2 cloves garlic
1 jar Bertolli® Alfredo with Aged Parmesan Cheese Sauce
2 cans (6.5 oz. ea.) chopped clams drained (reserve 1/3 cup liquid)
2 tbsp. dry sherry (optional)
8 ounces linguine cooked and drained

Steps:

  • 1 Heat olive oil in 3-quart saucepan over medium heat and cook garlic, stirring occasionally, 30 seconds. Stir in sauce, clams, reserved clam liquid and sherry. Simmer, stirring occasionally, 3 minutes or until heated through. Serve over hot linguine and garnish, if desired, with chopped fresh parsley.

Take white clam sauce to the next level! This creamy and easy-to-make dinner will impress guests, but it's quick enough to make as a weeknight meal!

1 10 oz can whole baby clams, undrained
4 large cloves garlic (minced)
1/4 tsp oregano
1 cup cream*
1 tsp salt
1/2 tsp pepper (I used white but black will do)
1 tbsp butter
4 tbsp finely chopped fresh flat-leaf parsley**
1 lb fettuccini cooked per package directions

Steps:

  • *Heavy cream is preferred, but half-and-half or light cream may be used but you'll probably have to thicken the sauce.
  • **Fresh parsley is highly recommended for the flavor. But if you don't have it, 2 tbs of the dehydrted from the jar will do in a pinch.
  • Melt the butter in a small saucepan over medium heat.
  • Add the garlic and let it saute for about 1-2 minutes. Don't let it brown.
  • Add the can of clams, including the liquor they are packed in.
  • Add the salt, pepper and oregano and bring to a boil over medium heat.
  • Continue cooking uncovered over medium heat until the liquid is reduced by about 25 % (about 10 minutes)
  • Reduce heat and stir in the cream--do let it boil.
  • If you used heavy cream, the sauce should be thick enough, but if you used half-and-half or light cream, you may have to thicken--
  • TO THICKEN IF DESIRED:
  • Mix 1 tbs of cornstarch in 2 tbs cold water and add to the sauce, stirring constantly over medium heat until mixture thickens, about 1 minute.
  • Serve over hot pasta and top each serving with 1 tbs of the finely chopped *fresh* parsley. (1/2 tbs each if using the dehydrated)

½ cup olive oil
1 large onion, chopped
6 cloves garlic, minced
1 pinch red pepper flakes, or to taste
1 ¾ cups half-and-half cream
3 (6.5 ounce) cans minced clams, drained with juice reserved
¼ cup grated Parmesan cheese for topping
1 (8 ounce) package dried linguine pasta

Steps:

  • Heat olive oil in a large skillet over medium-high heat. Add onion and red pepper flakes, and cook stirring constantly until onion is tender. Add garlic, and cook for a couple of minutes, just until fragrant. Pour in the reserved clam juice, and simmer over low heat for 10 minutes.
  • Gradually stir the half-and-half cream into the skillet, and simmer for another 20 minutes, but do not boil. At this time, I like to prepare my linguine and garlic bread.
  • Bring a large pot of lightly salted water to a boil. Add linguine pasta, and cook for 8 to 10 minutes, until al dente.
  • Add clams to the sauce, and cook just until clams are heated through, or they will become tough and chewy. Remove from heat, and serve over linguine pasta. Top with a sprinkle of grated Parmesan cheese.

Steps:

  • Saute garlic and parsley over medium heat in butter and olive oil; do not brown garlic.
  • Add reserved clam juices, heavy cream and wine.
  • Simmer, uncovered until mixture is reduce to thin sauce consistency for about 10 minutes.
  • Season with salt and pepper to taste.
  • Add clams and warm through.
  • Add cooked linguine to pan and toss to coat.
  • Top with Parmesan cheese and serve.

This is my own sauce, though I'm sure it is similar to many others. I usually use this with fettuccini, but it is excellent with black/squid ink pasta.

2 tablespoons butter
1 (10 ounce) can whole clams
2 garlic cloves, smashed (lay garlic clove on board and smash, remove skin, do not chop)
1 (8 ounce) bottle clam juice
1 cup white wine
1/2 cup heavy cream
1 medium tomatoes, chopped (see note) (optional)

Steps:

  • Melt butter in heavy skillet over med/low heat.
  • Add whole clams with juice, and garlic. Cook over low heat until clams are heated through and edges begin to curl.
  • Remove clams. Add the bottle of clam juice, white wine and heavy cream. Cook about 10 min to reduce slightly. This sauce will be thin. You want a bit of broth in your dish.
  • Remove garlic cloves
  • Add clams back into sauce and toss with your preferred pasta. I usually use fettuccini
  • Note: I often like to add a chopped tomato to this sauce. You would add the tomato after the 10 min cooking time, just to warm the chopped tomato.

