy; about 3 to 5 minutes per side. Once the chicken has cooked and browned nicely, turn off the heat and pour the sauce all over the meat – using a spoon to help coat everything, if needed. Place the pan in the oven and cook, uncovered, for about 5 to 8 minutes, just to crisp up the chicken and to help the sauce marry with the meat. It’s magical, honestly.
