Steps:

  • Cut a sheet of thawed frozen puff pastry lengthwise into five strips, then cut crosswise into thirds to make 15 rectangles. Slice each rectangle diagonally to make 30 triangles. Spoon 1/2 teaspoon goat cheese onto each triangle and top with a quartered fig. Wrap the pastry around the fig and press to seal. Place on a parchment-lined baking sheet, brush with beaten egg and bake at 400˚ until puffed and golden, 18 to 20 minutes.

2 pints Mango Sorbet, recipe follows
1 1/2 pints good raspberry sorbet, softened
1 pint good strawberry ice cream, softened

Steps:

  • Freeze an 8-inch bowl. When it's cold, place the mango sorbet in the bowl and press it against the sides of the bowl. If you have a 6 1/2-inch bowl the same shape as the 8-inch bowl (such as from a set of nesting bowls), cover it with plastic wrap and press it into the sorbet to make the layer even. Freeze the sorbet for 30 minutes or until firm. Remove the 6 1/2-inch bowl.
  • Spread an even layer of softened raspberry sorbet on top of the mango sorbet (a 4 1/2-inch nesting bowl wrapped in plastic wrap helps with this) and freeze for another 30 minutes or until firm. Remove the 4 1/2 inch bowl.
  • Finally, spoon in enough softened strawberry ice cream to fill the bowl. Freeze until hard.
  • To unmold, dip the bowl up to the rim in warm water. Run a knife around the edge to loosen the bombe and unmold upside down onto a flat plate. You may need to run a flexible metal spatula along the edge of the bombe to release it. Freeze until ready to serve. Serve in wedges.
  • Mango Sorbet:
  • 3/4 cup sugar
  • 5 large ripe mangoes, peeled and seeded
  • 1/4 cup freshly squeezed orange juice
  • 1/4 teaspoon kosher salt
  • Place the sugar and 1/2 cup water in a small saucepan and cook until the sugar dissolves. Set aside.
  • Place the mangoes in a food processor fitted with the steel blade and puree. You should have about 5 cups of mango. If you want a smoother sorbet, you can process the puree through a food mill fitted with a medium blade.
  • Combine the mango, sugar syrup, orange juice, and salt and refrigerate until cold. Freeze in an ice cream machine according to the manufacturer's directions. (The sorbet will be soft.) Serve directly from the ice cream machine.
  • Yield: 1 1/2 quarts; 6 servings

12 fresh figs
1/3 cup plus 2 tablespoons sugar
1/2 cup water
1/4 cup plus 1 tablespoon Grand Marnier or other orange-flavored liqueur
1 cup chilled heavy cream

Steps:

  • Preheat oven to 300°F.
  • Prick bottom of each fig several times and stand figs in a buttered 9- to 10-inch flameproof gratin dish or ovenproof skillet. Sprinkle figs with 1/3 cup sugar, then add water to dish.
  • Bake figs in middle of oven, basting twice with pan juices, until tender, about 30 minutes. Transfer dish to stovetop, then add 1/4 cup Grand Marnier and bring to a boil over moderately high heat. Remove from heat and carefully ignite pan juices. After flames subside, juices should be syrupy. If pan juices are too thin, transfer figs to a shallow serving bowl, then boil juices until syrupy and slightly thickened, 3 to 5 minutes, and pour over figs.
  • Beat cream with remaining 2 tablespoons sugar and tablespoon liqueur using an electric mixer until it holds soft peaks.
  • Serve figs, warm or at room temperature, with syrup and cream.

MAPLE-FIG ICE CREAM

6 to 9 dried Calimyrna figs, stems trimmed (about 4 ounces)
1 1/3 cups heavy whipping cream, at room temperature
1/3 cup sugar
1/3 cup pure maple syrup (preferably grade B)
1/4 teaspoon kosher salt
4 large egg yolks, at room temperature
2 tablespoons sour cream
1 tablespoon brandy
Brandied Maple-Fig Sauce, recipe follows
Toasted pine nuts, for garnish
1/4 to 1/3 cup remaining fig puree
2 to 3 tablespoons pure maple syrup

Steps:

  • Bring 2 cups water and the figs to a simmer in heavy small saucepan over high heat. Cover and reduce the heat to medium-low and simmer, turning occasionally, until the figs are very tender, about 30 minutes. Transfer the figs and 1/2 cup of the cooking liquid to a food processor (or add some water to make 1/2 cup). Blend until the figs are pureed and no large lumps remain. Transfer to a small bowl, cover and chill. (Fig puree can be made 1 week ahead.)
  • Whisk the whipping cream, sugar, maple syrup, salt and egg yolks in a heavy large saucepan until blended. Whisk over medium heat until the custard thickens enough to coat a spoon (and the temperature registers 170 degrees F to 180 degrees F), 4 to 5 minutes. Remove the pan from the heat and immediately whisk 1/2 cup of the fig puree into the custard, reserving the remaining fig puree. Transfer the custard to a bowl and chill uncovered until cool, stirring occasionally, about 1 hour. Whisk in the sour cream and brandy.
  • Process the custard in an ice cream maker according to the manufacturer's instructions. Transfer to a bowl, cover tightly and freeze until firm, at least 6 hours and up to 3 days.
  • Scoop the ice cream into goblets or bowls. Spoon some Brandied Maple-Fig Sauce on top, sprinkle with pine nuts and serve.
  • Stir the fig puree, maple syrup and brandy in a small bowl until blended. Cover and chill until needed. (The sauce can be made 1 day ahead.)

WHITE PEPPER CRèME BRûLéE WITH FIG AND PRUNE COMPOTE

2 cups apple juice
3/4 cup diced dried Calimyrna figs (about 5 ounces)
3/4 cup diced dried pitted prunes (about 5 ounces)
1/2 teaspoon (packed) grated orange peel
2 1/3 cups whipping cream
1/3 cup half and half
1/2 teaspoon ground white pepper
1 5-inch piece vanilla bean, split lengthwise
8 large egg yolks
1/2 cup sugar
9 teaspoons raw sugar crystals

Steps:

  • Combine all ingredients in heavy medium saucepan. Bring to boil, stirring occasionally. Reduce heat to medium-low and simmer gently until figs and prunes are soft, about 10 minutes. Cool compote slightly. Transfer to small bowl. (Compote can be made 1 day ahead. Cover and refrigerate.)
  • Preheat oven to 325°F. Arrange six 3/4-cup ramekins or custard cups in 13x9x2-inch metal baking pan. Combine cream, half and half, and pepper in heavy medium saucepan. Scrape in seeds from vanilla bean; add bean. Bring cream mixture to simmer over medium heat. Cover; set aside 10 minutes to steep. Discard vanilla bean. Whisk egg yolks and 1/2 cup sugar in medium bowl to blend. Gradually whisk in warm cream mixture.
  • Divide custard among ramekins. Pour enough hot water into baking pan to come halfway up sides of ramekins. Bake custards until set in center, about 35 minutes. Remove custards from water; refrigerate uncovered until cold, about 2 hours. (Can be made 1 day ahead. Cover and keep refrigerated.)
  • Preheat broiler. Sprinkle 1 1/2 teaspoons raw sugar crystals over top of each custard. Place custards on small baking sheet and broil until sugar melts and browns, rotating sheet for even browning, about 3 minutes. Refrigerate custards uncovered until topping hardens, at least 1 hour and up to 3 hours.
  • Serve custards with compote.
