FIESTA CHILI
I have made this dish for a group of 40. Made sure I did not tell them it was turkey until they asked for the recipe. Everyone could not believe it was turkey. Everyone wants me to make it again. Top with shredded Cheddar cheese alongside Spanish rice and tortilla chips.

- Preheat oven to 450 degrees F (230 degrees C).
- Mix turkey, bacon, onion, bell pepper, and jalapeno pepper in a baking dish.
- Bake in preheated oven, stirring occasionally, until the turkey is completely browned and the bacon is crisp, about 15 minutes.
- Stir kidney beans, black beans, tomatoes, chili powder, cumin, salt, and cayenne pepper together in a large pot; bring to a boil and reduce heat to medium-low.
- Stir turkey mixture into the beans mixture. Cook chili at a simmer, stirring occasionally, until the beans are tender, about 40 minutes.

FIESTA CHILI-LIME CON CARNE
With a bit of a bite, this super flavorful chili is a perfect all-around gameday treat. We substituted Frank's hot sauce and the juice of one large lime in place of the chile'n lime hot sauce. It turned out great, but we would recommend using the sauce called for in the recipe if your grocery carries it.

- 1. Heat olive oil in a large saucepan over medium heat. Cook red bell pepper, yellow bell pepper, and sweet onion, until softened. Add the ground beef , two tablespoons taco seasoning, 1 tablespoon chili powder, garlic, and cook until browned.
- 2. Stir in tomato sauce, tomato paste, and zesty chili style diced tomatoes. Season with remaining taco sauce, remaining chili powder, paprika, cilantro flakes. Stir in salt and pepper.
- 3. Bring to a boil over high heat. Reduce heat to medium low. Cover, and simmer for 90 minutes, stirring occasionally.
- 4. Stir in chili beans, and chile lime hot pepper sauce. Continue to simmer for an additional 30 minutes. In a small bowl, whisk together the flour, corn meal, and water until smooth. Stir into chili, and cook for a further 10 minutes, or until chili has thickened up. Garnish with fresh cilantro, Mexican cheese, tortilla chips, sour cream, salsa, etc. The possibilities are endless! Serves:8, prep time: 30 minutes, cooking time: 2 hours
CHICKEN FIESTA CHILI MAC
This is super good. I used Adobo Seasoning from Penzeys to season the chicken and some leftover chili in my freezer. I also used Ronzoni Smart Taste mini penne in place of the elbows. Recipe comes from "Velveeta -- Crowd Pleasing Recipes".

- PREHEAT oven to 350°F Cook macaroni as directed on package. Meanwhile, cook chicken in large nonstick skillet sprayed with cooking spray 5 to 7 minute or until cooked through, stirring frequently.
- DRAIN macaroni. Add to chicken in skillet. Stir in chili, peppers, garlic, VELVEETA and salsa. Spoon into 13x9-inch baking dish sprayed with cooking spray.
- BAKE 20 minute or until heated through. Stir before serving.
- Jazz It Up: For added heat, add 1 teaspoons hot pepper sauce to the chicken mixture before spooning into prepared baking dish.

- CORN BREAD CRUST:.
- Coat two 10-inch round baking pans lightly with oil and line bottoms with cooking parchment.
- Combine the muffin mix, corn, milk, and eggs in a large mixing bowl; mix well.
- Spoon half of batter into each of the pans.
- Bake for 20 min; cool in pans on wire rack for 10 minutes.

Steps:
- 1. Brown the beef, pork and chorizo in a nonstick skillet. Drain off the fat.
- 2. Heat oil in a heavy pot over low heat; cook onions, garlic, and bell peppers for 15 minutes or until tender. Stir in the next 9 ingredients; cook 2 to 3 minutes to mellow the flavors.
- 3. Add jalapeños, tomatoes, tomato sauce, beans, and the browned meats. Heat through. Add beer, then simmer 15 minutes, stirring once or twice. Season with salt. Serve with grated cheese, if desired.