Steps:

  • While cooking fettucini noodles to desired doneness.
  • Drain clams, reserving liquid.
  • Brown garlic until golden in butter (or margarine) in a medium sized sauce pan.
  • Add clam juice and wine.
  • Bring to a boil.
  • Boil for 5 minutes or until sauce is reduced to a little more than half a cup.
  • Reduce heat and add the soup, clams and cheese.
  • Cook until heated through stirring occasionally.
  • Serve over fettucini noodles and garnish with parsley or lemon slices.
  • Note: I like to serve this with a small salad and warm sourdough bread (instead of traditional garlic bread).

1/4 cup extra-virgin olive oil
1 teaspoon red pepper flakes
4 to 6 cloves garlic, finely chopped
1 tin flat fillet of anchovies, drained, 6 or 7 fillets
2 tablespoons fresh thyme leaves, 4 or 5 sprigs stripped or 1 1/2 teaspoons dried
1 cup dry white wine
1 cup clam juice or chicken stock
1 can (15 ounces) fancy whole baby clams
1 lemon, zested
1 pound linguini, slightly undercooked, about 6 to 7 minutes
1/4 cup chopped parsley leaves
Lots of black pepper and some coarse salt
Crusty bread, for mopping

Steps:

  • Heat a large deep skillet over medium heat. Add extra-virgin olive oil, 4 turns of the pan in a slow stream, red pepper flakes, garlic and anchovies and cook until anchovies melt into the oil. Add thyme and wine. Reduce wine 1 minute. Add clam juice or stock, clam juice will give the dish a stronger clam flavor, chicken stock will give it a buttery personality. Stir in clams and lemon zest. Drain pasta. Add to skillet and toss with sauce 2 to 3 minutes, until pasta is al dente and has absorbed some of the sauce and flavor. Add parsley, pepper and salt, to your taste and serve with bread for mopping up remaining juices.

This is a light, delicious clam sauce in a white wine sauce. I used 1/2 of a very large (51 oz) can of chopped clams, which I bought at a warehouse store, and a moderately good white wine. I used the hollow tubed thick spaghetti, perciatelli, so the flavor of the sauce permeates the pasta. Prepare your ingredients for the sauce while the water is boiling. After the water for pasta is boiling, this recipe takes only minutes to put together. I adapted this recipe from one given to me by a friend whose mother was an embassy chef.

25 ounces clams, canned with their juice
2 -3 tablespoons olive oil
10 -15 garlic cloves, minced
1/2 cup fresh parsley, chopped
1 cup white wine
1 pinch crushed red pepper flakes (optional)
1/4-1/2 teaspoon salt
3 tablespoons flour
3/4 lb perciatelli (hollow tube spaghetti)
1/2 lemon

Steps:

  • Bring a large pot of water with a dash of salt to a boil, and add perciatelli, and cook until al dente. Drain pasta, but reserve some of pasta water in case you need to thin the sauce.
  • In a large skillet, over a medium heat, heat the olive oil until warmed, but not smoking.
  • Add garlic and stir to prevent burning, cooking until garlic releases scent, then add parsley and continue to cook for another minute or two.
  • Add about 1 cup of clam juice from canned clams, white wine, and salt.
  • If desired, add pepper flakes.
  • Cook until bubbling.
  • Mix flour with about 1/2 cup cold clam juice or wine, and then stir into the bubbling sauce, stirring constantly, until sauce thickens.
  • Turn heat down to low, and add clams and cook over low heat for 5 minutes to gently heat clams. You may need to add more clam juice or a little pasta water. Taste to correct seasoning, and add more salt if you want.
  • Pour drained perciatelli into the skillet, and mix well.
  • Add squeeze of fresh lemon.

  • cook linguine, drain well and add to sauce. Let pasta rest in sauce for 5 min to absorb flavors.
  • Serve in pasta bowl and sprinkle with parmesan and parsley.
