1 pound uncooked pasta
1 pound ground beef
1 onion, chopped
6 ½ cups tomato pasta sauce
6 ounces provolone cheese, thinly sliced
1 ½ cups sour cream
6 ounces mozzarella cheese, shredded
½ cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water until al dente. Drain.
  • Meanwhile, cook ground meat and onion in a skillet over medium heat, stirring frequently, until meat is browned. Stir in pasta sauce, reduce heat, and simmer for 15 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish. Layer the ingredients in the prepared baking dish as follows: half of the cooked pasta, all the provolone cheese, all the sour cream, half of the sauce mixture, remaining pasta, mozzarella cheese, and remaining sauce mixture. Top with grated Parmesan cheese.
  • Bake in preheated oven for 30 minutes, or until bubbly.

I don't believe in serving kids macaroni and cheese every day. It should be treated as an indulgence, because that's what it is. This is my version of the classic macaroni and cheese Xea's grandmother makes. Older kids can easily make this by themselves. Add a big green salad and they can have dinner ready before you get home from work!

Kosher salt
1 pound penne rigate pasta
1 stick (1/2 cup) unsalted butter
1/4 cup all-purpose flour
3 cups heavy cream
1/4 teaspoon freshly grated nutmeg
1 tablespoon seasoned salt, such as Lawry's
1 teaspoon freshly ground black pepper
1/2 pound shredded whole-milk mozzarella cheese
1/2 pound shredded Cheddar cheese
1/2 cup shredded Parmigiano-Reggiano cheese
1/2 cup dried breadcrumbs (preferably panko)

Steps:

  • Preheat the oven to 350 degrees F.
  • Prepare the penne rigate according to the package directions, minus 1 or 2 minutes of cooking time (see Cook's Note). Drain, then pour the pasta into a 9-by-13-inch glass baking pan.
  • In a 4-quart saucepan, melt the butter on medium-low heat. Whisk in the flour until it's dissolved. Add the cream to the saucepan. Add the nutmeg, seasoned salt, and black pepper and whisk the mixture until it's warmed through.
  • Reduce the heat to low, and add the mozzarella, Cheddar, and Parmigiano-Reggiano. Stir until you have a smooth cheese sauce.
  • Pour the sauce over the pasta and top with the breadcrumbs.
  • Bake for about 40 minutes, until the top turns a golden brown.

3 cloves garlic, minced
1/2 teaspoon dried herbes de Provence or dried rosemary, crumbled
1 tablespoon unsalted butter
1 tablespoon extra-virgin olive oil
1/4 cup brandy
1 cup heavy cream
3 ounces soft mild goat cheese such as Montrachet, crumbled (about 1/3 cup)
3 ounces Gorgonzola cheese, crumbled (about 3/4 cup)
1/2 cup freshly grated Parmesan cheese (about 2 ounces)
3/4 pound tricolored rotelle (corkscrew-shaped pasta) or other multicolored pasta

Steps:

  • In a large heavy skillet cook garlic and herbs in butter and oil over moderate heat, stirring, until garlic is softened but not browned. Remove skillet from heat. Add brandy and ignite, being careful as flames shoot up. Shake skillet gently until flames die out. Return skillet to moderate heat and stir in cream.
  • Add cheeses, 1 at a time, stirring until each cheese melts before adding the next. Cook sauce at a bare simmer until thickened slightly, about 8 minutes. Keep sauce warm.
  • In a kettle of boiling salted water cook pasta until al dente and reserve about 1/2 cup cooking water. Drain pasta well and in a bowl toss pasta with sauce and enough reserved cooking water to reach desired consistency.

1 cup crushed tomatoes in thick tomato puree
1/2 cup freshly grated Pecorino Romano (1 1/2 ounces)
1/2 cup shredded imported Italian fontina (1 1/2 ounces)
1/4 cup crumbled Italian Gorgonzola (1 1/2 ounces)
2 tablespoons ricotta cheese
1/4 pound fresh mozzarella, sliced
6 fresh basil leaves, chopped
1 pound imported penne rigate pasta
4 tablespoons (1/2 stick) unsalted butter

Steps:

  • Preheat the oven to 500 degrees F.
  • Bring 5 quarts of salted water to a boil in a stockpot.
  • Combine all the ingredients except the penne and butter in a large mixing bowl. Mix well. Drop the penne into the boiling water and parboil for 4 minutes. Drain well in a colander and add to the ingredients in the mixing bowl, tossing to combine. Divide the pasta mixture among 6 shallow ceramic gratin dishes (1 1/2 to 2 cup capacity). Dot with the butter and bake until bubbly and brown on top, 7 to 10 minutes.

