Steps:
- Mix first 8 ingredients, set aside.
- Heat oil in an 8 or 10 inch cast iron skillet.
- Pour in half the batter.
- Sprinkle with half the cheese.
- Pour in remaining batter.
- Sprinkle with remaining cheese.
- Bake at 400 degrees for 30 minutes.

FIESTA CORN & AVOCADO SALAD
Steps:
- Cook the corn in a large pot of boiling salted water for 5 to 7 minutes, until just tender. Cool for 5 minutes and cut the kernels off the cob, cutting close to the cob with a sharp knife. Place the kernels in a large bowl with the tomatoes, bell pepper, onion, and jalapeno peppers.
- In a small bowl or glass measuring cup, whisk together the lime zest, lime juice, olive oil, garlic, chile powder, 1 teaspoon salt, and 1/2 teaspoon black pepper. Pour the dressing over the vegetables and toss.
- In a separate bowl, gently toss the avocados and lemon juice together, making sure the avocado is coated in lemon juice. Add to the vegetables, sprinkle with 1 teaspoon salt and 1/2 teaspoon black pepper, and carefully fold together without breaking up the avocados. Sprinkle with salt and serve cold or at room temperature.

- Combine dry ingredients in a large bowl; mix well.
- Add remaining ingredients, stirring only until dry ingredients are moistened.

- In a large skillet, cook sausage and onion over medium heat 6-8 minutes or until no longer pink, breaking into crumbles; drain., In a greased 13x9-in. baking dish, layer half of each of the following: cornbread, sausage mixture, corn and cheese. Repeat layers. In a small bowl, whisk eggs, milk, salsa and sour cream. Pour over layers. Refrigerate, covered, several hours or overnight., Preheat oven to 325°. Remove strata from refrigerator while oven heats. Bake, uncovered, 50-60 minutes or until golden brown and a knife inserted in the center comes out clean. Let stand 5-10 minutes before serving.

MEXICAN FIESTA GREEN CHILE CORNBREAD
I made this to go with my vegetarian chili tonight and really enjoyed it! This cornbread has a soft, almost custard like texture. Yum! Adapted from The Everyday Fiesta Cookbook.

Steps:
- Preheat oven to 350*F.
- Heat the oil in a 9-10 inch cast iron skillet or baking pan in oven.
- In a large bowl, sift cornmeal, flour, baking powder, sugar and salt. Add remaining ingredients to the bowl; stir mixture together.
- Remove the hot pan from the oven; pour in batter.
- Bake 25 minutes or until the cornbread is golden brown and the edges begin to pull away from the sides of the pan.
- Cool 5 minutes before cutting.
- Enjoy!
FIESTA CHILI CORNBREAD PIE
This is a quick meal and sort of like a pizza made with a corn bread crust. It makes two and is yummy. It makes a good Sunday night meal or great for the sports fan to munch on while cheering for their favorite team. This is a good recipe to use any Chili you have made and put in the freezer or you can use the canned.

- CORN BREAD CRUST:.
- Coat two 10-inch round baking pans lightly with oil and line bottoms with cooking parchment.
- Combine the muffin mix, corn, milk, and eggs in a large mixing bowl; mix well.
- Spoon half of batter into each of the pans.
- Bake for 20 min; cool in pans on wire rack for 10 minutes.
- Invert each crust onto a serving platter.
- FILLING:.
- Heat the Chili in a saucepan over medium heat till hot.
- Spread the Chili evenly over the prepared crusts.
- Sprinkle with cheddar cheese, Monterey Jack cheese, green onions, and ripe olives.
- Garnish with sour cream.

- Cook the corn according to package directions.
- In a nonstick skillet sprayed with nonstick cooking spray; melt the margarine.
- Add the onion and bell peppers.
- Saute gently, do not let the onion brown.
- Drain the corn and return it to the sauce pan.
- Add the onions and peppers to the corn.
- Add the chilies; and warm through.

I derived this recipe, after making the popular Jiffy Cornbread Mix Corn Casserole for many years. I was looking for something different and thought the Fiesta Corn would add a little zip to the already great recipe. Adding eggs and milk just makes it more fluffy.

- 1. Preheat oven to 450 degrees--heat oil in 10 in. cast iron skillet in oven.
- 2. Mix cornmeal, buttermilk and eggs to form thick batter. Add sour cream and mayo. Blend well. Add drained corn, jalapenos and cheese. Pour into heated skillet...batter should sizzle when it is poured into heated oil.
- 3. Bake at 450 degrees for 20-25 minutes. Glaze top with butter.

- Preheat the oven to 400 degrees F. Place a large skillet over medium heat. Add the ground beef and taco seasoning. Break the ground beef into small pieces as it browns. Stir in the black beans and tomatoes. Simmer until most of liquid has reduced to a thick paste.
- Prepare the cornbread: Mix all the dry ingredients together in a bowl. Mix the wet ingredients together in another bowl. Stir the wet ingredients into the dry ingredients until almost combined. Mix in the corn and green chilies. Stirring until everything is just combined. Don't over mix.
- Spread half of the cornbread mixture over the bottom of a buttered 8x12-inch or 9x13-inch baking dish.
- Layer in order one-half of each filling: bell peppers, green onions, black olives, cilantro, and one-third of the cheese over the cornbread.
