Add a little Mexican flair to your potatoes with this recipe. Simple to prepare using only our Au Gratin Homestyle Casserole and a few Mexican food staples. Best served topped with crushed tortilla chips.

¾ cup chunky-style salsa
1 (8 ounce) can corn
½ cup shredded Mexican cheese
1 (5 ounce) can diced chicken, drained
Tortilla chips

Steps:

  • Prepare Idahoan Au Gratin Homestyle Casserole according to stovetop or oven directions.
  • Add salsa, corn, cheese and chicken in the last 5 minutes of cook time.
  • Finish cooking until all ingredients are heated through and sauce is thickened.
  • Top with crushed tortilla chips.

This is one of the first dishes I made in Home Economics class, but it wasn't until after I graduated that I learned about adding Parmesan and Gruyere for a more sophisticated version.

Number Of Ingredients 8

1/3 cup unsalted butter, softened
1 1/2 pounds Idaho potatoes, peeled and cut into 1/4-inch-thick slices
1/2 cup grated Gruyere
1/2 cup freshly grated Parmesan
1 cup heavy cream
1 teaspoon salt
1/2 teaspoon ground black pepper
1/8 teaspoon paprika

Steps:

  • Preheat the oven to 350 degrees F.
  • Butter a 1 1/2 quart baking dish with about 1 tablespoon of the softened butter.
  • Arrange a layer of potatoes in the baking dish, and sprinkle some of the cheeses over them. Continue layering potatoes and cheeses until you've used them all, ending with a layer of potatoes.
  • In a small bowl, whisk the cream with the salt and pepper; pour this over the potatoes. Dot the remaining butter over the top and sprinkle with the paprika. Bake for 1 to 1 1/4 hours, or until the potatoes are tender and golden brown on top. Let stand for 5 minutes before serving.

1 box idahoan au gratin potatoes
3/4 c chunky style salsa from a jar ( you choose the heat )
1 small can of whole kernal corn, drained ( i like green giant, could use the mexian blend one )
1/2 c shredded mexian blend cheese
1 small can of chicken ( drained )
1 bag of tortilla chips to crush for topping

Steps:

  • 1. Prepare one box of Au Gratin Homestyle Casserole , by the Directions on the Box, can use Stove Top OR Oven , ( I Like the Oven )
  • 2. Use Cook time on the box and to prepare, Cook untill the last 5 or 10 Minutes - Take Out of Oven and add all the Ingredients EXCEPT the Crushed Tortills, carefully mixing them in. - Put Back in Oven and Finish Cooking Untill Hot and Sauce is Thickened . - Take out of Oven and Top with the Crushed Tortillas .

  • Rinse, peel and slice each potato into ¼" thick slices. Next, slice the onion as thinly as possible. Place it, along with the sliced potatoes and salt, in a large pot and add enough water to cover by 1". Place the pot over high heat, bring to a boil then immediately reduce the heat to medium-low. Simmer gently until the potatoes are cooked through but still firm—approximately 5–10 minutes.
  • While the potatoes and onions are simmering, melt butter in a large skillet over medium heat. Whisk in flour and cook for 1 minute, stirring constantly. Pour in chicken broth, whisk until smooth then stir in milk, garlic powder, ½ tsp salt, pepper and both cans of green chilies. Bring the mixture to a bubble, reduce heat to medium-low and simmer for 6 minutes, stirring frequently.
  • Remove the skillet from heat, stir in both cheeses then transfer sauce to a large bowl and set aside. Drain potatoes and onions into a colander then add them to the cheese mixture. Gently stir until each potato slice is coated in the sauce. Taste and season with salt and pepper if needed.
