- Spread one side of each slice of bread with a thin layer of butter. Arrange a single layer of cucumber slices on 4 of the bread slices. Stir together the mayonnaise, chives, mustard and some salt and pepper in a small bowl. Spread a thin layer of the mayonnaise mixture over the cucumbers. Top with the remaining slices of buttered bread. Cut off the crusts and cut each sandwich into three fingers.

Steps:
- Combine the cucumbers and cream cheese, then blend in the onion.
- Add in a tablespoon or two of mayonnaise and blend until the mixture is soft and spreadable. Add a little more mayonnaise to soften further.
- Cut the crusts off the bread, then either cut each piece into fourths or cut into diamonds.
- Spread mixture over half the bread pieces, then top with another piece of bread.
- Garnish with parsley or cucumber.

ENGLISH TEA FINGER SANDWICHES (3 RECIPES!)
Tea sandwiches are such a fun brunch time snack to serve with or without tea! I like to make these English Tea Finger Sandwiches AHEAD of time when expecting company. It is best to serve them cold (or room temperature) so no fussing with reheating! These sandwiches are ideal for bridal or baby showers or just a small brunch party!

- Prepare each sandwich filling by adding all the ingredients to separate bowls. (3 total) Mix each using a silicone spatula. (they work best!) Keep in mind that using room temperature butter and cream cheese will make mixing much easier!
- Once your 3 fillings are ready, set out your bread slices and start spreading your filling generously onto each side of your bread.
- *Note* I used a TOTAL of 18 slices of bread. I laid out 6 slices for EACH filling. This gave me 3 large sandwiches with EACH filling. (Total of 9.) I then cut each of the 9 finished sandwiches into TWO triangles giving me a total of 18 tea sandwiches triangles to serve or 6 each. If you want to QUARTER your tea sandwiches you can. You should then get twice the amount (36 total).
- Trim the ends of your cucumbers and then cut each into thirds (or half) depending how long your cucumbers are. (The idea is to cut them lengthwise first before you start slicing them down. We want about 4" chunks so that when we slice them, they fit nicely onto your bread. (See photos). Finally, you can slice each chunk into slices about 1/16" thick. Your yield will differ than mine depending upon the size of your cucumbers. Aim for about 4-5 slices per sandwich! (See photos for reference!)

- Trim the crusts from the sandwiches and cut into long, narrow "fingers".
- Carve a slice of tomato skin into a fingernail and attach it to the ends of the fingers with mayonnaise.

- For each filling, remove the crusts from the bread and lightly butter. Spread the filling (see below) over half the bread slices and top with the remaining ones. Cut each one into 3 finger sandwiches.
- For the egg mayonnaise and pancetta filling: Bring a large pan of water to the boil, lower in five of the eggs and simmer for 8 minutes. Remove with a slotted spoon, run under a cold tap until cool, then peel and set aside. In a bowl, whisk an egg yolk with the English mustard and white wine vinegar. Gradually whisk in the olive oil and groundnut oil until thickened. Season well with salt, black pepper and a good pinch of cayenne pepper. Chop the eggs roughly and fold through the mayonnaise. Heat a pan with a little splash of oil and fry the pancetta until crisp. Fill the sandwiches with the egg mayo, pancetta and rocket leaves.
- For the cream cheese and cucumber filling: Peel and slice the cucumber into rounds, put in a bowl and toss with a pinch of salt and a drizzle of olive oil. Set aside. Beat the cream cheese with a squeeze of lemon juice in a bowl to loosen. Add the garlic and onion seeds, then season with black pepper. Thickly spread your sandwiches with the cream cheese mixture and layer the cucumbers on top.
- For the tea-smoked salmon filling: You will need a deep roasting tin with a rack that fits comfortably inside and comes about halfway up the side of the tin (you could use chicken wire and a wok instead). Put the tea leaves into the tin and put the rack on top.
