12 ounces tuna
1 potato
1 carrot
salt
pepper
1 red onion
flour
2 eggs

Steps:

  • coarsley grate the potato and carrots
  • Chop the onion coarsley.
  • Mix together the fish with above ingredients.
  • add enough eggs so mixture is coated well.
  • then add some flour and mix so that mixture is quite sticky.
  • add salt and pepper.
  • make fish cakes not too big and flatten with hand and drop in shallow oil.

2 cups shredded carrots
1 cup green onion (chopped)
1/2 lb fish fillet (without skin)
cooking oil (for frying)
1 cup all-purpose flour
1 teaspoon ground black pepper
1 teaspoon salt
1 teaspoon paprika
1 tablespoon fish sauce
1 tablespoon sriracha hot sauce
lime soda (7-Up or Sprite)

Steps:

  • Slice the fish filets into thin strips. Season the strips with salt and pepper.
  • Prepare the batter - add flour into a mixing bowl, then slowly add lime soda while stirring it constantly. Add enough liquid until you get a pancake batter consistency.
  • Season the batter with salt, fish sauce, ground black pepper, paprika, and sriracha hot sauce. Mix all these ingredients until they're well incorporated.
  • Add the fish meat into the batter along with the carrots and green onions. Mix all of them well until all are well coated.
  • Add oil into a frying pan and heat until a drop of water sizzles in the oil. Spoon the fish cake mixture into half a cup measuring cup and then add to the frying pan and press down to form then into pancake shapes.
  • Fry them over medium heat for 4 minutes on each side.
  • Remove the fish cakes to a plate lined with paper towels to drain the excess oil.
  • Serve with sriracha sauce and/or vinegar to dip them inches.

I found this while looking for recipes to use all the fish we've been catching. It's similar to Russ's Crab Cakes he makes and just as good. We cooked ours in a little oil in a pan 9no oven) but have submitted the original recipe.

2 cups mashed potatoes, cooled, JUST potato
500 g cooked fish fillets, any white fish will do
2 tablespoons chopped fresh coriander leaves
1/2 teaspoon finely chopped fresh coriander root
1 small red chile, finely chopped
1 teaspoon grated fresh ginger
1 garlic clove, crushed
1/2 cup plain flour
1 egg, lightly whisked
1/2 cup breadcrumbs

Steps:

  • Spray a baking tray with spray oil.
  • In a mixing bowl combine first 7 ingredients. Mix well.
  • Divide into 8 equal round cakes.
  • Coat with flour, then dip in egg and finally coat with the crumbs.
  • Place cakes on prepared tray; chill for 10 minutes.
  • Meanwhile preheat oven to 190c.
  • Spray cakes with oil and bake, turning once (spray again). They will take about 30 minutes in total to cook.

2 cups flaked flaked fished such as salmon, halibut or 2 cups cod
2 cups cooked mashed potatoes
1 onion, minced
3/4 cup all-purpose flour
2 large eggs
2 tablespoons fresh parsley, minced
salt & freshly ground black pepper
vegetable oil (for frying)

Steps:

  • In a large bowl mix together flaked fish, mashed potatoes, onion, 1/4 cup flour, eggs and parsley. Season to taste with salt and pepper. Form the mixture into 12 small patties.
  • Place the remaining 1/2 cup flour in a shallow dish and season with salt and pepper. Stir to mix well.
  • Heat about a 1/4-inch of vegetable oil in a heavy-bottomed skillet over moderately high heat. Dredge the fish patties in the seasoned flour, shaking off any excess and add them to the hot oil. Cook untill browned on both sides; about 8 minutes total, turning once. As the patties are cooked, transfer them to paper towels to drain. Serve hot.

This recipe is from Ainsley Harriot's Gourmet Express. It the only one I use to make fish cakes for the family. It's very very easy and a favourite with my kids - the perfect combination for me!

450 g floury potatoes, cubed
450 g smoked haddock
1 hard-boiled egg, chopped
2 tablespoons snipped chives
salt & freshly ground black pepper
2 tablespoons seasoned flour
1 egg, beaten
100 g white breadcrumbs
vegetable oil, for shallow frying

Steps:

  • Cook the potatoes in boiling, salted water and drain and mash well when tender.
  • Meanwhile, place the fish in a saute or frying pan and cover with boiling water; Bring to the boil and simmer for 5 minutes until just cooked.
  • Drain the fish and remove the skin; Flake the fish with a fork, discarding any bones.
  • Mix together the potatoes, fish, boiled egg, chives and salt and pepper; Using your hands, shape the mixture into 4 or 8 even sized cakes.
  • Dust the fish cakes with the seasoned flour, dip in the beaten egg, then coat in the breadcrumbs, making sure they are fully covered.
  • Heat the oil in a frying pan and shallow-fry for 3-4 minutes on each side until crisp and golden.

1 (6 ounce) package seasoned stuffing mix (your favorite flavor)
3/4 cup water
1/3 cup mayonnaise
2 (6 ounce) cans tuna, drained and flaked
1 tablespoon lemon juice
1 cup cheddar cheese, shredded
1 green onion, chopped
tartar sauce (optional)

Steps:

  • Mix all ingredients together.
  • Cover and refrigerate for 10 minutes.
  • Heat a large non stick skillet sprayed with cooking spray over medium.
  • Using a 1/3 cup measure shaped the tuna mixture into patties.
  • Add to skillet.
  • Cook 3 minutes on each side turning carefully until golden brown on both sides.
  • Can be served with tartar sauce.

3 spring onions
1/2 red capsicum
2 potatoes, cold, cooked
1 teaspoon creole seasoning
375 g fish fillets
2 eggs
1 tablespoon flour
1 teaspoon salt
1/4 cup parsley, chopped
1/4 cup oil
1 tablespoon butter

Steps:

  • Slice onions finely.
  • Chop the flesh of the capsicum finely.
  • Cut the potatoes into 1cm cubes.
  • Place all into a bowl with the Creole seasoning.
  • Cut the fish into small pieces and mix through the potato mixture with the eggs, flour, salt and parsley.
  • Heat frypan and add oil and butter.
  • Cook 1 Tbs of the mixture, turning to brown both sides.
  • Place fritters on absorbent paper.
  • Serve with Corn Salsa, relish or a fruit chutney.
