FINNISH CINNAMON ROLLS (KORVAPUUSTIT)



Finnish Cinnamon Rolls (Korvapuustit) image

Recipe posted in response to a request, and edited once the poster finally conquered her fear of yeast. Finnish korvapuustit are not turned on their side but sit on their bottom - hence step 12! You can of course turn them on their sides too, and call them "kierrepullat" in Finnish instead! Please note that the amount of gluten in flour varies, so use the amount listed here only as a guideline - while it's perfect for me, you might find you need more or less!

Yield 20 cinnamon rolls

Number Of Ingredients 11

25 g yeast
75 g butter or 75 g margarine
300 ml milk
1/2 teaspoon salt
50 ml sugar
3/4 teaspoon ground cardamom
750 ml all-purpose flour
100 g butter or 100 g margarine, room temperature
100 ml sugar
2 teaspoons cinnamon
1 egg, beaten for brushing

Steps:

  • Crumble yeast into a bowl.
  • Melt butter, add milk and gently heat the mixture to 37°C.
  • Pour over yeast and mix until yeast has dissolved.
  • Add salt, sugar, cardamom and stir; add about 200 ml of the flour and stir.
  • Add the rest of the flour and knead dough by hand until smooth and elastic, and it no longer sticks to the bowl (this shouldn't take long) nor to your hand (which takes a bit longer).
  • Sprinkle some flour on top and cover: let rise for 30 minutes.
  • Mix the filling ingredients together.
  • Lightly flour the baking board and turn the dough on it.
  • Roll dough out to a 40 x 60 cm square.
  • Spread the filling on the dough and roll it up tightly, starting from the longer side of the square.
  • Cut the roll in 3-4 cm pieces.
  • "Open" the pieces by pressing the centre of each piece with a handle of a knife so that the centre is pressed down and the sides spread.
  • Place rolls on a parchmented baking sheet, cover and let rise for 30 minutes.
  • Brush the rolls with beaten egg.
  • Bake at 225 C for about 10 minutes.
  • Cover the rolls while cooling.

1 cup water (110 to 115 )
2 tablespoons water (110 to 115 )
1/4 cup sugar
2 tablespoons shortening
1 teaspoon salt
1 egg
2 cups whole wheat flour
1 1/3 cups all-purpose flour
2 teaspoons active dry yeast

Steps:

  • Place all ingredients into the pan of your bread machine. Program the machine for Manual or Dough. Adjust the dough consistency as necessary with additional flour or water; the finished dough should be soft and supple.
  • Allow the machine to complete its cycle.
  • Transfer the dough to a lightly floured surface and divide it into 12 pieces.
  • Shape each piece into a ball. Place 1 inches apart on greased baking sheets. Cover; let rise until doubled, about 1 hour.
  • Bake rolls in a preheated 375ºF for 15 to 20 min, or until golden brown. Remove from pans to wire racks. Brush with melted butter.
  • Serve warm.
  • Note: You can substitute white whole wheat flour for the all-purpose flour and canola oil for the shortening in this recipe.

This recipe was brought over from Finland by pioneers who settled the area. We make this bread for a local festival that features foods from different countries.

Number Of Ingredients 7

1 package (1/4 ounce) active dry yeast
2 cups warm water (110° to 115°)
1 cup whole wheat flour
1/4 cup butter, melted, divided
1 tablespoon brown sugar
2 teaspoons salt
4-1/2 to 5 cups all-purpose flour

Steps:

  • In a large bowl, dissolve yeast in water. Add whole wheat flour, 2 tablespoons of butter, brown sugar, salt and 2 cups of flour; beat until smooth. Add enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Punch the dough down. Shape into two 6-in. rounds; place on a greased baking sheet. Cut slashes in top with a knife. Cover and let rise in warm place until doubled, about 40 minutes. , Bake at 400° for 40-45 minutes or until golden brown. Brush with remaining butter.

