ROMAN CHICKEN RECIPE (POLLO ALLA ROMANA)



Roman Chicken Recipe (Pollo alla Romana) image

Also known as 'Roman-Style Chicken', Pollo alla Romana is not your normal chicken stew. Adding prosciutto to this dish takes it to a new level! Serve it with a chunk of crusty bread and a glass of wine -- enjoy!

1 kg chicken, (rinsed and chopped (about 2 lbs))
3 & 1/2 tbsp olive oil
1 large red bell pepper, ((or two medium))
1 large yellow bell pepper, ((or two medium))
2 cloves garlic, (chopped thinly)
1 small onion, (chopped finely)
3/4 cup prosciutto, (cubed)
2 tbsp tomato paste
12 pcs cherry tomatoes, (quartered)
15 pcs fresh basil leaves, (torn into halves (plus more for garnish))
1 & 1/2 tsp balsamic vinegar
salt and pepper, to season
dash peperoncino, ((or chili flakes))

Steps:

  • Preheat oven to 225°C (435°F).
  • Place the bell peppers on an ovenproof tray and rub them with 1/2 tablespoon of olive oil.
  • Place the tray in the oven for 20 to 25 minutes or until the skin starts turning dark.
  • Once the peppers are cool enough to handle, remove the skin, membrane and seeds and cut them lengthwise, 1/2 inch wide. Set aside.
  • While the peppers are in the oven though, you can proceed with the rest of the steps.
  • Season the chopped chicken with salt and pepper --- generously.
  • Heat remaining olive oil in a large skillet or pan over medium-high heat.
  • Once the oil is ready, start browning the chicken. Do this in batches to leave enough space between the pieces of chicken.
  • Take the browned chicken out of the pan and set them aside.
  • Once you have finished with the chicken, adjust heat to medium. Add garlic and onion.
  • Cook until the onion has softened a bit, then add prosciutto and mix.
  • Add the chicken back into the pan.
  • Add salt, pepper, peperoncino, tomato paste, and tomatoes. Mix to combine.
  • Add torn basil leaves and mix.
  • Adjust the heat back into medium-high and cover the pan with a lid.
  • Bring to a boil. Adjust the heat to medium-low and simmer for about 25 minutes, or until the chicken is cooked.
  • Take the pan out of the heat and add the chopped, roasted peppers.
  • Drizzle with the balsamic vinegar and mix to combine.
  • Serve your roman chicken, and add more fresh basil, if preferred.

3 sweet peppers, seeds removed (red, yellow and green)
2 tablespoons olive oil
1 onion, chopped
2 garlic cloves, chopped
5 chicken thighs
5 chicken legs
2 tablespoons dry white wine
1 tablespoon concentrated tomato paste
3 1/2 fluid ounces chicken stock
salt, to taste
black pepper, to taste
1 lb fettuccine

Steps:

  • Roast the peppers over a high flame so that the skin blisters and can be easily removed. You can omit this step but peeling makes the peppers easier to digest.
  • Cut the peppers into strips.
  • Heat the oil and gently brown the chopped onion and the garlic. Add the chicken pieces and brown them on all sides.
  • Mix the tomato paste with the stock and add to chicken along with the wine.
  • Add the sliced peppers and cook slowly (medium low) to create a thick sauce (1 1/2 hours). If sauce is getting to dry then add a little more stock. Season to taste.
  • Cook the pasta in boiling salted water, drain and stir in the chicken and sauce. Serve at once.

4 skinless, boneless chicken breast halves, pounded to an even thickness
4 slices prosciutto
4 fresh sage leaves
1 tablespoon butter
3 fluid ounces dry white wine, or more as needed
1 pinch salt
freshly ground black pepper to taste

Steps:

  • Place chicken breasts on a sheet of parchment paper. Lay 1 slice prosciutto and 1 sage leaf on each chicken breast. Roll chicken from the short end and secure with wooden skewers.
  • Heat butter in a skillet over medium-high heat; add rolled chicken and cook until well browned, 2 to 3 minutes per side. Add wine, salt, and pepper; cook until chicken is no longer pink in the center, 8 to 10 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Let rest for 5 minutes.

2 teaspoons olive oil
4 small zucchini, sliced (4 cups)
1 tablespoon of fresh mint, snipped or 1 tablespoon fresh basil
1/4 teaspoon salt
1 dash black pepper
2 tablespoons romano cheese or 2 tablespoons parmesan cheese, finely shredded

Steps:

  • In a large skillet heat the oil.
  • Cook whole garlic cloves in hot oil until lightly brown, then discard the garlic.
  • Add zucchini, dried mint (if using), salt and pepper to oil in skillet.
  • Stirring occasionally, cook, uncovered, over medium heat for about 5 minutes or until the zucchini is crisp-tender.
  • To serve, sprinkle with cheese and fresh mint (if using).

