- Heat the vegetable oil in a medium saucepan over medium high heat. Add the minced jalapeño and cook for 2 minutes or until softened, stirring often. Add the garlic powder, chipotle pepper and adobo sauce and cook for 1 minute. Add the raspberries, granulated sugar, brown sugar, cider vinegar, water, liquid smoke and kosher salt and bring to a boil. Stir in the cornstarch, reduce to simmer and cook for 15 minutes or until thickened. Add more adobo sauce to taste. Cool and refrigerate until ready to use. Serve on BBQ ribs, pork or chicken.
- ** Note: If you prefer a smooth sauce, strain the sauce through a mesh strainer to get rid of the seeds.
MANGO BARBECUE SAUCE
This sauce is a little sweet from the mango with a pinch of heat. Delicious on chicken or any of your favorite grilled meats.

- Heat the oil in a medium sauce pan over medium-high heat. Add the onion and cook, stirring a few times, until translucent, about 3 minutes. Add the bell pepper, garlic, black pepper and allspice and cook, stirring for 2 minutes more. Stir in the vinegar, molasses, Worcestershire, lime juice and tomato sauce. Mix the ingredients and cook for 1 minute more. Transfer the mixture to a blender and add the mango and jalapeños. Blend until smooth. Put 2 cups of the barbecue sauce in a large, sealable plastic bag with the chicken and marinate for 1 hour in the refrigerator. Reserve remaining sauce for serving.
- For the chicken, Prep the grill by spraying with cooking spray and heat over medium- high heat. Remove the chicken from the sauce, discarding the sauce in the bag. Grill the chicken for about 4 minutes per side. Serve the chicken with the reserved sauce on the side.

My mother-in-law gave me this recipe when I was just a bride. I make two batches a year to keep up with supply & demand! The kids love this on sandwiches, burgers, brats, hotdogs, grilled cheese, fries, cake (okay, just checkin'!!!). One institutional size can of ketchup will yield 8 cups.

- Mix and cook in a large roaster pan in oven at 325 degrees for several hours until thickened to your liking.
- Hot pack into pint jars; seal with hot lids and rings.
- Set jars upside-down on a thick towel for 15 minutes (set the timer); then put right-side up.
- As the jars cool, you'll hear some *kitchen music* which means they've sealed nicely.
- Store in a cool dark cellar or cupboard.
- NOTE: This is the base for my chicken barbecue sauce recipe which calls for 1/2 cup bbq sauce, 1/4 cup honey, 1/4 cup soy sauce--to DIE FOR!

- 1. Preheat your air fryer or Ninja Foodi to 400 degrees for ten minutes.
- 2. Combine all of the glaze ingredients by stirring with brush. If using jam stir an extra 30 seconds to disperse the jam. Salt and pepper to taste. Set aside 3 tablespoons of glaze to turn into dipping sauce at the end.
- 3. Salt the chicken. Add the ghee to a separate bowl then brush it onto the chicken.
- 4. Brush one side of the chicken with the bbq glaze then add it to the air fryer, sauced side down, then brush the other side with glaze.
- 5. Set the air fryer to fifteen minutes.
- 6. Brush more glaze on the chicken every four minutes then flip and add glaze to the other side.
- 7. Check the internal temp with the thermometer. It's ready to be devoured at 160 to 165 degrees.
- 8. Pour the leftover grease from the Foodi (check air fryer to make sure it's not burnt if not Foodi) into your sauce for a magically delicious time.
- 9. Dip chicken into your secret sauce and bliss out.