This recipe turns out great homemade rolls for those who love 100% whole wheat bread. They rose beautifully and plump in the oven. Makes 20-25 rolls depending on how big you make them. I made 2 inch dough balls and they rose to 3 inches after baked. To make more rolls just make the dough balls smaller.

2 tablespoons yeast
2 cups lukewarm water (105-125 degrees, 16 oz.)
1/4 cup honey (2 oz.)
3/4 cup olive oil (6 oz.)
2 eggs, at room temperature
2 teaspoons salt
7 cups whole wheat flour

Steps:

  • Dissolve yeast in water and honey for about 5 minutes.
  • Combine honey, olive oil, eggs, and salt in a large mixing bowl.
  • Slowly add Flour and knead until it loosens from sides of the bowl.
  • Place in large oiled bowl, cover and let rise until about double. About one hour, be sure it is in a warm place.
  • Punch down and remove Dough.
  • Shape dough into rolls about 2 inch in diameter.
  • Place on an oiled or non stick baking sheet, cover and let rise for 30 minutes.
  • Pre-heat oven to 375 degrees.
  • Bake at about 375 degrees for about 20 minutes or until browned.

1 teaspoon granulated sugar
1 1/4 cups water
1 (8 g) package active dry yeast (2 1/4 tsp.)
2 large eggs
2 tablespoons butter or 2 tablespoons hard margarine, softened
3 tablespoons mild molasses
1 teaspoon salt
1 3/4 cups all-purpose flour
2 3/4 cups whole wheat flour (approximately)

Steps:

  • Stir sugar in warm water in large bowl.
  • Sprinkle yeast over top.
  • Let stand 10 minutes.
  • Stir to dissolve yeast.
  • Beat in next 5 ingredients in order given.
  • Beat on medium for about 2 minutes until smooth.
  • Work in enough whole wheat flour until dough pulls away from sides of bowl.
  • Turn out onto floured surface.
  • Knead 8 to 10 minutes until smooth and elastic.
  • Place in greased bowl, turning once to grease top.
  • Cover with clean tea towel.
  • Let stand in warm place until doubled in bulk, about 1 1/4 hours.
  • Punch dough down.
  • Cut off egg-sized pieces.
  • Shape into buns.
  • Place on greased baking sheet.
  • Cover again with tea towel.
  • Let rise until doubled, about 45 minutes.
  • Bake in 350 oven for 15-20 minutes or until nicely browned.
  • Makes 18 buns.

3/4 cup whole wheat flour
2 tablespoons sugar
1-1/2 teaspoons baking powder
1 teaspoon salt

1/4 cup shortening
1 cup buttermilk

Steps:

  • In a large bowl, combine flours, sugar, baking powder, salt and baking soda. Cut in shortening until the mixture resembles coarse crumbs. Stir in buttermilk just until moistened. , Turn dough onto a floured surface; knead for 3-5 minutes. Pat onto an ungreased 12-in. pizza pan. Bake at 350° for 30 minutes or until golden brown. These are great-tasting wheat rolls made with olive oil, regular bread flour, and whole wheat flour. This recipe happened one night when I was making white Italian rolls, and I ran out of flour. All I had left was wheat flour, and luckily for me, it worked out well.

½ cup olive oil
¼ cup white sugar
1 tablespoon salt
2 cups boiling water
2 (.25 ounce) packages active dry yeast

4 cups bread flour

Steps:

  • In a small bowl, combine olive oil, white sugar and salt. Add boiling water and stir to dissolve sugar; let cool to lukewarm.
  • In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
  • When sugar and water mixture has cooled, add yeast mixture, eggs, whole wheat flour and 2 cups bread flour. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
  • Divide the dough into twenty four equal size pieces and form into rounds. Place the rounds on lightly greased baking sheets. Cover the rolls with a damp cloth and let rise until doubled in volume, about 40 minutes. Meanwhile, preheat oven to 350 degrees F (175 degrees C).
  • Bake in preheated oven until golden brown, about 15 to 20 minutes.
