This firecracker chicken recipe is chunks of crispy chicken tossed in a sweet and spicy sauce. An easy dinner option that the whole family will love!

1 1/4 pounds boneless skinless chicken breasts (cut into 1 inch pieces)
salt and pepper to taste
1/3 cup cornstarch
2 eggs (beaten)
3 tablespoons vegetable oil
1/3 cup buffalo hot sauce
1/2 cup brown sugar
1 tablespoon rice vinegar
1/4 teaspoon red pepper flakes (or more to taste)
1/4 cup sliced green onions
cooking spray

Steps:

  • Preheat the oven to 350 degrees F. Coat a 9"x13" pan with cooking spray.
  • Place the chicken pieces on a plate and season with salt and pepper to taste. Sprinkle the cornstarch over the chicken and toss to coat evenly.
  • Dip each piece of chicken into the beaten eggs.
  • Heat the oil over high heat in a large pan. Place the chicken in a single layer and cook for 3-4 minutes on each side or until golden brown. You may have to work in batches.
  • Place the chicken pieces in a single layer in the 9"x13" pan.
  • In a small bowl, whisk together the buffalo sauce, brown sugar, rice vinegar and red pepper flakes.
  • Pour the sauce over the chicken. Bake for 35 minutes, stirring once halfway through to coat the chicken with the sauce. Top with green onions and serve.

Number Of Ingredients 9

6 chicken drumsticks (1-1/2 lb.), skins removed
3 Tbsp. KRAFT Lite House Italian Dressing
3 Tbsp. brown sugar blend sugar replacement
3 Tbsp. lite soy sauce
3 Tbsp. HEINZ Tomato Ketchup
2 cloves garlic, minced
1/2 tsp. ground red pepper (cayenne)
1/4 cup KRAFT Original Barbecue Sauce
2 green onions, chopped

Steps:

  • Place chicken in shallow dish. Mix next 6 ingredients. Reserve 1/4 cup; pour remaining over chicken. Turn chicken to evenly coat. Refrigerate 2 hours to marinate.
  • Heat grill to medium heat. Remove chicken from marinade; discard marinade. Mix barbecue sauce with reserved dressing mixture.
  • Grill chicken 30 to 35 min. or until done (165ºF), turning after 15 min. and brushing occasionally with barbecue sauce mixture. Transfer chicken to plate; sprinkle with onions.

3 boneless skinless chicken breasts
1/2 cup apple cider vinegar
1 cup honey
3 tablespoons brown sugar
garlic powder
red pepper flakes

Steps:

  • Rinse chicken breasts with cold water.
  • Cut chicken breasts into medium sized chunks.
  • Bread Chicken with seasoned bread crumbs and flour mix.
  • Fry chicken in 1 1/2 cup of olive oil until done.
  • Drain on paper towel.
  • Combine vinegar, honey, brown sugar, garlic powder (to taste), and red pepper flakes (to taste)
  • Pour over chicken in a deep bowl and mix well until evenly coated.
  • Pour coated chicken into a shallow baking dish and bake for 15min.
  • Let cool and serve as appetizer or with Lo Mein noodles.

Once the chicken has cooked and browned nicely, turn off the heat and pour the sauce all over the meat – using a spoon to help coat everything, if needed. Place the pan in the oven and cook, uncovered, for about 5 to 8 minutes, just to crisp up the chicken and to help the sauce marry with the meat. It’s magical, honestly.
