FILLING
1 cup chopped dates or figs
1/2 cup firmly packed brown sugar
2 tablespoons water
2 tablespoons orange juice
DOUGH
1/2 cup shortening
3/4 cup firmly packed brown sugar
1 egg
1 cup All-Bran® Original or All-Bran® Bran Buds®
1 3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup sour milk or buttermilk

Steps:

  • 1. Combine dates, the 1/2 cup brown sugar, water and orange juice. Mix well. Set aside.2. In medium mixing bowl, beat shortening and the 3/4 cup sugar thoroughly. Add egg. Beat well. Stir in KELLOGG'S ALL-BRAN cereal.3. Stir together flour, baking powder, soda and salt. Add to cereal mixture alternately with milk. Spread one-half the dough evenly in 13 x 9 x 2-inch pan coated with cooking spray. Drop filling by teaspoon on top of dough and spread evenly. Cover filling with remaining dough, spreading carefully.4. Bake at 400°F about 25 minutes or until top crust is lightly browned. Cool completely in pan. Cut into squares to serve. NOTE: To make sour milk, measure 1 tablespoon vinegar or lemon juice in lqiuid measuring cup and add milk to measure 3/4 cup.

Except for special occasions I like to try to serve my family healthy food, including desserts. This one is delicious and actually has some very good nutritional value.

1 cup chopped prune
1/4 cup sugar
1 teaspoon grated fresh lemon rind
1 tablespoon lemon juice
1 1/2 cups rolled oats, not quick oats
1/2 cup brown sugar
3/4 cup flour
1/4 teaspoon salt
2/3 cup butter

Steps:

  • Combine the prunes, sugar, lemon rind and lemon juice in a small pt.
  • Cook, stirring over low heat until thick.
  • Cool completely.
  • blend remaining ingredients until crumbly.
  • Pack half the oat mixture firmly into the bottom of a greased 8 inch square pan.
  • Spread with prunes and then top with remaining oat mixture.
  • Pat lightly into the pan.
  • Bake at 350 for 35 minutes.
  • Let cool before cutting.

2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
3/4 cup butter or margarine
1 cup firmly packed brown sugar
1/2 cup granulated sugar
1 egg
1 tablespoon fat free milk
1 teaspoon vanilla extract
1 cup All-Bran® Original or All-Bran® Bran Buds®

Steps:

  • 1. Stir together flour, baking powder and baking soda. Set aside.2. In large mixing bowl beat together butter, brown sugar and granulated sugar until thoroughly mixed. Add egg, milk and vanilla. Beat well. Stir in Kellogg's® All-Bran® cereal and flour mixture, mixing until combined.3. Shape dough into two 10 1/2-inch-long rolls. Wrap in plastic wrap, covering ends carefully. Refrigerate at least 2 hours or until firm.4. Slice cookie rolls about 1/4 inch thick and place on ungreased baking sheet. Bake at 375°F about 9 minutes or until golden brown. Remove from baking sheets and cool on wire racks. Store in airtight container. VARIATIONS:CHOCOLATE: Stir in 2 squares melted, unsweetened chocolate before add flour mixture.NUTTY: Add 1/2 cup chopped walnuts with flour mixture.SPICE: Stir 2 teaspoons cinnamon, 1 teaspoon ginger, 1/2 teaspoon nutmeg and 1/4 teaspoon cloves into flour mixture.

2 cups All-Bran® Original
1/2 cup chopped dried apricot
1 cup raisins
1/3 cup all-purpose flour
1/2 cup honey
1/3 cup skim milk
3 tablespoons vegetable oil
1 egg, slightly beaten

Steps:

  • 1. In large mixing bowl, combine Kellogg's® All-Bran® cereal, apricots, raisins, flour, honey, milk and oil. Mix until combined. Stir in egg. Spread evenly in 8 x 8 x 2-inch baking pan coated with cooking spray. 2. Bake at 325°F about 30 minutes until firm in center. Cool in pan. Cut into 24 bars. Store tightly covered.

1/2 cup boiling water
1/2 cup all-bran cereal
1 large egg (or use 1/4 cup egg substitute)
1 cup buttermilk (use low fat if desired)
1/2 cup sugar (can use more sugar, or use sweetener equivalent to 1/2 cup)
1/4 cup applesauce
3/4 cup whole wheat flour
1/2 cup all-purpose white flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup bran buds (Kellogg's All Bran cereal preferred) or 1 cup 100% all-bran cereal (Kellogg's All Bran cereal preferred)

Steps:

  • Set oven to 350°F.
  • Grease an 8 x 8-inch baking pan.
  • In a small heat-proof bowl mix together the 1/2 cup All Bran cereal with boiling water; let stand until softened.
  • In a large bowl mix/whisk egg (or egg substitute) buttermilk, sugar and applesauce; add in the softened bran/water mixture to the egg mixture.
  • In a bowl mix together both flours, baking soda and salt; add to the wet mixture; mix only just until combined.
  • Stir in the 1 cup Bran Buds or 100% Bran cereal with a wooden spoon.
  • Transfer the mixture to prepared baking pan.
  • Bake for 45-50 minutes or until the bars test done.

I got this recipe from a friend of mine about 16 years ago. I thought they were delicious and made them several times. I was so excited when I came across this recipe while looking through 100's of recipes I have clipped, saved and copied over the years. I will be making this again real soon!

1 cup butter
2 cups brown sugar (packed)
4 eggs (beaten)
2 teaspoons vanilla
1/2 teaspoon salt
2 cups bran flakes
2 cups flour
4 tablespoons confectioners' sugar
raisins (add to your taste)

Steps:

  • Blend butter and sugar.
  • Add eggs and beat well.
  • Stir in vanilla and salt.
  • Crush bran flakes slightly and add with flour to first mix.
  • Add raisin (to your taste)>.
  • Fold only until combined.
  • Spread in greased 9x13 pan.
  • Bake at 350 degrees for 25 minutes or until set.
  • Remove and sprinkle with confectioners' sugar on top.
  • Cut when Cool.
  • Enjoy!
