3 cups water
2 teaspoons anise seeds
1/2 teaspoon sugar
1 1/2 tablespoons lemon juice
2 tablespoons honey
2 teaspoons black tea

Steps:

  • In a small saucepan, combine all ingredients, except tea, and bring to a boil. Allow to simmer for three minutes. Strain.
  • Pour liquid into a tea pot and add the tea. Sit for 5 mins before serving.

2 -4 teaspoons black tea leaves
1 teaspoon cardamom
3 -4 cinnamon sticks
1/4-1/2 cup sugar
3 cups milk (2% or whole)

Steps:

  • Simmer water, black tea leaves, cardamom, cinnamon sticks, and sugar for 10 minutes.
  • Add the milk and heat just until hot.
  • Strain and serve.

1 kg lamb, cut into 1 inch cubes
3 onions, finely chopped
2 tablespoons coriander, finely chopped
6 cardamom pods
salt and pepper
2 cups milk
3 cups water
2 cups rice
4 tablespoons butter, melted

Steps:

  • Simmer meat, onions, cilantro, cardamom pods, salt and pepper in 1 cup water in a covered saucepan over low heat for 1 hour or until tender. Add water if pot dries. Remove meat, set aside and keep warm.
  • Add 2 cups water and milk to stock in which meat was cooked. Bring to a boil. Stir in rice, cover and cook very gently over low heat until the rice is nearly cooked, about 20 minutes. Turn off heat and allow to steam 10 minutes longer.
  • Place rice on a large serving platter and pick out the cardamom pods. Arrange pieces of meat on top. Pour melted butter over rice and meat. Serve with a vegetable salad.

3 sticks cinnamon
2 cloves, whole
2 pieces gingerroot
walnuts, for garnishment
sugar, as needed for taste

Steps:

  • In a pot, bring the water, anise seeds, ginger, cloves, and cinnamon to a boil.
  • Seep on low in a teapot or pan for 10-15 minutes.
  • Strain and pour into cups. Garnish and top with walnuts and sugar to taste.
