CREAMY CAJUN CHICKEN AND SAUSAGE FETTUCCINE



Creamy Cajun Chicken and Sausage Fettuccine image

Number Of Ingredients 8

8 ounces hot Italian or sweet sausage, removed from casings and crumbled
8 ounces boneless, skinless chicken breasts, cut into bite-size pieces
2 small red and/or green bell peppers, sliced
1 small onion, chopped
1 clove garlic
3/4 cup reduced sodium chicken broth
1/2 cup Hellmann's® or Best Foods® Real Mayonnaise
8 ounces fettuccine, cooked and drained

Steps:

  • Cook sausage in 12-inch nonstick skillet over medium-high heat 4 minutes or until cooked. Remove sausage to paper-towel-lined plate.
  • Season chicken, if desired, with salt and pepper. Cook chicken in same skillet, stirring occasionally, 4 minutes or until chicken is thoroughly cooked. Remove chicken from skillet and set aside.
  • Stir red peppers and onion into same skillet* and cook, stirring occasionally, 4 minutes or until tender. Stir in garlic and cook, 30 seconds. Stir in broth and Hellmann's® or Best Foods® Real Mayonnaise. Bring just to a boil over high heat. Reduce heat to low and simmer 1 minute. Stir in fettuccine, chicken and sausage and cook, stirring occasionally, 1 minute or until heated through. Season, if desired, with salt, pepper and crushed red pepper flakes.

500g asparagus
2 lemons
100g thinly sliced pancetta
500g farfalle
50g butter
284ml carton double cream
2 cooked skinless, boneless chicken breasts (about 250g/9oz total weight), torn into strips
a few gratings of fresh nutmeg
50g parmesan , freshly grated, plus extra for serving

Steps:

  • Trim the asparagus and cut into short lengths on the diagonal - keep the tips separate. (If you like, peel the stems to give a more vibrant colour when cooked.) Cook the stems in salted boiling water for about 4 minutes, then add the tips and cook for 1 minute more. Drain and refresh under cold running water.
  • Peel the lemons with a serrated knife, remove all the white pith, then cut into segments by slicing each side of the pieces of membrane. Now cut the segments into small pieces (flick out any pips) and put them in a bowl with any juice. Grill the pancetta for 3-4 minutes until crisp - keep an eye on it because it can burn easily.
  • Meanwhile cook the pasta in plenty of well-salted boiling water until al dente.While it's cooking, put the butter and half the cream in a large pan and let them bubble together over a low heat for 2-3 minutes until thickened slightly. Tip in the lemon segments and juice, the chicken, asparagus and a few pinches of salt. Turn off the heat.
  • Drain the pasta and add it to the contents of the pan along with the rest of the cream. Toss well, adding black pepper and nutmeg to taste, and the grated parmesan. Toss again, top with the pancetta and serve immediately.

I've used this recipe for years as a side dish for family gatherings and potluck suppers. At home, though, we make an entire meal of it...my family can't seem to get enough!

4 tablespoons vegetable oil, divided
1-1/2 pounds fresh asparagus, cut into 2-inch pieces
8 ounces sliced fresh mushrooms
1-1/2 cups broccoli florets
2 carrots, cut into julienne strips
2 medium zucchini, sliced
3 green onions, sliced into 1/2-inch pieces
1/2 teaspoon salt
4 boneless skinless chicken breasts, cut into 1-inch pieces
1/2 cup frozen peas
SAUCE:
2 tablespoons butter
2 tablespoons all-purpose flour
1 chicken bouillon cube
2 cups milk
1/4 teaspoon pepper
1 pound thin spaghetti, cooked and drained

Steps:

  • Heat 2 tablespoons oil in a large skillet over high. Add asparagus, mushrooms, broccoli, carrots, zucchini, onions and salt. Cook and stir 5 minutes. Remove vegetables from the skillet, set aside. , Add remaining oil to the skillet. Cook chicken, stirring constantly, 5-6 minutes or until it is no longer pink. Return vegetables to the skillet; add peas and cook 3-5 minutes. set aside., For sauce, melt butter in a medium saucepan over low heat. Stir in flour to form a smooth paste. Add bouillon cube. Gradually add milk, stirring constantly until sauce is thickened. Season with pepper. , Pour over chicken/vegetable mixture; toss to coat. Serve over spaghetti.

A wonderful pasta dish with lots of vegies. You can also add your favorite vegies to this dish very easily or omit those vegies you don't like. The sausage and fresh herbs really add to the flavor!

3 tablespoons olive oil
1 lb hot Italian sausage, removed from casing
4 cloves garlic, thickly sliced
12 -15 cherry tomatoes, cut in half
6 shallots, diced with greens
1/2 lb broccoli, cut into florets,stems peeled
1/2 lb asparagus, peeled from 1 inch below the tips if the spears are large,cut into 1 inch pieces
8 ounces fresh sliced mushrooms
1 red bell pepper, sliced
1/2 teaspoon salt
fresh ground black pepper
fresh diced basil
fresh oregano
1/3 cup white wine
red pepper flakes
1 cup chicken stock
1 package rigatoni pasta or 1 package penne pasta
3 tablespoons freshly grated pecorino romano cheese or 3 tablespoons parmigiano-reggiano cheese

Steps:

  • Heat oil in a large saute pan set on medium heat, until almost sizzling, about 2 minutes.
  • Cook the sausage meat for 3 minutes or until lightly browned. Bring your water for the pasta to a boil and add pasta at this time.
  • Transfer the sausage with a slotted spoon to a bowl and set aside.
  • Add the garlic, shallots, salt, pepper and red pepper flakes to the same pan.
  • (If you like it spicy, add more red pepper flakes)!
  • Cook over medium heat for 3 minutes, stirring to mix well.
  • Add the cooked sausage, basil, oregano and white wine and cook for 3 more minutes, stirring to scrape up any brown bits from the bottom of the pan.
  • Add the chicken stock and bring to a slow boil. Lower heat. Add broccoli, tomatoes, asparagus and mushrooms at this time.

  • Cover the pan and cook with lid slightly ajar, simmer for 8-10 minutes or until vegies are crisp.
  • Drain your pasta and add it to the veggies. Co0k for 1-2 minutes.
  • If you have too much liquid, thicken with the corn starch, not enough add water.
  • Serve immediately with freshly grated cheese.