1 cup heavy cream
4 ounces mascarpone cheese
6 ounces gorgonzola, mashed
1/2 cup hazelnuts
1/2 cup freshly grated parmesan cheese
1 lb fettuccine
1/4 cup chopped fresh flat-leaf parsley
fresh ground pepper (to taste)

Steps:

  • Heat large pot of water to boiling for pasta. When water comes to a boil, add salt.
  • Meanwhile, heat cream and mascarpone in medium saucepan over medium-low heat about 2 minutes; do not allow to boil. Stir in Gorgonzola and cook, stirring occasionally, until melted, about 5 minutes.
  • Toast hazelnuts at 350 degrees (you can use toaster oven) until golden, 8-10 minutes. Cool slightly, then finely chop, discarding any skins that fall off. Transfer to large serving bowl and add Parmesan.
  • Cook fettuccine in boiling water until tender but still firm to the bite; drain.
  • Add pasta to hazelnuts. Pour cheese sauce over pasta, add parsley and pepper, and toss to combine. Serve immediately with additional pepper, if desired.

Salt and freshly ground black pepper
1 tablespoon olive oil
1 pound dry fettuccine
1/4 pound grated Parmigiano-Reggiano
1/4 pound grated Pecorino Romano
1/2 pound (1/2-inch cubes) diced smoked mozzarella
20 fresh basil leaves, chopped

Steps:

  • Cut the tomatoes in 1/2. In a large mixing bowl, add a pinch of salt, freshly ground black pepper and olive oil with the tomatoes and massage them lightly with your hands. Boil 1 gallon of water in a large pot, and add 1 teaspoon of salt. Add the fettuccine, and cook to al dente. Drain well. Next, add the hot cooked pasta on top of the tomatoes in the bowl, then add Parmigiano and pecorino. Toss gently until the cheeses melt evenly around pasta. Add smoked mozzarella and toss. Add fresh basil and toss.

While surfing Pinterest one day, I stumbled upon this recipe that sounded so good and comforting. The Gouda cheese puts this one over the top creamy and rich. Don't forget the nutmeg!!! I served this with homemade Bruschetta but a side salad would be perfect too.

4 ounces sharp cheddar cheese
4 ounces mozzarella cheese
1 1/2 ounces gouda cheese
1/2 onion, small dice
2 garlic cloves, minced
1 tablespoon butter
1 tablespoon flour
1 cup skim milk
14 1/2 ounces low sodium chicken broth
2 Italian sausages
1 pinch nutmeg
1 teaspoon kosher salt
1/2 teaspoon black pepper
1 lb gemelli pasta

Steps:

  • Bring a large pot of slightly salted water to boil. Add the pasta once it is boiling and cook until the pasta is just under al dente (slightly resistant still). Preheat the over to 350 degrees.
  • Shred all the cheeses and set aside. Begin to cook the sausage by heating a small skillet to medium heat & removing the meat from the casing. Use a wooden spoon to break apart the sausage for even cooking.
  • In a medium saucepan, melt the butter over medium heat then add the onion. Saute until translucent and very fragrant about 5 minutes. Add the garlic and cook an additional minute.
  • Mix in the flour, let it cook for about 30 seconds.
  • Add the chicken stock & milk, continuously whisking. SLOWLY add the 3 cheeses to the mixture about a small handful at a time. Add the next bit once the previous is completely melted and creamy within the liquid. When all the cheese is added reduce the heat to low and stir in the nutmeg, salt and pepper.
  • In a baking dish, combine the cooked pasta, sausage, and cheese sauce.
  • Bake in the oven for about 10 minutes. Remove and garnish with chopped parsley.
