2 tablespoons GOYA® Extra Virgin Olive Oil, divided
4 (5 ounce) boneless, skinless chicken breast fillets
GOYA® Adobo All-Purpose Seasoning with Pepper, to taste
½ red onion, finely chopped
½ red bell pepper, finely chopped
1 (15.5 ounce) can GOYA® Low Sodium Black Beans, drained and rinsed
½ cup fresh corn kernels
1 avocado, finely chopped
1 tablespoon GOYA® Lemon Juice
1 tablespoon finely chopped fresh cilantro

Steps:

  • Heat 1 tbsp. oil in large skillet over medium-high heat. Season chicken with Adobo. Cook chicken, flipping once, until golden brown on both sides and cooked through, 5- 7 minutes. Transfer chicken to plate; tent with foil to keep warm.
  • Heat remaining oil in skillet. Add onions and peppers. Cook, stirring, until tender, about 5 minutes. Stir in black beans and corn. Continue cooking until warmed through, about 2 minutes. Remove pan from heat. Stir in avocado, lemon juice and cilantro until combined.
  • Divide chicken among serving plates; top with black bean mixture. Serve warm.

1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
2 small tomatoes, chopped
1/3 cup picante sauce
1 medium green pepper, chopped
1 small onion, chopped
2 to 3 teaspoons chili powder
12 corn tortillas (6 inches), cut into 1-inch strips
3 cups cubed cooked chicken
1 cup shredded Colby cheese

Steps:

  • In a large bowl, combine the soups, tomatoes, picante sauce, green pepper, onion and chili powder. In a greased 13x9-in. baking dish, layer half of the tortilla strips, chicken, soup mixture and cheese. Repeat layers. , Cover and bake at 350° until bubbly, 40-50 minutes. Freeze option: Cover and freeze unbaked casserole. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

I am so in love with this Southwestern Fiesta Chicken! It's so good, quick and easy. It's perfect for throwing together on a weeknight, and it's a million times better than anything you'll get at a restaurant!

Number Of Ingredients 15

1 cup long grain white rice
2 cups water
1 teaspoon salt
juice of 1 lime
2-3 tablespoons cilantro, chopped
1 pound boneless, skinless chicken breasts
1 envelope (3 tablespoons) taco seasoning
2 tablespoons olive oil
2 cups diced onion (about 1 onion)
2 cups diced bell peppers (about 3 bell peppers)
2 cups corn (fresh or frozen)
3-4 cloves garlic, minced
1 (14.5 ounce) can black beans, drained
1 (10 ounce) cans Ro-Tel Diced Tomatoes and Green Chiles, drained
1 avocado, diced

Steps:

  • Add the rice, water, salt, lime juice, and cilantro to a medium pot. Stir well. Bring to a boil, then cover, reduce heat to low, and simmer for 14 minutes. Set aside and keep covered.
  • Meanwhile, cut the chicken into bite-sized pieces. Season with half of taco seasoning. In a very large skillet or dutch oven, heat the olive oil over medium-high heat. Add the chicken in a single layer and cook for 5 minutes, until golden brown, flipping once halfway through. Remove to a plate and set aside.
  • In the same skillet, increase the heat to high, and add the onions, bell peppers, corn, and remaining taco seasoning. Cook, stirring occasionally, until veggies are slightly blackened. Decrease heat to low, add garlic, and stir until combined and fragrant, about 30 seconds.
  • Add the drained black beans and tomatoes, rice, and chicken. Stir all to combine. Garnish with extra chopped cilantro and top with diced avocado. Serve and enjoy!! :)

1 lb lean ground chicken
1 teaspoon oil
1 (9 1/2 ounce) package , kraft deluxe white cheddar on rotini pasta & sauce
2 1/2 cups hot water
1 (19 fluid ounce) can chili-style stewed tomatoes, undrained
1 teaspoon ground cumin
1 (19 fluid ounce) can black beans, drained and rinsed
2 green onions
6 tablespoons sour cream (optional)
6 tablespoons salsa (optional)

Steps:

  • Cook chicken in oil in a large nonstick skillet on medium heat 5 to 7 minutes or until no longer pink, stirring frequently.
  • Add pasta, hot water, tomatoes with their liquid and the cumin; mix well. Bring to a boil. Reduce heat to medium-low; cover and simmer 10 minutes.
  • Stir in beans and contents of the Cheese and contents of the cheese pouch; cook until heated through, stirring occasionally. Sprinkle with onions. Serve with a heaping tablespoon each of sour cream and salsa on the side, if desired.
  • NOTE: Use your favorite beans, such as kidney or black beans and you can substitute 1/4 cup chopped fresh cilantro for the green onions.
