2 Tbsp olive oil
3 pounds stew meat
salt and pepper
3 cups beef broth
1 package dry onion soup mix
1 Tbsp Worcestershire sauce
1 small onion (diced)
2 cups mushrooms (sliced )
3 garlic cloves (minced)
1/4 cup water
3 Tbsp cornstarch

Steps:

  • In a large skillet over medium high heat add the olive oil. Salt and pepper the stew meat and add in batches to sear on both sides until brown, but do not cook throughtout. Add the stew meat to the slow cooker.
  • Add the beef broth, dry onion soup mix, Worcestershire sauce, onions, mushroom, and garlic. Cook on low for 5-6 hours or high 3-4 hours.
  • 30 minutes before it is done cooking, mix together in a small bowl the water and cornstarch. Stir it into the slow cooker and allow it to thicken.
  • Serve over pasta or mashed potatoes.

1 boneless beef chuck roast (about 2 pounds), cut into 2-inch pieces
1 teaspoon salt
1/4 teaspoon pepper
2 tablespoons canola oil
1 medium onion, coarsely chopped
1 celery rib, coarsely chopped
6 garlic cloves, halved
2 cups beef broth
1-1/2 cups dry red wine
1 fresh rosemary sprig
1 bay leaf
2 cans (4 ounces each) sliced mushrooms
2 tablespoons cornstarch
1/2 cup water
1 tablespoon balsamic vinegar
Hot cooked egg noodles

Steps:

  • Sprinkle beef with salt and pepper. In a large skillet, heat oil over medium-high heat. Brown beef in batches. Remove with a slotted spoon to a 3- or 4-qt. slow cooker., In same pan, add onion and celery; cook and stir until tender, 6-8 minutes. Add garlic; cook 1 minute longer. Add broth, wine, rosemary and bay leaf. Bring to a boil; cook until liquid is reduced to about 2 cups, 8-10 minutes., Pour over beef in slow cooker; stir in mushrooms. Cook, covered, on low until meat is tender, 6-8 hours. Remove rosemary and bay leaf., In a small bowl, mix cornstarch, water and vinegar until smooth; gradually stir into beef mixture. Serve with noodles.

2 medium onions, halved and sliced
1/2 pound sliced fresh mushrooms
4 garlic cloves, minced
3 cups beef stock
1/2 cup dry red wine or additional beef stock
2 tablespoons Worcestershire sauce
2 tablespoons red wine vinegar
1-1/4 teaspoons salt
1 teaspoon crushed red pepper flakes
1/2 teaspoon pepper
1/3 cup cornstarch
1/3 cup cold water
Hot cooked egg noodles
Minced fresh parsley

Steps:

  • In a 5-qt. slow cooker, combine beef, onions, mushrooms and garlic. In a small bowl, mix next 7 ingredients; pour over beef mixture. Cook, covered, on low until meat is tender, 6-8 hours., Skim fat from juices. In a small bowl, mix cornstarch and water until smooth; gradually stir into slow cooker. Cook, covered, on high until thickened, about 45 minutes. Serve with noodles; sprinkle with parsley., Freeze option: Omitting parsley, freeze cooled meat mixture, sauce and egg noodles in freezer containers. To use, partially thaw in refrigerator overnight. Perfectly fork-tender beef is coated in a simple and rich gravy sauce and combined with pearl onions and sliced mushrooms. This dish hits high on comfort, nutrition, and cozy satisfaction.

1 tablespoon avocado oil, divided (for Instant Pot version only)
2 lbs. beef tips (cubed sirloin) or cubed beef stew meat (1- to 2-inch pieces)
1 (12-ounce) bag frozen pearl onions (unthawed)
¼ cup tomato paste
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried thyme
1 teaspoon coarse sea salt
½ teaspoon black pepper
8 ounces fresh mushrooms, sliced or coarsely diced
1 ½ cups low-sodium beef broth
2 to 4 tablespoons cornstarch
For serving: Cooked mashed potatoes, mashed parsnips or cauliflower, or noodles
Snipped fresh parsley for garnish (optional)

Steps:

  • In a 6- to 7-quart slow cooker, place the beef tips, frozen pearl onions, tomato paste, garlic powder, onion powder, dried thyme, salt, and pepper; stir until beef and onions are coated in the tomato paste and seasonings.
  • Add the mushrooms and pour the beef broth over all. Place the lid on the slow cooker and cook on high for 4 hours or on low for 6 to 8 hours.
  • When the beef is tender, thicken the liquid with a cornstarch slurry.* To do so, place 2 tablespoons cornstarch in a small bowl and ladle ¼ cup of the hot liquid from the slow cooker into the bowl. Use a small whisk or fork to mix the cornstarch into the liquid until dissolved (should look like a muddy liquid). Pour the cornstarch slurry into the mixture in the slow cooker and mix until incorporated. Set slow cooker to high setting, cover, and cook for 30 minutes or until liquid is thickened. If you prefer even thicker gravy, repeat the cornstarch slurry step with 2 more tablespoons of cornstarch. The gravy will thicken even more over time and as the recipe cools.
  • Serve over mashed potatoes, other mashed veggies, or cooked noodles.
  • Store leftovers in a covered container in the refrigerator for up to 5 days.

1 (10 3/4 ounce) can cream of mushroom soup (or low-fat)
1 (1 1/4 ounce) envelope dry onion soup mix
1 (1 ounce) envelope mushroom gravy mix or 1 (1 ounce) envelope beef gravy mix
3/4 cup beef broth (or beef broth mixed with Burgundy wine)
1 cup fresh mushrooms, sliced
1/2 medium onion, chopped
12 ounces wide egg noodles

Steps:

  • Place beef in the slow cooker.
  • Combine mushroom soup, onion soup mix and gravy mix in a bowl until well blended. Stir in beef broth.
  • Add mushrooms and onions to mixture, then pour over beef.

1/3 cup flour
1 lb bottom sirloin beef caps, cubed
1/2 cup shallot, chopped
1 lb mushroom, sliced
1 (10 1/2 ounce) can condensed beef broth
2 teaspoons tomato paste or 2 teaspoons tomato sauce
1 teaspoon Worcestershire sauce
1/4 cup red wine
4 -6 cups hot buttered egg noodles

Steps:

  • Add salt and pepper to flour.
  • Dredge beef in flour mixture.
  • Place meat in crock pot.
  • Cover with shallots and mushrooms.
  • Mix beef broth, tomato paste, Worcestershire sauce and red wine; pour over meat and vegetables.
  • Cook on low setting for 8 hours.
