1 large yellow tomato, seeded and diced
1 small yellow squash, finely diced
1/2 cup chopped fresh chives (about 1 small bunch)
Finely grated zest of 1 lemon
3 tablespoons extra-virgin olive oil
4 ounces soft goat cheese, crumbled
12 ounces dried egg fettuccine
4 ounces wax beans (about 2 cups), trimmed and halved lengthwise
1/4 cup grated parmesan cheese

Steps:

  • Bring a large pot of salted water to a boil. Toss the tomato, squash, chives, lemon zest and 2 tablespoons olive oil in a large bowl. Season with salt. Sprinkle in half of the goat cheese. Add the pasta to the boiling water and cook as the label directs, adding the wax beans to the pot during the last 3 minutes of cooking. Reserve 1/4 cup of the cooking water, then drain the pasta and beans and add to the bowl with the vegetables. Drizzle with the reserved cooking water and the remaining 1 tablespoon olive oil and toss until the goat cheese begins to melt. Add the parmesan and toss. Vegetable oil cooking spray
Four 1/4-inch-thick slices prosciutto
1 recipe Fresh Pasta, recipe follows
All-purpose flour, for dusting
Kosher salt
1 tablespoon extra-virgin olive oil
1 1/2 cups (about 7 ounces) dried Mission figs, stemmed and quartered
1/2 cup low-sodium chicken broth
1/2 cup fresh orange juice
1 tablespoon fresh thyme leaves
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup (4 ounces) goat cheese, at room temperature, crumbled
1/2 cup (4 ounces) mascarpone cheese, at room temperature
Zest of 1 large lemon
2 cups cake flour
1 cup all-purpose flour, plus extra for dusting
4 large egg yolks, at room temperature
1/8 teaspoon kosher salt
1/4 cup extra-virgin olive oil

Steps:

  • Place an oven rack in the center of the oven. Preheat the oven to 400 degrees F. Spray a heavy baking sheet with vegetable oil cooking spray.
  • Arrange the prosciutto in a single layer on the prepared baking sheet. Bake for about 10 minutes until crispy. Drain on paper towels. When cool enough to handle, crumble the prosciutto into 1/2-inch pieces.
  • Cut the pasta dough in quarters and press flat. Run each piece of pasta dough several times through a pasta-rolling machine, adjusting the setting each time until the pasta is about 1/16-inch thick. Add the fettuccine attachment and run the pasta sheets through. Dust the fettuccine lightly with flour to avoid sticking.
  • Bring a large pot of salted water to a boil over high heat. Add the olive oil and pasta. Cook until tender but still firm to the bite, stirring occasionally, 4 to 5 minutes. Place the pasta in a large serving bowl.
  • For the sauce: In a medium saucepan, combine the figs, broth, orange juice, thyme, salt and pepper. Bring to a boil over medium heat. Reduce the heat and simmer for 5 minutes. Remove the pan from the heat. Stir in the goat cheese, mascarpone cheese and lemon zest until the sauce is creamy.
  • Pour the sauce over the cooked pasta and toss until all the ingredients are coated. Top with the crumbled prosciutto and serve.
  • Place the cake flour, all-purpose flour, egg yolks and salt in a food processor. Pulse to combine. With the machine running, gradually add the oil then 1/3 to 1/2 cup water until the mixture forms a dough (the dough should stick together if pinched between your fingers). If necessary, add additional water, 1 teaspoon at a time if the dough is too dry.
  • Place the dough on a lightly floured surface. Gather the dough into a ball and knead until the dough is smooth, 5 to 8 minutes. Cover with plastic wrap and refrigerate for 30 minutes.
  • Cut the dough into quarters and press flat. Run each piece of pasta dough several times through a pasta-rolling machine, adjusting the setting each time, until the pasta is about 1/8 to 1/16-inch thick. Cut the pasta into the desired shape and use as needed.

1 cup oyster mushroom, sliced
1 tablespoon shallot, minced
1 tablespoon garlic, minced
1/4 cup sun-dried tomato (reconstituted)
3 tablespoons white wine
1 tablespoon fresh basil, chopped
1 lb spinach fettuccine, cooked
salt and pepper
1/8 cup goat cheese, crumbled

Steps:

  • In an extra large skillet, place the oil and heat it on medium until it is hot.
  • Add the mushrooms, shallots, garlic and sun-dried tomatoes.
  • Saute the ingredients for 2 to 3 minutes or until the mushrooms are slightly cooked.
  • Add the wine and stir it.
  • Cook the ingredients for 1 minute.
  • Add the basil and stir.
  • Add the pasta, salt and pepper.
  • Mix the ingredients together thoroughly so that the pasta is well coated.
  • Add more oil if the pasta seems dry.
  • Place the pasta on a serving plate.
  • Sprinkle the goat cheese on top.

2 tablespoons olive oil
1 cup chopped green onions
2 cloves garlic, minced
1 (5 ounce) creamy goat cheese log
½ cup grated Parmesan cheese
1 pinch cayenne pepper, or more to taste
2 sheets frozen puff pastry, thawed
½ pound zucchini, thinly sliced
½ pound roma tomatoes, thinly sliced
salt and ground black pepper to taste
1 teaspoon olive oil, or as needed
2 tablespoons thinly sliced basil leaves

Steps:

  • Heat 2 tablespoons olive oil in a skillet over medium heat; cook and stir green onions in the hot oil until softened, about 3 minutes. Add garlic; cook until fragrant, about 1 minute. Remove from heat.
  • Combine goat cheese, Parmesan cheese, and cayenne pepper in a small bowl; stir with a fork until blended.
  • Gently flatten each puff pastry sheet with a rolling pin on a lightly floured surface. Cut each sheet into four squares. Lightly cut a border about 1/4-inch from the edges of each square using a sharp knife, not going all the way through the dough.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Arrange puff pastry squares on a baking sheet; spread goat cheese mixture on each square. Top each square with onion mixture. Chill in refrigerator for 5 to 10 minutes.
  • Arrange zucchini and tomato slices in a pattern on each puff pastry square, allowing vegetables to overlap. Season with salt and black pepper. Drizzle with about 1 teaspoon olive oil.
  • Bake in the preheated oven until puff pastry is golden brown and puffed, about 20 minutes. Garnish with basil strips.