2 tablespoons olive oil
1 lb chicken breast (chunked)
1/4 cup green onion (chopped)
1 teaspoon garlic (finely minced)
1/2 cup half-and-half
1/2 lb fresh mushrooms (thinly sliced)
1 (28 ounce) can canned tomatoes (chopped and drained)
1 cup frozen peas
1 teaspoon salt
1/4 teaspoon pepper (freshly ground)
1/4 cup fresh basil leaf (or 2 tbsp. dry)
1/2 lb fettuccine pasta (dry, or 1 lb fresh)
1/4 cup parmesan cheese

Steps:

  • Heat large saucepan of salted water to boiling. Heat butter and oil in large heavy skillet over medium heat. When foam subsides, add chicken, onions, mushrooms and garlic; cook, stirring occasionally, until chicken begins to brown, about 7 minutes.
  • Stir in cream, tomatoes, peas, salt, and pepper; heat to boiling over high heat. Reduce heat to medium and simmer until sauce is slightly thickened and chicken is cooked through, 3-5 minutes. Stir in basil and remove from heat.
  • Meanwhile, cook pasta in boiling water until tender, but still firm to the bite. Drain thoroughly and transfer to wide serving bowl. Pour sauce over pasta; sprinkle with Parmesan and toss to combine. Serve hot.

1 lb fettuccine
2 tablespoons butter
3 chicken breasts, boneless, skinless
1/2 cup all-purpose flour
1 tablespoon extra virgin olive oil
3 garlic cloves, sliced lengthwise
4 roma tomatoes, peeled, seeded and chopped
1 cup low sodium chicken broth
1 cup unsalted butter (2 sticks)
1/2 cup parmesan cheese, fresh
1/4 lb spinach, fresh
salt and pepper

Steps:

  • Prepare pasta according to package directions and set aside.
  • Meanwhile, in a medium saute pan over medium heat, melt 2 tablespoons butter. Lightly "dust" chicken breasts in flour and cook for 5 to 10 minutes, turning regularly. remove chicken from the pan and set aside to cool. When cool enough to handle, slice into strips and reserve.
  • In a large saute pan, heat oil. Add garlic and saute until softened. Add tomatoes and chicken stock. Bring to a boil and cook for 4 to 5 minutes, until partially reduced. Reduce the heat to low and melt butter. Add the reserved chicken and fettuccine, Parmesan and spinach and toss gently to combine. When spinach has wilted, add salt and pepper to taste and serve immediately.

3 lbs raw honeycomb beef tripe
1/3 cup extra virgin olive oil
1 large onion, chopped
2 carrots, chopped
2 celery ribs, chopped
2 garlic cloves, chopped
1/2 teaspoon salt
1/4 teaspoon pepper
2/3 cup dry white wine
1 (32 ounce) can tomatoes with juice, with juice reserved
2 cups cold water
1/4 cup of fresh mint, chopped
salt and pepper, to taste
pecorino romano cheese
chopped mint

Steps:

  • Trim any fat from tripe, then rinse tripe under cold water. Soak tripe in a large bowl of fresh cold water 1 hour, then rinse again.
  • Put tripe in an 8-quart pot of cold water and bring to a boil, then drain and rinse. Bring tripe to a boil again in pot filled with fresh cold water, then reduce heat and simmer, uncovered, turning tripe occasionally and adding more hot water to pot if necessary to keep tripe covered, until very tender, about 4 hours (tripe will have a strong aroma while simmering). Drain in a colander and cool completely.
  • While tripe is cooking, heat olive oil in a 6- to 8-quart heavy pot over moderate heat until hot but not smoking, then cook onion, carrots, celery, and garlic, stirring frequently, until softened, about 8 minutes. Add salt, pepper, and wine and boil, stirring, 1 minute. Pour juice from tomatoes into sauce, then chop tomatoes and add to sauce with the 2 cups cold water and mint. Simmer sauce, uncovered, 30 minutes.
  • Trim any remaining fat from tripe and cut tripe into 2- by 1/2-inch strips. Add to sauce and simmer, uncovered, stirring occasionally, until tripe is a little bit more tender but still slightly chewy, 45 minutes to 1 hour. Season with salt and pepper.
  • Serve tripe sprinkled with finely grated Pecorino Romano cheese and additional chopped fresh mint. Serves 4 main-course servings.
  • Notes: Tripe in sauce can be cooked 2 days ahead and chilled, covered. Reheat before serving. Tripe is excellent served over pasta.
