1/4 cup shelled raw unsalted pistachios
1/4 cup chopped raw unsalted hazelnuts
2 tablespoons light brown sugar
1 teaspoon kosher salt
1/2 teaspoon pure vanilla extract
1/2 cup olive oil
1/4 cup apple cider vinegar
2 tablespoons pure maple syrup
1 tablespoon Dijon mustard
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 cups baby arugula
2 cups baby kale
2 cups baby spinach
2 cups quartered and sliced radicchio
3 mandarin oranges, peeled and segmented
1/2 cup pomegranate seeds
1/2 cup dried cranberries
1/2 cup fresh blueberries
1/4 cup freshly grated Parmesan

Steps:

  • For the candied nuts: In a nonstick skillet over medium-high heat, toast the pistachios and hazelnuts until fragrant, 4 to 5 minutes. Add the brown sugar, salt, vanilla and 1 tablespoon water directly to the pan with the nuts and stir to coat them. Cook until the sugar has dissolved, about 1 additional minute. Transfer to a parchment-lined baking sheet and allow to cool, 12 to 15 minutes.
  • For the dressing: Combine the olive oil, vinegar, maple syrup, mustard, salt and pepper in a mason jar. Secure the lid and shake to combine. Set aside.
  • For the salad: Spread the arugula, kale and spinach over a large round platter, leaving space in the center of the platter (it should look like a holiday wreath). Top the greens with the radicchio. Arrange the mandarin segments over the greens. Sprinkle with the pomegranate seeds, cranberries, blueberries and cooled candied nuts.
  • Lastly, sprinkle with the Parmesan, creating the look of snow. Shake the dressing one more time and pour it into a serving bowl. Place the bowl in the center of the platter and serve.

3 Tbsp. sugar
2 cups packed fresh spinach leaves
2 mL packed Boston lettuce
2 cups halved fresh strawberries
1/3 cup KRAFT Creamy Poppyseed Dressing

Steps:

  • Cook and stir nuts and sugar in nonstick skillet on medium heat 5 min. or until sugar is caramelized and nuts are evenly glazed. Spread onto baking sheet sprayed with cooking spray; cool. Break into small pieces.
  • Combine spinach, lettuce and berries in large bowl.
  • Drizzle with dressing just before serving; toss to coat. Top with nuts.

1 medium sweet yellow pepper
1 medium sweet red pepper
1/2 pound sliced deli turkey, cut into strips
1 package (6 ounces) fresh baby spinach
2 plum tomatoes, sliced
2 green onions, sliced
1/2 cup crumbled tomato and basil feta cheese
3 pepperoncini, sliced
2 tablespoons grated Romano cheese
1 to 2 garlic cloves, minced
1 teaspoon Italian seasoning
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon pepper
3/4 cup balsamic vinaigrette

Steps:

  • Broil peppers 4 in. from the heat until skins blister, about 5 minutes. With tongs, rotate peppers a quarter turn. Broil and rotate until all sides are blistered and blackened. Immediately place peppers in a bowl; cover and let stand for 15-20 minutes., Meanwhile, in a salad bowl, combine the turkey, spinach, tomatoes, onions, feta cheese, pepperoncini, Romano cheese, garlic and seasonings., Peel off and discard charred skin from peppers. 10 cups fresh spinach
1/2 cup thin sliced red onion
1 pint fresh strawberries, quartered*
1 (11 ounce) can mandarin oranges, drained*
1/2 cup coarsely chopped pecans, toasted*
1/2 cup sugar
1/3 cup cider vinegar
2 tablespoons lime juice (can substitute lemon)
2 tablespoons finely chopped red onions
1/2 teaspoon salt
2/3 cup vegetable oil
2 -3 teaspoons poppy seeds

Steps:

  • In a blender or food processor, combine the sugar, vinegar, lime juice, onion and salt. Cover and process until well blended and smooth. With blender running, gradually add oil. Add poppy seeds and pulse until blended.
  • In a large salad bowl, combine the spinach, red onion, strawberries & oranges. Toss with desired amount of dressing. Sprinkle pecans on top.

Made this last night - very flavorful dressing. I got this recipe from Cottage Living, 6/2006, and made it with some adjustments. It originally called for 3 tablespoons sesame oil, so if you don't worry about fat intake (and are familiar with the relatively strong taste of sesame oil), go for it. Added a cup of leftover grape tomatoes. Also substituted maple syrup for the honey and I think it worked out well.

1 -2 medium carrot (grated or julienned, about 1 cup)
1/2 cucumber, peeled and sliced (seeding optional)
4 green onions, thinly sliced
1 tablespoon sesame seeds (white, black, any combination)
1 cup grape tomatoes (optional)
3 tablespoons rice vinegar
1 -3 tablespoon sesame oil
