"FINADENE" LOCAL DIP
"Spicy sauce used for dipping BBQ meat, chicken or fish, egg rolls, or over rice, eggs, for dipping and drizzling over almost everything if you are a Pacific Islander. This sauce ia a "must have" on every meal."

Steps:
- 1. Using a medium bowl, mix all ingredients together and stir well to blend all the flavors. Chop 3 red hot peppers and add into the sauce.
- 2. Garnish with the remaining whole red hot peppers, lemon slices and lemon zest.
- 3. Serve over rice, meat, chicken, fish, eggs, avocados...or almost on everything! Great when drizzled over rice
FINADENE
I learned to make this on Guam. This is an all purpose sauce and can be used as a marinade, or poured over rice or cooked meat. You can make it as hot or mild as you like. The longer you let it sit the hotter it gets!

3 FINADENE SAUCES (GUAM)
Adapted from Barbecue USA. The soy and vinegar sauce is traditionally served with chicken and pork, the coconut sauce with seafood and poultry, and the lemon sauce with fish. Note on the yield: the coconut and lemon sauces each make 1 1/2 cups; the soy and vinegar makes 1 cup.

Steps:
- To make the soy and vinegar finadene: place the onion in a non-reactive bowl.
- Add remaining ingredients and stir to mix.
- This will keep, tightly covered, in the refrigerator for several days.
- To make the coconut finadene: Combine the coconut milk, garlic, ginger, and lemon juice in a non-reactive bowl and stir to mix.
- Add the onions, jalapenos, salt and pepper.
- This can be made several hours ahead.
- To make the lemon finadene: combine the lemon juice, salt and water in a non-reactive bowl.
- Whisk until the salt dissolves.
- Stir in remaining ingredients.
- This can be covered and refrigerated for several days.

- Spam. Okay we’re starting with my beloved Hawaiian spam. If you had followed my social media posts during this trip, you’d know that I ate spam every single day during my week-long visit to Maui.
- Loco Moco. A Loco Moco is another traditional Hawaiian comfort food that has humble roots. The Loco Moco is said to have been created at a restaurant on the Big Island in 1949 as a dish to feed hungry teens cheaply.
- Poke. Poke is a Hawaiian cuisine that is perhaps most recognizable on the mainland. Over the last few years, poke shops serving delicious, diced raw fish have been popping up all over North America including in my hometown of Edmonton (where there are two poke places Ono Poke and Splash Poke).
- Fresh Fish/Seafood. Speaking of fresh fish and seafood, eating any fish dish in Hawaii should taste incredible because the fish is RIGHT THERE!! We loved the grilled garlic shrimp rice plate from Ono Kau Kau in Lahaina, the breaded mahi mahi from Da Kitchen in Kihei, and the seared fish with coconut shrimp from Joey’s Kitchen K’aanapali.
- Noodles (Saimin, Somen and Ike Mazemen) There are some excellent noodle dishes in Maui! Our very first meal after we landed was at a popular local comfort spot Sam Sato’s in Wailuku for their saimin dry noodles and plate lunches.
- Pie, specifically from Leoda’s Pie Shop. Leoda’s Kitchen & Pie Shop is a beloved institution in Maui. It’s on the side of the road on your way in and out of Lahaina / K’aanapali so it can’t be missed.
- Plate Lunch or Mixed Plate. In Hawaii, there’s a standard dish called a plate lunch or a mixed plate, which is essentially a plate with rice, some kind of meat/protein, and a salad.
- Malasadas. During my Maui trip I learned about Malasadas, which are basically oval-shaped, deep-fried doughnut-like balls, dusted with sugar or cinnamon (typically), very popular in Hawaii but with roots in Portugal.
- Local Maui Beer. Maui is home to just two craft breweries: Kohola Brewery located in Lahaina and Maui Brewing Co. located in both Lahaina and Kihei. You can get either brand in grocery stores on the island (for Canadians especially, the concept of beer in grocery stores is always shiny and amazing because our grocery stores are liquor-less lol) or you can visit their brewpubs on the island.
- Maui Pineapples. Did you know: pineapples have been grown on the Hawaiian islands since the early 1900s! This deliciously sweet, tropical fruit (one of my favourites!)
