TOFU FETA CHEESE
Tofu feta cheese is great to add to salads, sandwiches, and a perfect topping for pasta dishes. Or, eat it with your favorite Mediterranean vegan nosh board.

Steps:
- Remove tofu from the package and press using a tofu press or a heavy object like a book (with paper towels.
- Press the tofu according to the directions provided at this link.
- Cut the tofu into four equal large slabs for grilling.
- Set aside and make the marinade.
- In a high-speed blender, add all the ingredients except for the chopped parsley.
- Blend on high.
- Add parsley after blending and stir.
- Add 1/4 of the marinade to a container, add a row of tofu, more marinade, and repeat until tofu is covered in marinade.
- Cover and refrigerate overnight.
- First, pre-heat the grill to 400 degrees (low)
- The grill should be hot before adding the tofu.
- Remove the tofu from the marinade, but keep the marinade (do not discard)
- Then place tofu directly on the grill or on a grill mat, and cook for 8 minutes on each side, rotating every 4 minutes to achieve grill marks.
- Remove the tofu from the grill and allow to cool completely,
- Then, cut grilled slabs of tofu into bite-sized cubes.
- Return cubed tofu to marinade and allow to refrigerate again overnight before using.

I got this in my email today from The Veggie Table, and it is a recipe adapted from one credited to the cookbook, "How it all vegan!" I haven't tried this one.

GREEK SALAD WITH TOFU "FETA CHEESE"
I found this recipe on the net when I had to make a greek dish for my son's history class. I love the marinated Tofu, to me it is just as good as the Feta Cheese it substitutes and healthier, however you can substitute the Feta Cheese for the Tofu if preferred.

- Mix together salad dressing ingredients in a large cup.
- Add Tofu, cover and marinate overnite stirring ocasionally to make sure all Tofu marinates evenly.
- Just before serving make up salad ingredients and add salad dressing and Tofu.
- Toss and serve.

Steps:
- Press water out of tofu. Place tofu between two paper towels and put something heavy on top. Let it sit for at least 1 hour.
- Prepare marinade. Whisk together every ingredient in a bowl until nice and even.
- Cut tofu into small cubes and add to a jar or an air-tight container. Add marinade and mix well together. Place jar in fridge and let tofu marinade for at least 8 hours.
- After marinading keep the tofu covered with olive oil in the fridge in an air-tight jar to preserve it for 2-3 weeks.

- Drain the tofu and cut into ½ inch cubes. Place the tofu in a steamer basket and into a pot with 2-3 inches of water (make sure the water is below the steamer basket). Cover and bring to a boil. Steam the tofu for 3-5 minutes.
- Meanwhile, drain the soaking sun-dried tomatoes and dice them. Add the cooled tofu, sun-dried tomatoes, chopped olives and lemon juice to a medium sized bowl and toss.
- Add the remaining ingredients and mix until well combined and all tofu cubes are evenly coated with spices.
