DORITO TACO BAKE RECIPE BY TASTY
Here's what you need: ground beef, taco seasoning, taco sauce, nacho cheese doritos, nonstick cooking spray, crescent dough, daisy sour cream, mozzarella cheese, mild cheddar cheese, topping of your choice

Steps:
- First get your oven preheated to 350°F (180°C).
- Then cook your meat so it's nice and browned. Once it's browned, add your 2 taco seasoning packets and cook it according to the directions on the back. Once that is done add your taco sauce and let the meat continue to cook for about 5 minutes on medium-low heat. Set your meat aside.
- Smash both bags of Doritos chips to crumbs.
- Now time to start layering . You'll need a 9 x 13-inch (23 x 33 cm) glass pan or 8 x 12-inch (20 x 30.5 cm). Spray with a generous amount of nonstick spray.
- Open your tube of crescent rolls and lay them out on the pan and spread it out to cover the bottom of the pan. Then you'll add about ¾ of the bag of smashed Doritos on top of that, spreading it out evenly. Now add the meat and spread it evenly. Add the whole container of sour cream and spread it evenly. Then add your 1 bag of cheddar cheese and right after the bag of mozzarella cheese (use the whole bag). Then top it off with the remaining Doritos (or enough to generously cover the top.
- Now place in oven and bake for 25-30 minutes, until the Doritos are slightly browned.

- Heat oven to 325°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In 2-quart saucepan, cook ground turkey over medium-high heat 4 to 6 minutes, stirring occasionally, until no longer pink; drain. Stir in seasoning mix from dinner kit and water. Cook as directed on box.
- Pour 1 can of the enchilada sauce into baking dish. Break taco shells from kit in half; layer half of the shells over sauce, overlapping if necessary. Top with turkey, onions and 1 cup of the cheese. Layer remaining shells over cheese. Pour remaining can of enchilada sauce over shells, coating well.
- Cover dish with foil. Bake about 30 minutes or until hot and bubbly. Remove foil; sprinkle remaining 1 cup cheese over top. Bake uncovered about 15 minutes longer or until cheese is melted. Top individual servings with lettuce, sour cream and taco sauce from kit.

I've "healthed it up" a bit, but you would never guess from the flavor and the servings are huge! The cookbook says this is 345 cals per serving, 13 g fat.

- Preheat oven to 350. Grease/spray a 13" x 9" casserole dish; set aside.
- In a bowl, stir together the cottage cheese, sour cream and chopped green onions.
- In a large skillet, brown/crumble ground beef with onion, green pepper and garlic. Drain and return to the skillet.
- Add to the skillet, tomatoes, Black beans, tomato paste, water and seasonings. Simmer for about 10-12 minutes, stirring occassionally.
- Scatter HALF of the coarsely crushed chips on the bottom of the prepared casserole dish.
- Top with HALF of the beef/bean mixture.
- Top with HALF of the cottage cheese/sour cream mixture.
- Sprinkle with HALF of the shredded cheese.
- Repeat all the layers again, ending with the last of the shredded cheese. Sprinkle top with black olives (optional) and reserved chopped dark green onion parts (optional).
- Bake at 350 for 25-30 minutes or until heated through.
- Divide shredded lettuce on plates and spoon casserole over top to serve.

MEXICAN FIESTA BAKE
This recipe is a favorite of my whole family; even the child who hates meat. I like to experiment with different cheeses or different salsas. I think there are supposed to be 6 servings in this dish but because everyone has seconds it serves 5 with no leftovers. For more servings increase to 1 1/2 lb beef and increase corn bread to 2 boxes and cheese accordingly. Bake in 9x9 or larger casserole dish.

- Preheat oven to 350 degrees.
- Number of servings depends on how many other things are available to eat and who is eating it. :o).
- Mix first six ingredients together until blended (I use my Kitchen Aid standing mixer).
- Pour half of this mixture into a casserole dish.
- Sprinkle with half of both of the cheeses.
- Top with the remaining dip mixture.
- Top that with the rest of the cheese.
- Bake 30 minutes or until bubbly.
- Serve with dippers of your choice. I love the scoops!
- This can be made ahead and refrigerated until ready to bake. Add about 5-10 minutes to baking time.
