CREAMY FETA DRESSING
This tangy creamy feta dressing is excellent over any combination of heirloom tomatoes, bell peppers, cukes, olives, fresh herbs, and (yes) more feta.

Steps:
- Combine all of the ingredients in a food processor fitted with the steel blade. Process until well-blended and creamy. Taste and adjust seasoning, if necessary. Serve immediately or chill until ready to serve.
- Make Ahead: This dressing will keep nicely in the refrigerator for up to 4 days. However, it will thicken up quite a bit in the fridge; before serving, whisk well then add a bit of milk, little by little, to thin to desired consistency.

GREEN SALAD WITH CREAMY FETA DRESSING
Steps:
- Heat the oil in a skillet over medium-low heat. Add the onion and cook, stirring frequently, until softened, about 8 minutes. Add the garlic and cook another 2 minutes. Allow the mixture to cool slightly.
- In a blender, combine the feta, vinegar, lemon juice, mustard, olives, oregano, 1/2 teaspoon salt, some pepper and the onion mixture. Blend until smooth.
- Pour enough dressing over the salad to coat the leaves and toss to combine. Save the remaining dressing for another use.
DRESSED FETA CHEESE
Thin slices of feta are drizzled with a dressing of scallion, herbs, and olive oil. We particularly like the flavor and firm texture of Bulgarian feta cheese, which is easy to slice.

- Cut feta into 1/2-inch-thick slices, wiping knife each time to keep cheese from crumbling. Arrange on a serving dish.
- Pick leaves from herbs, and chop finely. Slice scallion into thin rounds. Combine herbs and scallion in a small bowl; stir in peppercorns, red-pepper flakes, and 1 tablespoon oil. Spoon herb mixture over feta. Drizzle with remaining tablespoon oil, and serve.

Feta ties with Sharp Cheddar and Havarti for my favorite cheeses. I love the sharp taste of a good Feta on salads with sweet tomatoes and cucumbers.

MARINATED FETA CHEESE SALAD

- Remove the feta cheese from the pack and pat as dry as possible with kitchen towel. Press the flavors into it. Pack the cheese tightly into a jar and cover with olive oil. It will keep in the fridge for up to two months.
- Tips: Don't use bought dried herbs, instead make your own by drying leftover fresh herbs on a baking sheet. Leave them somewhere warm; e.g. on top of your boiler, washing machine, or oven and they will dry within a week. Or put them in the oven at 200 to 225 degrees for 1 hour.
- Uses: On a big plate, covered in fresh basil -- served with lots of other salads. As a cheese course, with crusty bread and fruit Don't throw away the oil -- use it in your dressing

KITTENCAL'S GREEK FETA SALAD DRESSING

- In a food processor combine the first 10 ingredients; process for about 10 seconds.
- Add in the feta cheese and continue to process until the cheese has combined (this may take about 12-15 seconds).

- With a fork, mash the cheese and buttermilk together until it resembled the consistency of cottage cheese.
- Add the remaining ingredients and blend well.
- Add salt and pepper to taste.
- Let sit, covered, in the refrigerator at least a few hours to blend flavors.
- If it's too thick, just add a little milk until it's the texture you desire.
- This is sooo good on a salad with fresh greens, tomatoes, cucumbers, slices of red onions, and kalamata or ripe olives.
CREAMY GARLIC, PARSLEY, AND FETA DRESSING
We suggest pairing this garlicky dressing with mixed greens such as Boston lettuce and watercress, or drizzling it over grilled tofu or chicken for a light yet satisfying meal.
